TRIPLE BERRY BUCKLE

This buckle screams summer, thanks to the generous helping of fresh blueberries, blackberries and strawberries. We boosted the flavors by adding a good amount of lemon zest to the tender cake and a pinch of nutmeg and ginger to the sweet crumb topping. Serve warm or at room temperature with a scoop of your favorite ice cream for a beautiful, seasonal skillet dessert.

4 tablespoons unsalted butter, at room temperature, plus more for the skillet
1 2/3 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup granulated sugar
Finely grated zest of 1 large lemon
1 large egg
1/2 cup whole milk
3 cups fresh berries, such as blueberries, blackberries and quartered (hulled) strawberries
1/4 cup granulated sugar
2 tablespoons packed light brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon freshly grated nutmeg
Pinch of ground ginger
Pinch of kosher salt
2 tablespoons unsalted butter, cubed and at room temperature
Vanilla (or other flavored) ice cream, for serving

Steps:

  • Position a rack in the middle of the oven and preheat to 375 degrees F. Butter the bottom and sides of a 10-inch cast-iron skillet.
  • For the cake batter: Whisk the flour, baking powder and salt in a medium bowl until combined. Beat the butter, granulated sugar and lemon zest in a large bowl with an electric mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg until combined. Reduce the mixer speed to low and gradually beat in the milk (it's okay if the mixture looks curdled). Add the flour mixture and beat, scraping down the sides of the bowl occasionally with a rubber spatula, until smooth, about 1 minute. Stir in the mixed berries until evenly distributed, then spread the batter into the prepared cast iron skillet; set aside.
  • For the crumb topping: Stir together the granulated sugar, brown sugar, flour, nutmeg, ginger and salt in a small bowl until combined. Work in the butter with your fingers until the entire mixture is moistened and clumpy. Scatter evenly over the batter.
  • Bake until the top is golden and set and a toothpick inserted into the center comes out clean, about 1 hour. Transfer the skillet to a wire rack and let cool at least 30 minutes before serving warm or at room temperature with ice cream.

1 cup sugar
1 cup powdered sugar
1 cup margarine or 1 cup butter, softened
1 cup vegetable oil
2 eggs
1 teaspoon almond extract
3 1/2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups almonds, coarsely chopped
1 (6 ounce) package butter brickle, baking pieces

Steps:

  • In a large bowl, beat 1 cup sugar, powdered sugar, margarine and oil until blended. Add extract and eggs, blending well.
  • Add flours, soda, cream of tartar and salt and mix well. Stir in almonds and brickle. Cover and refrigerate for 30 minutes.
  • Shape tbsps. of dough into balls. Roll balls I granulated sugar. Place 4-inches apart on ungreased baking sheets.
  • With fork dipped in sugar, flatten each in a crisscross pattern.
  • Bake at 350 degrees for 12 to 18 minutes or until light and golden brown around edges.
  • Cool one minute and remove from baking sheets. Cool completely on wire racks.

1 cup graham cracker crumbs
1 cup saltine crumbs
1/2 cup butter or 1/2 cup margarine
1 teaspoon vanilla
2 (3 1/2 ounce) packages instant vanilla pudding
2 cups milk
1 quart butter brickle ice cream, softened
8 ounces Cool Whip
3 Heath candy bars, crushed

Steps:

  • Melt butter and pour into a 9x13-inch pan.
  • Add vanilla.
  • Mix cracker crumbs into butter mixture to moisten and pat sown to make crust. Bake 6 minutes at 350°F.
  • Mix pudding and milk well.
  • Add softened ice cream.
  • Blend until smooth.
  • Pour over crust.
  • Refrigerate until set.
  • Spread Cool Whip over pudding mixture.
  • Top with Heath bars.

ALMOND BRICKLE- EASY

Yummy! This is my all-time favorite homemade candy. I love the combination of buttery toffee with nuts and chocolate! It's REALLY EASY to make- you don't even need a candy thermometer for this one. Sometimes I use pecans instead of almonds and I love it that way, too. Feel free to substitute your favorite nut for the almonds- just chop them up small.

1 cup butter
1 1/2 cups light brown sugar, firmly packed
2 cups slivered almonds
1 (12 ounce) package semi-sweet chocolate chips

Steps:

  • Cook butter and sugar in a skillet over medium heat until sugar has completely melted, about 2 or 3 minutes, stirring constantly.
  • Add almonds and continue cooking and stirring for another 2 or 3 minutes, just until the almonds begin to brown around the edges.
  • Pour mixture into a well greased (butter) 13x9 pan.
  • Sprinkle the chocolate chips evenly over hot mixture. Wait a minute or two until they are soft and melting and spread them evenly over the top. Chill until firm, break into pieces and hide it from everyone so you can have it all for you!
  • NOTE: This stuff is really good broken up as a topping for homemade vanilla ice cream and on top of cakes or in the filling between layers.

1 cup granulated sugar
1/2 pound unsalted butter
1 teaspoon vanilla
3 cups semisweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Line a sheet pan or large cookie sheet with sides with heavy-duty aluminum foil. Arrange the crackers side by side in a single layer on the foil. In a small saucepan, melt the sugar and butter, stirring constantly until they bubble, about 2 to 3 minutes. Remove from heat and quickly stir in the vanilla. Pour evenly over the crackers and, using a spatula, spread to cover evenly.
  • Bake immediately. After 7 minutes, remove the pan from the oven and sprinkle the chocolate chips evenly over the crackers. Return to the top rack of the oven and bake for 2 minutes more. Spread the chocolate evenly over the crackers with a clean spatula. Cool for 20 to 30 minutes before transferring the tray to the freezer. The next day, peel off the foil and break the brickle into pieces. Keep frozen or refrigerated.

2 cups half-and-half
1 cup brown sugar
2 tablespoons butter
1 1/2 teaspoons butter flavor extract
1 teaspoon vanilla extract
2 cups whipping cream
3/4 cup toffee pieces

Steps:

  • In a medium sacepan, combine half & half, brown sugar, and butter.
  • Stir constantly over low heat.
  • When mixture becomes bubbly around the edges of the pan, remove from heat.
  • Chill this mixture along with the bowl of your ice cream freezer.
  • Before freezing, add whipping cream and both extracts, mix well.
  • Freeze according to your ice cream maker directions.
  • Add toffee bits after freezing process.

1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs, room temperature
1/2 cup sugar
1/2 cup packed brown sugar
1/3 cup butter, melted
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 (6 ounce) package Bits 'o brickle baking chips (I have used Skor and or Heath Bar Bits)
1/2 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350°.
  • Grease 8-inch square pan.
  • I use cooking spray.
  • In a separate bowl mix flour, baking powder and salt, set aside.
  • Beat eggs well.
  • Gradually add both sugars and beat until thick and creamy.
  • Add melted butter and vanilla and almond extract.
  • Gently stir in flour until mixture is moist.
  • Fold in in Bits'O Brickle (and nuts).
  • Pour into prepared pan.
  • Bake for 30 minutes.
  • Cool completely before cutting.
