BANANA GELATO
Gelato, or Italian ice cream, tends to be lower in fat than ice cream, as it's made from milk with just a touch of cream. However, its texture is traditionally denser as it has less air beaten into it. Oddly enough, this gelato tastes like caramel and is great with toasted pecans. From Relish magazine. Freezing time is not included in prep time.

Steps:
- Bring milk and bananas to a simmer in a large saucepan over medium heat. Cover, reduce heat to low, and simmer 10 minutes.
- Cool 5 minutes, then purée in a blender or food processor until smooth. Return mixture to saucepan; set over very low heat to keep warm.
- Beat yolks and sugar in a large bowl with a mixer at high speed until thick.
- Beat half the milk mixture into yolk mixture in a thin stream, then combine with remaining milk mixture in saucepan. Set over low heat and cook until mixture coats back of a spoon, about 2 minutes. Stir in vanilla, salt and cream.
- Pour into large container, cover, and refrigerate at least 2 hours or up to 2 days. Pour mixture into the canister of an ice-cream freezer; freeze according to manufacturer's instructions.

- In a large non-stick saucepan on the stove pan, heat milk and bananas over medium heat. Bring to a simmer, reduce heat to low, and simmer 10 minutes. Do not let the milk boil. Take pan off heat, and allow to cool for 5 - 7 minutes.
- Beat yolks and sugar in a large bowl with a hand mixer at high speed until thick and pale yellow. Set aside.
- Place the cooled milk and banana mixture in a blender or food processor and puree until smooth. Return mixture to saucepan and set over very low heat.
- Slowly stream half of the banana puree into the yolk/sugar mixture, whisking the whole time. This will temper the eggs. Slowly whisk the combined egg/sugar/puree mixture to the remaining warm banana puree in the saucepan. Set over low heat and cook until mixture coats back of a spoon, about 2 minutes. Stir in vanilla, salt and cream. Mix well.
- Transfer the gelato base mixture to a large glass bowl. Cover with plastic wrap and place in the fridge for 4 - 6 hours, or overnight to thoroughly chill.
- Transfer the chilled gelato base to the canister of an automatic gelato/ice cream machine, and churn according to directions for about 20 -30 minutes or until the desired texture is achieved.
- Store in covered freezer container.
BOOZY BANANA GELATO RECIPE
This creamy, caramelized banana gelato can be a yummy dessert or a cool after dinner drink.

- Melt butter in non-stick pan. When butter is hot and bubbly, place sliced bananas cut side down in pan and cook over medium high heat. Cook for 3 minutes or until cut side is golden and caramelized. Remove from heat.
- Place banana rounds on a parchment lined cookie sheet and place in freezer
- After sliced bananas have cooled, slice in half forming 8 quarters. Place on cookie sheet with banana rounds and freeze overnight.
- To make gelato, place bananas, vanilla, and rum in the bowl of a food processor fitted with a metal blade and pulse until fully combined and mixture has the consistency of gelato. (Add a couple of ice cubes to the food processor and blend if you want a more icy version.)
- Scoop into compote glasses or bowls and garnish with a sprig of mint.

- In a small bowl, beat the egg yolks, brown sugar, salt and cinnamon for 4 minutes; set aside. , In a small heavy saucepan, heat milk and cream until bubbles form around sides of pan. Whisk a small amount of hot mixture into the egg mixture. Return all to the pan, whisking constantly., Cook and stir over medium heat until mixture reaches at least 160° and coats the back of a spoon. Quickly transfer to a large bowl; place in ice water and stir for 2 minutes. Stir in the rum and vanilla. Mash bananas with lemon juice; stir into the rum mixture., Press waxed paper onto surface of custard. Refrigerate for several hours or overnight., Fill the cylinder of an ice cream freezer two-thirds full; freeze according to the manufacturer's directions. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving., If desired, top with sliced bananas and caramel topping.

- Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
- Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

Steps:
- Cut bananas in half crosswise, and then lengthwise. Toss with lemon juice, and set aside.
- Combine margarine and brown sugar in a large skillet; cook over medium heat, stirring constantly, 1 minute or until sugar melts. Add bananas; cook 2 minutes.
- Turn bananas, and cook an additional 2 minutes. Sprinkle with cinnamon, and remove from heat. Heat rum in a small saucepan just until warm; remove from heat, and ignite. Pour over banana mixture and let flames die down. Serve immediately over ice milk.
