Provided by Kittencalrecipezazz

Categories     Dessert

Time 55m

Yield 8 serving(s)

Number Of Ingredients 11

1 quart fresh blueberries (about 4 cups you can use more blueberries if desired I most always do!)
3/4 cup sugar (or (to taste)
2 tablespoons cornstarch
1 cup water
2 -3 tablespoons lemon juice
1/2 teaspoon vanilla
1 cup all-purpose flour
3/4 cup regular oats
1 cup brown sugar
1 1/2 teaspoons cinnamon
1/2 cup butter, melted (no substitutes)

Steps:

  • Set oven to 350 degrees F.
  • Prepare an 11 x 7-inch baking dish (can use a 13 x 9-inch but it will not be as high).
  • Spread the blueberries in the bottom of the prepared baking pan.
  • In a small saucepan over medium heat combine the sugar, cornstarch, water and 2-3 Tbsp lemon juice; cook and stir until thick and clear, then add in the vanilla.
  • Pour over, then gently stir in the cooked mixture with the blueberries.
  • In a bowl combine the flour with oats, brown sugar and cinnamon.
  • Add in the melted butter; mix until crumbly (I start mixing with a spoon then finish mixing with my hands).
  • Sprinkle over the top of blueberries (there will be a couple of empty spots that is okay, there may seem like a lot of crumble but it will settle when baking).
  • Bake for 30-35 minutes, or until blueberry mixture bubbles and the topping is brown.
  • Serve with ice cream-- enjoy!

BLUEBERRY LEMON CRISP

Blueberry Lemon Crisp image

Two of my favorite flavors, blueberry and lemon. Reminds me of summer gatherings.

Provided by Barbara Kavorkian

Categories     Fruit Desserts

Time 1h

Number Of Ingredients 12

3 pt blueberries
1/2 c sugar
2 Tbsp flour or cornstarch
1 Tbsp lemon juice
1 Tbsp grated lemon peel
TOPPING INGREDIENTS
1/2 c light brown sugar
1 c flour
1/2 tsp ground cinnamon
1 pinch nutmeg
1/2 c butter, cold and cut up into cubes
3/4 c quick oats

Steps:

  • 1. Preheat oven to 375° F.
  • 2. In large bowl, stir granulated sugar and flour or cornstarch until blended. Add blueberries and lemon juice; stir to coat evenly. Spoon blueberry mixture into shallow 2-quart glass or ceramic baking dish; spread evenly. Sprinkle the lemon peel over the berries. The tartness of fresh lemon peel balances the sweetness of the berries and topping, so use the amount that suits your personal taste.
  • 3. Combine flour, oats, brown sugar, butter, and cinnamon. With fingers, mix until coarse crumbs form. Crumble over blueberry mixture.
  • 4. Place sheet of foil underneath baking dish; crimp foil edges to form a rim to catch any drips during baking. Bake crisp 35 to 40 minutes or until top is browned and fruit is bubbly at edges. Cool on wire rack 1 hour to serve warm or cool completely to serve later.

BLUEBERRY AND LEMON SHORTBREAD CRUMBLE BARS

Blueberry and Lemon Shortbread Crumble Bars image

Crisp lemon shortbread, topped with tart blueberry jam and an oaty crumble, then baked up to perfection! So many textures and flavours in one bite, these are bound to become an instant favourite!

Provided by anniesnomsblog

Categories     Bar Cookie

Time 50m

Yield 9 serving(s)

Number Of Ingredients 11

1/2 cup unsalted butter, at room temp
1 3/4 cups plain flour
2 tablespoons cornflour
3 tablespoons icing sugar
1 lemon, zest of
1 pinch salt
3/4 cup blueberry jam, warmed in the microwave for 10-15 seconds
1/4 cup unsalted butter, at room temp
1/2 cup plain flour
2 tablespoons light brown sugar
1/3 cup oats, not quick cook

Steps:

  • Preheat the oven to 180C/350F and grease and line an 8x8 inch square pan.
  • Place the butter, flours, icing sugar, lemon zest and salt into a large bowl or the bowl of your stand mixer.
  • Mix on med-high for 2-3 minutes until you have a crumbly mix, with no large lumps of butter. This dough will not come together like a normal dough, that's fine!
  • Tip the shortbread into your greased pan. Spread and level with a spatula/the back of a wooden spoon.
  • In a separate, medium sized bowl, place the 1/2 stick of butter, flour, sugar and oats.
  • Mix together with your fingers, until the mix resemble bread crumbs. Some larger lumps are fine. Leave to one side.
  • Place the blueberry jam into a small heatproof bowl and heat for 10-15 seconds. This just makes it easier to spread.
  • Pour over the shortbread and spread until level. Leave a small 1/2 inch gap around the edges.
  • Sprinkle the jam layer with the crumble mix, it's fine if there are a few gaps.
  • Place in the oven for 35-40 mins until the top is lightly browned, the jam is bubbling and an inserted skewer into the middle comes out piping hot.
  • Leave to cool completely in the pan.
  • Once cooled, slice into 9-12 bars. Bars will keep in an airtight container, at room temperature for 3 days.
