These easy broccoli fritters are made with cheddar cheese and have a hearty toothsome bite! A minimum of ingredients keeps this recipe healthy and low carb too.

8 ounces broccoli, cut into small pieces or chopped
1 cup shredded cheddar cheese
2 large eggs, beaten
2 Tbsp oat fiber (or almond flour, or powdered pork rinds (regular flour if not low carb))
1 tsp Cajun seasoning
1 Tbsp avocado oil or your favorite

Steps:

  • Cut fresh broccoli crowns and stems into 1/2 inch by 1/2 inch pieces. Steam lightly in the microwave or in a steamer. Drain any excess water and dry with paper towels if wet. (If using leftover broccoli, drain well and chop into small bite-sized pieces.)
  • Toss or stir the broccoli with your flour of choice and the Cajun seasoning to coat. Add the egg and stir. Add the cheddar cheese and stir until thoroughly combined.
  • Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan. A non stick pan needs less oil. Visually divide the mixture into fourths and spoon into the pan, arranging in a low mound or patty. Scrape any tumbled pieces back into the piles.
  • Cook on one side until the cheese on the top of the patty begins to melt and the bottom is crusty brown, about 2-3 minutes. Flip and cook on the other side until browned.
  • Makes 4 large patties, 2.8 NC each. Serve topped with an egg or with a dipping sauce.

½ cup shredded cheddar cheese
1 egg
½ cup all-purpose flour
3 cloves garlic, minced
½ teaspoon salt

Steps:

  • In a saucepan over medium high heat add broccoli and water. Let steam for 5 minutes, or until slightly tender.
  • Drain the broccoli and let cool in a medium mixing bowl.
  • Once cool add cheddar cheese, egg, flour, minced garlic, salt and pepper to a bowl and mix until the mixture has a semi-creamy texture.
  • Place a large pan over medium-high heat and add vegetable oil.
  • Use a spoon to scoop out medium dollops of mixture and place it in the pan. Let cook on each side for about 3 minutes, or until golden brown.
  • Remove from pan and place on paper towel to absorb excess oil.

4 cups broccoli florets
1/2 cup shredded cheddar
1/4 cup almond meal (or regular flour)
2 large eggs, cracked and whipped
1 garlic clove, minced
1/2 tsp paprika
1/2 tsp salt
pinch of pepper
olive oil for cooking

Steps:

  • bring a large pot of water to boil.
  • Add broccoli florets and cook for 2 minutes.
  • Strain broccoli from water and allow to cool until it can be handled.
  • Chop up florets into small bits, almost like a coarse grain consistency.
  • Add broccoli florets to a microwave-safe bowl and top with 1 tbsp of water.
  • Cook in microwave for 2 minutes. May need 1 minute longer depending on microwave but test to see if it's cooked through at 2 minutes.
  • Remove from microwave and let cool for a few minutes or until it can be handled.
  • Chop up florets into small bits, almost like a coarse grain consistency.
  • In a large bowl combine chopped up broccoli with all other ingredients (except oil). Stir to combine.
  • Add 1 tbsp of oil to a large pan or skillet over medium-high heat.
  • Spoon roughly a 1/4 cup of batter into the pan and flatten with the back of the spoon. Cook for 2-3 minutes on each side.
  • Repeat until batter is all used. Do not overcrowd pan. Cook in batches, adding oil in between if necessary.
  • Serve warm or store in fridge and reheat. Will keep in fridge for up to 3 days.

The broccoli is not grated or pureed, but left in small, recognizable bits that are bound lightly, faintly, to their batter of egg, parmesan and flour. And when you cook them right - that is, to a crisp, in a preheated, heavy, oil-slicked skillet - they get a fantastic crisp edge to them. To serve: I like these with a dollop of the garlicky lemon yogurt I share here, roughly 1 cup plain yogurt, 2 tablespoons lemon juice, 1 tiny minced clove of garlic, a bit of zest and salt. It would also be good with this homemade ricotta, with or without additional lemon juice. They're also good simply, with just a squeeze of lemon juice.   • Steam the broccoli until tender but not mushy: Use whatever method you prefer. Drain the broccoli, then set it aside to cool slightly.
  • In the bottom of a large bowl, lightly beat your egg. Add the flour, cheese, garlic, salt and pepper. Then, add the somewhat cooled broccoli and, using a potato masher, mash the broccoli just a bit. Once mashed a bit, stir or fold the ingredients together the rest of the way with a spoon. Adjust seasonings to taste.
  • Heat a large, heavy skillet over moderate heat. Once hot, add a good slick of oil (I usually use a mix of olive and vegetable oil), about 2 to 3 tablespoons. Once the oil is hot (you can test it by flicking a droplet of water into it; it should hiss and sputter), scoop a two tablespoon-size mound of the batter and drop it into the pan, then flatten it slightly with your spoon or spatula. Repeat with additional batter, leaving a couple inches between each. Once brown underneath, about 2 to 3 minutes, flip each fritter and cook on the other side until equally golden, about another 1 to 2 minutes.
  • Transfer briefly to paper towels to drain, then to a serving plate if you'll be eating them shortly or a baking sheet in a 200 degree oven if you'd like to keep them warm for a while until needed. Repeat with remaining batter, adding more oil as needed.
