1/2 kg mutton mince
2 large brinjal, sliced in circles
4 large ripe fresh tomatoes
2 green chilies, finely chopped
4 onions, finely chopped
2 tablespoons ginger-garlic paste
1/4 teaspoon clove
1/4 teaspoon ground cinnamon
1/4 teaspoon red chili powder, to taste
1/4 teaspoon turmeric powder
1/2 teaspoon oregano
1/2 cup grated mozzarella cheese
6 tablespoons fresh tomato puree
salt

Steps:

  • Firstly, apply a pinch of salt, red chilli powder and turmeric powder to the brinjal slices.
  • Keep aside for 5 minutes.
  • Shallow fry the brinjal slices lightly and drain on clean paper towels.
  • Keep aside.
  • Next, heat oil in a large pot on high flame.
  • Toss in green chillies and onions and stir-fry on medium flame until slightly browned.
  • Toss in the tomatoes and cook them until they are softened.
  • Then, stir in the ginger-garlic paste and fry it for a minute.
  • After this, add the mutton mince and stir continuously until it is fried, making sure that no lumps are formed.
  • Then add the powdered cinnamon, cloves, chilli powder, tomato puree, half the quantity of oregano and salt to the mince.
  • Mix well and then, pour in a glass of water (2 cups).
  • Allow it to cook until the mince is nearly dry but NOT completely dry.
  • Now take a baking dish and grease it with a little oil.
  • Then, line the bottom of the dish with half the fried brinjal slices.
  • Then, on top of these brinjal slices, put the mutton mince.
  • Then again, put a layer of the fried brinjal slices.
  • Cover the topmost layer with the grated cheese.
  • Sprinkle a little oregano neatly over the top of the cheese.
  • Stand back and admire how pretty it looks for a minute.
  • Then, cover the top of the baking dish with a foil.
  • Keep aside.
  • Pre heat the oven at 180C for 15 minutes.
  • Put the baking dish in it.
  • Allow to bake for 30 minutes or until the water completely dries up in the dish.
  • Remove the foil and let the cheese brown.
  • Serve hot and enjoy this meal on its own to the fullest!

1.00 aubergine large, sliced
1.00 onion sliced into rings
500.00 g beef mince
15.00 ml gravy powder mixed with water
30.00 ml chutney
2.00 eggs extra large, whisked
2.00 tomatoes skinned and sliced
125.00 ml cheddar cheese grated
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 180 ºC. Spray an oven dish with non-stick spray.Sprinkle the brinjal with salt and leave for about 5 minutes. Pat dry with paper towelling. Fry the brinjal slices in a little oil until brown. Drain on paper towelling and set aside.Sauté the onion until soft and translucent. Add the mince and fry until cooked but not brown. Season well with salt and black pepper. Stir in the gravy powder mixture and chutney. Remove from the heat and cool slightly. Stir in the whisked egg.Arrange the brinjal slices in the bottom of the dish. Spoon the mince mixture on top. Arrange the tomato slices on top and sprinkle with the grated cheese.Bake for 15 minutes or until the cheese has melted.Serves 4.

  • Spray a griddle pan with oil and set over a medium heat. Cook eggplant slices in batches, 3-5 minutes each side, until lightly charred and tender. Set aside.
  • Meanwhile, heat a non-stick pan over medium-high and add mince. Cook, breaking up mince, until browned. Add onion and cook until softened. Add pesto and cook for a few more minutes. Add half the cherry tomatoes, all the chickpeas and 3/4 cup boiling water. Bring to the boil, reduce heat and simmer for 10 minutes, stirring occasionally, until thickened.
  • Preheat oven grill to 180°C. Bring a saucepan full of water to the boil. Place courgettes into pan for 1 minute. Drain.
  • In an ovenproof dish, place eggplant slices and spread mince mixture over the top. Add courgette ribbons and remaining cherry tomatoes. Top with parmesan. Grill for 5 minutes or until cheese is melted. Garnish with fresh basil if you like.
