2 1/2-3 kg leg of lamb
6 garlic cloves (thinly sliced)
50 ml olive oil
2 lemons, juice of
1 large bunch dill (finely chopped)
2 teaspoons ground cinnamon
1 teaspoon ground cumin
4 sprigs oregano (or 1 teaspoon dried)

Steps:

  • Trim excess fat from the lamb and put the leg ontio 2 large sheets of baking paper. Make incisions all over the with a small sharp knife and push in the garlic slices.
  • Mix the 50ml olive oil with lemon juice and drizzle over the lamb and season with sea salt. Rub with remaining herbs and spices.
  • Cover with another piece of paper and fold the bottom pieces over the top pieces to form a tight parcel. Secure with string. Marinate in the fridge overnight or for at least 1 hour.
  • Remove from fridge and allow to come to room temperature, preheat oven to gas mark 3.
  • Place lamb in roasting tin with end of the leg slightly elevated to stop any juices escaping, bake for 3 hours.
  • Remove from over and rest for 30 minutes before carving serving with cooking juices.

The judges described the braised pistachios as somewhat of a revelation. Now I can have this at home, but will save this for something special.

1 rack of lamb, removed from bones (reserve bones)
2 tablespoons yellow miso
thyme
1/2 onion, diced
3 garlic cloves
1/2 cup red wine
2 cups chicken stock
1 pint blackberry
1 cup white balsamic vinegar
1/4 cup sugar
1/2 cup shelled pistachios
salt
1/4 lb maitake mushroom
2 teaspoons olive oil
1 teaspoon butter
pepper
1/4 cup manzanilla olives, minced
1 shallot, minced

Steps:

  • Clean silverskin from lamb and rub with miso and thyme. Refrigerate overnight. Brown bones in the oven. Meanwhile in saucepot, brown onions and garlic. Deglaze with red wine and let reduce. Add in 1 1/2 cups chicken stock and 1/2 pint blackberries; let simmer. Add in browned bones and reduce until slightly thickened. Season and strain.
  • Place remaining blackberries in nonreactive pot with white balsamic and sugar. Reduce to thicken and strain.
  • Place pistachios in remaining chicken stock; season with salt and simmer until nuts are softened.
  • Break maitakes into bite sized chunks. When time to serve, saute mushrooms in one teaspoons olive oil and butter with salt and pepper.
  • Wipe miso off of lamb, season and brown all sides. Place in oven for a few minutes then let rest. Mix together olives, shallot and remaining olive oil.
  • To Serve, place mushrooms on plate. Top with sliced lamb and spoon of tapenade. Place a few pistachios on each plate. Pour spoonful of sauce on top and drizzle with blackberry gastrique.

If you prefer a thicker sauce add in a little flour mixed with cold water to thicken towards the end of cooking time. This is a really great recipe for lamb!

3 -4 tablespoons olive oil
6 lamb shanks
2 large onions, chopped
2 -3 tablespoons chopped fresh garlic (or to taste)
1 1/2 lbs small white button mushrooms
1 -2 teaspoon dried thyme
1 teaspoon dried marjoram (optional and to taste)
1/2-1 teaspoon dried red pepper flakes
1/2 cup dry white wine (can use red wine)
3 cups beef broth
1 tablespoon Worcestershire sauce (or to taste)
1 1/2 cups canned crushed tomatoes
salt and pepper
grated parmesan cheese
1 lb rigatoni pasta or 1 lb penne pasta, uncooked

Steps:

  • Set oven to 325 degrees.
  • In a large Dutch oven or oven-proof pot heat oil over high heat.
  • Season lamb shanks with salt and pepper then brown on both sides (about 6-7 minutes per side) transfer to a platter or plate.
  • Add in onions, garlic, mushrooms, thyme, majoram and crushed red pepper; saute for about 7-8 minutes or until veggies are tender.
  • Return the lamb back to the pot.
  • Add in wine and bring to a boil; simmer for about 6-8 minutes.
  • Add in broth, Worcestershire sauce and crushed tomatoes; bring back to a boil.
  • Cover the pot and transfer to the oven to cook for about 2-1/2 - 3 hours, or until the lamb is very tender.
  • Season with salt and pepper about the last 30 minutes or cooking.
  • Meanwhile cook the pasta in boiling salted water until JUST firm-tender; drain and place the pasta in a large bowl.
  • Spoon the sauce over the cooked pasta, sprinkle with grated Parmesan cheese, then place the shanks on top.
  • Serve and pass more Parmesan cheese separatel at the table.

It's from a 1998 Bon Appetit and Recipe #50881 that I've posted goes well with this--spoon some of the veggies and sauce over the polenta. Wonderful !!

6 lamb shanks (I have also used leg of lamb, ask the butcher to cut it in 1 1/2 in. slices or use a cut-up boneless)
2 tablespoons olive oil
2 medium onions, chopped
3 large carrots, peeled and cut into 1/2 inch thick rounds
10 garlic cloves, minced
1 (750 ml) bottle dry red wine (Sangiovese is good)
1 (28 ounce) can diced tomatoes with juice
1 (14 1/2 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can beef broth
5 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon zest

Steps:

  • Sprinkle lamb with salt and pepper.
  • Heat oil in heavy, large pot over medium-high heat.
  • Working in batches, add lamb to pot and cook until brown on all sides, about 8 minutes.
  • Transfer to bowl.
  • Remove all but about 2 tablespoons of oil from pan.
  • Add onions, carrots, and garlic to pot and sauté till golden, about 10 minute.
  • Stir in all remaining ingredients.
  • Return lamb to pot, pressing down to submerge.
  • Bring liquid to boil, reduce heat to medium low, and cover.
  • Simmer until meat is tender, about 2 hours.
  • Uncover pot; simmer till meat is very tender, about 30 minutes.
  • (Can be made 1 day ahead. Chill until cold, cover, and keep chilled. Rewarm over medium heat before continuing.) Transfer lamb to platter; tent with foil.
  • Boil juices in pot till thickened, about 15 minutes.
  • Season with salt and pepper and spoon over lamb.
