Delicious, soft, melt-in-your-mouth cookies. This is actually a vintage WWII Brer Rabbit "Molasses Sugar Cookie" recipe from when sugar was rationed. As odd as it seems, DO use butter-flavored SHORTENING and NOT butter, the taste is buttery anyway and shortening will give you that perfect texture. Chilling the dough is also a must. Original recipe says "yields 4 dozen", but we only end up with 2 dozen. Prep time doesn't include chilling time. Family Note: Memo is Mom-Mom's mother: Verdis Pierce Reasoner.

Ingredients

3/4 cup shortening
1 cup sugar
1/4 cup unsulphured molasses
1 large egg (not jumbo)
2 cups flour
2 teaspoons baking soda
1/2 teaspoon clove
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

Melt shortening, cool. Add sugar, molasses and egg; beat well.
Sift dry ingredients, add to first mixture and mix well.
Chill thoroughly (for at least a few hours, we chill overnight).
Form into 1" balls, roll in granulated sugar and place on greased cookie sheet 2-3 inches apart.
Bake at 375 degrees for 7-8 minutes. Cookies should be light, pillowy and soft, not dark and crispy.

1 cup Sugar
1 Egg
1/4 cup brer rabbit molasses
2 cups Flour
2 teaspoons baking soda
1 teaspoon Cinnamon
1/2 teaspoon cloves
1/2 teaspoon Ginger
1/2 teaspoon Salt

Steps:

1. Cream Shortening/Butter, Sugar, Egg, and Molasses. Add remaining ingredients and chill for several hours 2. Roll into 1 inch balls and roll in granulated sugar. 3. Place cookie dough balls on an ungreased cookie sheet and bake at 375 degrees Fahrenheit for 8-10 minutes or until the bottom is lightly brown. best if baked until chewy, not crunchy. DONT OVERCOOK

Again another one of my Grandma Clark's recipes our family LOVES. It is at almost every family gathering. I have used 'store bought' icing before and it works OK but I prefer to make my own powdered sugar icing. This is a LARGE recipe and my servings are a guess as my family eats the cookies before I can count. I often half this recipe to make a more manageable number of cookies.

Ingredients

1 cup sugar
1 cup lard or 1 cup shortening
1/2 cup molasses
1 cup hot water
1 egg
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon salt
1/2 teaspoon cinnamon
4 cups flour
2 cups powdered sugar
1 -2 tablespoon milk

Steps:

Mix all ingredients together.
Drop from a spoon onto pan.
Bake at 350 F until lightly browned at edges (I believe 8-10 minutes but WATCH).
Remove to wire cooling rack (if needed let sit on pan 1-2 minutes).
Ice while hot/warm with powdered sugar icing.
