This recipe dates back generations in my family. I enjoy it so much because I can use the fresh vegetables that are so abundant here in the South.

Number Of Ingredients 11

1 tablespoon sugar
1 teaspoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups sliced fresh okra
Boiling water
1 medium onion, chopped
1 medium green pepper, chopped
2 tablespoons canola oil
3 medium tomatoes, peeled and chopped
Cooked rice, optional

Steps:

  • In a small shallow bowl, combine the sugar, flour, salt and pepper; set aside. In a small saucepan, cover and cook okra in boiling water for 10 minutes or until tender. Drain and set aside. , In a large skillet, saute onion and green pepper in oil until tender. Stir in the tomatoes and reserved sugar mixture; cook for 5 minutes. Add okra. Heat through, stirring as little as possible. Serve with rice if desired.

As a good Southern gardener, I find myself bringing in okra by the armload nearly every other day. Stewed okra is great, but for a little variety, we like to roast ours from time to time. This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

1 tablespoon olive oil
2 teaspoons kosher salt, or to taste
2 teaspoons black pepper, or to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 10 to 15 minutes.

In a 1930's cook book a mention on how southern cooks kept the "slime" off of okra. I tried it and man-oh-man! Tis good!

3/4 teaspoon lemon juice

Steps:

  • Place okra in a sause pan and cover with water, and add lemon juice.
  • Add salt and pepper to taste.
  • Bring to boil.
  • Simmer for 8-10 minutes.
  • No longer!
  • The taste is great!
  • Not mushy, but not crisp at all.
  • I used the frozen, cut okra.
  • The lemon juice adds a wonderful kick to the taste.

8 cherry tomatoes, halved
olive oil
kosher salt and ground black pepper to taste
garlic powder to taste
½ cup panko bread crumbs

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the okra and tomatoes in a bowl. Pour in the olive oil and sprinkle with kosher salt, pepper, and garlic powder. Stir until the vegetables are coated with oil. Add the panko bread crumbs and stir. Spread the vegetables on to a lightly greased baking sheet. Bake for 13 to 15 minutes until the tomatoes are soft and the okra is lightly browned.
