EASY BLUEBERRY CHEESECAKE ROLLS
Those blueberry sweet rolls at the bakery have nothing on these cheesecake rolls! They're easy to make, simply scrumptious-and served warm from your oven.

Steps:
- Heat oven to 350°F.
- Mix cream cheese and 1/2 cup sugar until blended.
- Unroll 1 can crescent dough onto work surface; firmly press perforations and seams together to form 12x4-inch rectangle. Spread with half the cream cheese mixture; sprinkle with half the blueberries. Roll up, starting at one short end; cut into 6 slices. Arrange, cut sides up, in half of 13x9-inch baking dish sprayed with cooking spray. Repeat with remaining dough, cream cheese mixture and blueberries.
- Bake 30 min. or until golden brown. Cool 5 min.
- Mix remaining sugar and milk until blended; drizzle over warm rolls.

Steps:
- Bring 3/4 cup blueberries, water, and 1 Tbsp. each sugar and lemon juice to boil in saucepan on medium-high heat; simmer on low heat 12 to 15 min. or until slightly thickened, mashing blueberries lightly after about 10 min. Remove from heat.
- Spray 8-inch square electric waffle iron with cooking spray. Heat iron to medium-high heat.
- Mix Neufchatel, lemon zest, remaining sugar and lemon juice until blended. Unroll crescent dough onto lightly floured cutting board; roll or pat into 16x8-inch rectangle. Cut into 2 (8-inch) squares.
- Place 1 dough square on bottom grid of waffle iron. (Dough will not completely cover grid.) Top with half the Neufchatel mixture; spread carefully to within 1 inch of edges. Top with remaining blueberries; cover with remaining dough. Close lid.
- Cook 4 to 5 min. or until golden brown. Use fork to transfer waffle from grid to work surface. Cool slightly. Cut waffle into 4 squares, then cut each square diagonally into quarters. Serve warm with blueberry sauce and remaining Neufchatel mixture.

Steps:
- Combine crumbs, 2 tablespoons sugar and butter. Pat mixture into the bottom of a 9 inch springform pan.
- Mash cream cheese until soft and creamy. Gradually beat in sour cream, 3/4 cup sugar, vanilla and flour. Beat in eggs one at a time.
- Pour mixture into crumb-lined pan. Bake in a preheated 325 degree F (165 degrees C) oven for 1 hour or until firm to the touch.
- Cool and then remove cake from pan by loosening edges with a knife. Place frozen blueberries on top of cake. Melt jelly and spoon over blueberries to glaze. Chill until ready to serve.

- Preheat oven to 350°F. Unroll and spread 1 of the cans of crescent rolls on the bottom of a 9" x 13" baking dish (or 8 x 8 if you want to cut the recipe in half). Combine softened cream cheese, 1 cup sugar, and vanilla. Spread over crescent roll layer. Unroll and layer remaining crescent rolls over cream cheese layer. Melt your butter and spread over top of crescent rolls. Sprinkle generously with cinnamon and sugar. Bake for 20 to 30 minutes in 350°F oven until bubbly and slightly browned. Drizzle with a little honey if you like. Let cool a bit, slice and eat.

- Unroll crescent dough; separate into 8 triangles on a baking sheet lined with parchment paper.
- In a small mixing bowl, combine cream cheese, 2 Tbsp. sugar, and 1 teaspoons vanilla. Mix until smooth.
- Fold in blueberries.
- Fill each crescent triangle with approximately ¼ cup filling. My note: (you may want to measure out 8 servings of this mixture in a separate dish so you don't run out. If needed add extra blueberries to make 8 separate fillings for the rolls).
- Fill each crescent triangle with approximately ¼ cup filling.
- Tuck edges to seal. My note: Gently form them into rectangles.
- In a separate bowl, combine flour, 2 Tbsp. butter, and 2 Tbsp. sugar. Mix until crumbly.
- Divide evenly among crescent rolls and sprinkle on top of each roll.
- Bake at 375 degrees for 12-15 minutes or until light golden brown. Check the bottoms at 9 minutes and watch carefully.
