BEER-BRINED BARBECUE CHICKEN

3 12-ounce cans amber or bock beer
1/3 cup kosher salt, plus more for sprinkling
1/3 cup granulated sugar
2 tablespoons hot sauce
4 bay leaves
6 pounds assorted skin-on, bone-in chicken pieces
Juice of 2 large oranges
1/4 cup apple cider vinegar
1/2 small onion, finely chopped
4 cloves garlic, finely chopped
1/3 cup ketchup
1/3 cup packed dark brown sugar
1/3 cup honey
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
Vegetable oil, for the grill

Steps:

  • Brine the chicken: Combine 1 can of beer, the salt, granulated sugar, hot sauce and bay leaves in a very large bowl and whisk until the salt and sugar dissolve. Add the remaining 2 cans of beer, 4 cups water and the chicken. Cover and refrigerate overnight.
  • Make the barbecue sauce: Combine the orange juice, vinegar, onion, garlic, ketchup, brown sugar, honey, Worcestershire sauce and chili powder in a small saucepan. Bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, about 20 minutes. Let cool slightly, then puree in a blender until smooth. (The sauce can be made up to 1 day ahead; cover and refrigerate.)
  • Preheat a grill to medium low and brush the grates with vegetable oil. Remove the chicken from the brine and pat dry with paper towels. Lightly season the chicken with salt, then arrange on the grill, skin-side up. Cover and cook until marked, about 12 minutes per side. Continue cooking, flipping and basting the chicken with the barbecue sauce every 3 to 4 minutes (keep covered in between), until a thermometer inserted into the center of a breast registers 165 degrees F, about 15 more minutes. Transfer to a platter and let rest 5 minutes before serving.

Small bunch fresh thyme sprigs
Kosher salt and freshly ground black pepper
2 pounds bone-in chicken pieces, such as legs, thighs and breasts, halved
Olive or vegetable oil for brushing the grill grates
Serving suggestions: green salad, cornbread and/or your favorite barbecue sauce

Steps:

  • Stir the maple syrup, garlic, thyme, 1 tablespoon salt, a generous grind of pepper and 3 cups of water together in a large bowl until the salt is dissolved. Add the chicken, making sure it's completely covered by the brine. Cover and refrigerate for 2 to 3 hours.
  • Prepare an outdoor grill or grill pan for high heat.
  • Drain the chicken and pat very dry. Lightly oil the grill grates and grill the chicken, flipping occasionally, until no longer pink near the bone, 15 to 20 minutes (depending on the size of the chicken pieces). Serve with a salad, wedges of cornbread and/or your favorite barbecue sauce on the side.

4 (6 -8 ounce) boneless skinless chicken breast halves
1/4 cup coarse salt
1/4 cup firmly packed dark brown sugar
12 whole black peppercorns
1 red chili pepper, thinly sliced
2 whole bay leaves
1 cup hot water
3 cups cold water
1 lemon, thinly sliced
1 small onion, thinly sliced
2 garlic cloves, peeled, then crushed with the side of a cleaver

Steps:

  • Rinse chicken under cold, running water and blot dry with paper towels. Arrange in a nonreactive baking dish.
  • Make the brine: Place the salt, brown sugar, peppercorns, chili pepper and bay leaves in a large, nonreactive bowl. Add the hot water, then whisk until the salt and brown sugar dissolve; stir in the cold water. Let brine come to room temperature.
  • Pour over the chicken and stir in the lemon slices, onion and garlic. Cover the dish with plastic wrap and let stand in the refrigerator for 2 hours, turning the chicken once or twice.
  • Preheat the grill until coals are hot. When ready to cook, brush and oil the grate.
  • Arrange the breasts on the hot grate, all facing the same direction, at a 45-degree angle to the bars of the grate.
  • Cook the chicken over high heat, 4 to 6 minutes per side, rotating the breasts 90 degrees after 2 minutes on each side to create an attractive crosshatch of grill marks. (To test for doneness, remove a breast from the grill and poke the thickest part with your finger. It should feel firm to the touch.)
  • Transfer the chicken to a decorative platter and serve.

This is the FIRST brined anything I have made. Boy, was I surprised with the results. It was the juiciest chicken ever! I was quite impressed and can't wait to start brining other things! If you don't like or want the skin, discard it AFTER the cooking. The skins adds flavor and moisture to the chicken.

8 chicken thighs, bone in and skin on
2 quarts water
2/3 cup kosher salt
1/2 cup brown sugar
olive oil, for brushing

Steps:

  • Combine the water, salt, and sugar together in a large deep bowl or plastic tub.
  • Stir until salt and sugar are dissolved.
  • Add the chicken and fully submerge; refrigerate for 2-4 hours to brine.
  • Remove the chicken from the brine, rinse and pat dry.
  • Grill chicken on direct heat for 5-7 min, turning once or twice until chicken is golden and well-marked from the grill.
  • Move the chicken over to the side of the grill to indirect heat and continue to cook until juices run clear, about another 5-7 minute.

1 cup apple juice
1 cup water
1 tablespoon salt
1/4 tablespoon garlic powder
1 tablespoon honey
1/2 tablespoon dark brown sugar
1/2 tablespoon soy sauce
1/2 tablespoon fresh lemon juice
8 boneless skinless chicken breasts
1 (16 ounce) bottle big bob's bbq white sauce (or make copycat below)
2 cups mayonnaise
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons prepared horseradish
2 teaspoons ground black pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper

Steps:

  • SAuce: In a large bowl, combine all the ingredients and blend well.
  • Store refrigerated in an airtight container for up to 2 weeks.
  • Chicken: In a medium bowl, combine the brine ingredients and mix well. Add the chicken breasts, making sure they are completely covered.
  • Cover the bowl and refrigerate for 1 hour.
  • Remove the chicken breasts from the brine and wipe off the excess salt.
  • Preheat an outdoor grill to 400 degrees.
  • Place the chicken breasts on the grate directly over the heat and grill for 5 to 6 minutes on each side, or until golden brown and firm to the touch.
  • The internal temperature of the chicken breasts should be 160 degrees.
  • Submerge each chicken breast into a bowl of Big Bob Gibson Bar-B-Q White Sauce. Remove from the sauce and serve.

1 gal water
3/4 c kosher salt
2/3 c sugar
3/4 c low sodium soy sauce
1 tsp oregano
1 tsp ground sage
1/4 c olive oil
TO MAKE THE BRINE COMBINE ALL INGREDIENTS IN A LARGE POT AND HEAT TO A RAPID BOIL. REMOVE FROM HEAT AND LET THE BRINE COME DOWN TO ROOM TEMPERATURE. PLACE CHICKEN THIGHS IN THE BRINE AND REFRIGERATE FOR 4 HOURS. THIS ENOUGH FOR ABOUT 7LBS OF CHICKEN

1 Tbsp sugar
2 tsp cayenne pepper
1 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp granulated garlic

2 tsp dry yellow mustard

MIX ALL THE RUB INGREDIENTS TOGETHER.

Steps:

  • 1. Mix all the rub ingredients in a bowl, make sure the seasoning are well mixed. remove chicken from the brine, rinse off very well and pat dry with paper towels and place on a large cuting board or cookie sheet. Sprinle on a good amount of rub on both sides of the chicken, making sure too get some underneath the skin too. Let sit in the refrigerator covered with aluminum foil for about 1 hour,
  • 2. Prepare the grill for indirect grilling. Place chicken on skin side down away from the heat and let cook for 30 minutes and place a good BBQ sauce on the skin side of the chicken thighs. Let cook for another 10 minutes and flip again, and coat the other side with the BBQ sauce. Let cook until juices run clear and the chicken is fully cooked.
  • 3. You can also bake this chicken recipe in the oven at 400 degree for 1 hour and 45 min. are until juices run clear.

2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper

Steps:

  • For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
  • Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
  • Preheat oven 375 degrees F.
  • Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.
