2/3 cup canned cream of coconut (such as Coco Lopez)
1/2 cup fresh lime juice
6 tablespoons minced green onions
2 teaspoons curry powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt

Steps:

  • Whisk cream of coconut and fresh lime juice in small bowl until smooth.
  • Stir in green onions, curry powder, cayenne pepper and salt.
  • (Can be made 1 day ahead. Cover and refrigerate.) Brush half of sauce over chicken or seafood before and during grilling.
  • Pass remaining sauce separately.
  • NOTE: I usually serve this dish with a side of frijoles negros (black beans) and saffron rice cooked with pineapple juice instead of water.

1/2 cup mirin
1/4 cup lemongrass, chopped
1 tablespoon ginger, chopped
1/4 cup dry white wine
2 cups whipping cream
3/4 cup unsweetened coconut milk
2 teaspoons green curry paste (Thai) or 2 teaspoons red curry paste (Thai)

Steps:

  • Place mirin, lemongrass and ginger in heavy medium saucepan. Boil until reduced to 1/4 cups, about 6 minutes.
  • Add wine and boil until reduced to 1/4 cup, about 6 minutes.
  • Add cream and coconut milk; bring to boil. Reduce heat to medium. Simmer sauce until slightly thickened, stirring occasionally, about 12 minutes.
  • Stir in curry paste. Season sauce to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before serving.).

Is there anybody who doesn't love coconut shrimp? The sauce is key for these crispy, coconut-coated morsels. Sweet mango with a bite of jalapeno and a splash of Thai fish sauce make up the delightful dipping sauce.

Dipping Sauce
1 cup finely diced mango
2 tablespoons Thai fish sauce
1 tablespoon fresh lime juice
2 tablespoons packed dark brown sugar
1 teaspoon finely chopped jalapeno pepper
1 tablespoon finely chopped red onion
1 clove garlic, finely minced
1/4 cup chopped fresh cilantro
Shrimp
1 pound large shrimp, peeled and deveined, tail on (optional)
1 teaspoon kosher salt
2 cups unsweetened coconut flakes
2 tablespoons all-purpose flour
2 large egg whites, lightly beaten
vegetable oil

Steps:

  • Dipping Sauce: Combine the mango, fish sauce, lime juice, brown sugar, jalapeno, red onion, garlic, and cilantro in a bowl. Mix well and set aside. Sprinkle the shrimp with the kosher salt. Combine the coconut and flour in a shallow bowl and mix well. Place the beaten egg white in another shallow bowl. Dip each shrimp first in the beaten egg, letting any excess dripping off. Next dip the shrimp in the coconut mixture, coating them completely. Set the shrimp on waxed paper. Heat about 1-inch of oil in a deep skillet over medium-high heat (to about 360 degrees F). Add the shrimp, in batches, and cook until golden brown, turning as needed. Remove the shrimp with a slotted spoon and let drain on paper toweling. Serve the shrimp with the dipping sauce.

1/4 cup olive oil
1/4 cup minced ginger
1/4 cup soy sauce
1 cup ketchup
1 cup oyster sauce
3 tablespoons lemon juice
1/4 cup water
1/2 cup sugar
3 tablespoons coarsely chopped cilantro

Steps:

  • In a medium sauce pan, sautee the minced ginger in the olive oil until fragrant.
  • In a bowl, thoroughly combine the soy sauce, ketchup, oyster sauce, lemon juice and water and add to sauté pan.
  • Bring the mixture to a slow boil, then slowly add sugar over low-med heat for about 5 minutes.
  • If desired, add a little hot water to the sauce to thin it.

A rich, classic sauce for fish and poultry. I found this recipe at their online site. I love their lemon butter sauce.

1 tablespoon fresh garlic, chopped
1 tablespoon fresh shallot, chopped
2 tablespoons white wine (preferably Chablis)
3 tablespoons fresh lemon juice
1/2 lb unsalted butter, cold
1 pinch salt

Steps:

  • Place the first 4 ingredients, into a sauce pan and simmer over medium high heat until the volume is reduced by half. Reduce heat to low.
  • Now slowly begin adding the pieces of cold butter (in ¼ inch squares), whisking continuously after each addition to maintain a smooth consistency.
  • Add salt and strain sauce into a small pan to remove any solids. Sauce should be creamy and smooth. Serve immediately.

Fortunately, a reviewer pointed out that the recipe came from Cooking Light, so I searched their site--indeed, it was originally published in their September 2002 issue. 1 teaspoon dark sesame oil, divided
2 teaspoons minced fresh ginger
2 garlic cloves, minced
1 cup finely chopped red bell pepper
1 cup chopped green onion
1 teaspoon curry powder
2 teaspoons red curry paste
1/2 teaspoon ground cumin
4 teaspoons low sodium soy sauce
1 tablespoon brown sugar
1/2 teaspoon salt, divided
1 (14 ounce) can light coconut milk (I used regular)
2 tablespoons chopped fresh cilantro
4 (6 ounce) tilapia fillets
3 cups hot cooked basmati rice
1 lime (cut in 4 wedges)

Steps:

  • Preheat broiler.
  • Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat.
  • Add ginger and garlic; cook 1 minute.
  • Add peppers and onions; cook 1 minute.
  • Stir in curry powder, curry paste, and cumin; cook 1 minute.
  • Add soy sauce, sugar, 1/4 teaspoon salt, and coconut milk; bring to a simmer (but do not boil).
  • Remove from heat and stir in cilantro.
  • Brush fish with remaining 1/2 teaspoon oil and 1/4 teaspoon salt and place on a baking sheet coated with cooking spray (I just use parchment paper).
  • Broil 7 minutes or until fish flakes easily when tested with a fork.
  • Serve fish with sauce, rice, and lime wedges.

THAI BASIL CHICKEN IN COCONUT-CURRY SAUCE

This is a family favorite recipe the kids enjoy as well. I grown my own Thai basil, so I have lots of it in the summer. It does give the dish much more flavor. When basil is out of season I use cilantro. I eliminate the jalapenos when serving this to my kids.

1 lb boneless skinless chicken, cut into 1-inch pieces
1 tablespoon curry powder
1 large onion, chopped into 1-inch pieces
1 bell pepper, cut into 1-inch pieces
2 jalapeno peppers, seeded and finely chopped (optional)
5 garlic cloves, minced
1 tablespoon fresh ginger, grated or finely diced
1 tablespoon peanut oil
1 (14 ounce) can coconut milk
2 teaspoons cornstarch
1/4 cup Thai basil (or cilantro)

Steps:

  • ~Rinse chicken and pat dry. Place in a storage bag and toss with the curry powder and ½ teaspoon salt. Refrigerate for 30 minutes.
  • ~In a 12-inch skillet, heat 1 teaspoon oil at medium-high heat. Add half of chicken and cook 2-3 minutes or till chicken is no longer pink. Remove chicken and repeat with remaining chicken. Remove chicken.
  • ~Heat 1 teaspoon oil in the same skillet. Add onion and bell pepper, and jalapeno peppers. Cook for about 5 minutes. Add garlic, and ginger just until fragrant, about 30 seconds.
  • ~Stir cornstarch into coconut milk. Turn heat to low and slowly add milk. Cook and stir until thickened. Turn up the heat to medium if needed. Add chicken and basil just before serving. Sometimes I add more curry if needed. Serve over hot rice and garnish with fresh basil. Steamed cauliflower goes well with this dish.

4 ounces fresh lemon juice
1 bunch flat leaf parsley (Italian)
1 cup olive oil

Steps:

  • Combine all ingredients in a food processor and pulse chop until all ingredients are approximately 1/8 inch in size.
  • Add Italian parsley and pulse chop until parsley is 1/8 inch in size.
  • Add the olive oil and blend in quickly. (Do not over blend).
  • Allow the sauce to marinate for 30 minutes before serving.
