I have done this with dried herbs in the winter but the fresh make it all special. This may be on another website but if so it was probably me that posted it.

4 tiny new potatoes
3/8 teaspoon fresh rosemary
3/4 teaspoon fresh thyme or 3/4 teaspoon basil, chopped
3/4 teaspoon chives, chopped
1/4 teaspoon lemon juice
1/4 teaspoon canola oil
1/16 teaspoon white pepper, freshly ground

Steps:

  • In saucepan, boil unpeeled potatoes until tender, about 15 minutes, drain.
  • Add herbs, chives, lemon juice, oil and pepper.
  • Mix lightly and serve.

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

1 lb tiny new potatoes (scrubbed well or peeled)
1 tablespoon olive oil
1/2 teaspoon herbes de provence
1/4 teaspoon coarse sea salt
1/4 teaspoon flaked sea salt
2 teaspoons fresh lemon juice
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • Place potatoes in stockpot & cover with salted water. Bring to boil over high heat.
  • Cook 8-10 minutes until potatoes are just tender. Drain and set aside.
  • In large skillet , heat oil over medium heat. Add herbs de Provence.
  • Cook, stirring constantly, 10-15 seconds.
  • Add drained potatoes, coarse salt, and lemon juice; toss to coat.
  • Cook 2-3 minutes & remove from heat. Sprinkle with pepper and flaked sea salt.

1 1/2 lbs tiny new potatoes, scrubbed and left whole
1 tablespoon extra virgin olive oil
1/2 teaspoon herbes de provence
1/2 teaspoon coarse salt
1/2 medium lemon, juice of
fresh ground black pepper, to taste

Steps:

  • Place the potatoes in a large sauce pan or medium stockpot with salted water to cover; bring to a boil over high heat.
  • Reduce the heat to a gentle boil and cook until potatoes are just tender, about 10 minutes, depending on size.
  • Drain and set aside to cool slightly.
  • In a large nonstick skillet, heat oil over medium-high heat.
  • Add the herbs de Provence, and cook, stirring constantly, for about 10 seconds.
  • Add drained potatoes, coarse salt, and lemon juice; stir well to coat.
  • Cook tossing and stirring constantly, until the potatoes are heated through, 1- 2 minutes.
  • Season with pepper to taste.

1 tablespoon extra-virgin olive oil
3 large cloves garlic, finely minced
3 scallions, finely minced
1/2 tablespoon minced fresh chervil
1/2 tablespoon finely chopped flat-leaf parsley
Salt and ground black pepper

Steps:

  • Put the potatoes in a saucepan, cover with water and boil until tender, 10 to 15 minutes. Drain.
  • Heat the olive oil in a heavy nonstick skillet. Add the potatoes. Cook for a few minutes over medium-high heat, until the cut sides of the potatoes just begin to turn golden. Add the garlic and scallions. Cook a minute or so longer, until the garlic softens, then add the chervil and parsley.
  • Season to taste with salt and pepper and serve.
