TATER TOT CASSEROLE (NO CANNED SOUP!)
Tater tot casserole with no canned soup has a homemade creamy sauce, seasoned meat, cheese, and vegetables, all topped with crispy tater tots. Everyone loves this meal.

Steps:
- Preheat oven to 350°F/180°C and grease a 9x13 inch casserole dish with cooking spray.
- In a skillet, cook ground beef until it's no longer pink and cooked through. Drain fat. Remove onto a plate and set aside.
- Add onion, and cook until softened (2-3 minutes), add garlic and sauté for 30 seconds - 1 minute.
- Add flour, and cook it for 30 seconds then add the milk, beef broth, and Worcestershire sauce. Whisk and cook on medium heat for 3 minutes or until the sauce has thickened.
- Stir in the beef and frozen vegetables and remove from heat.
- Layer the beef in the casserole dish, followed by the cheese, and arrange the tater tots on top in a single layer.
- Bake for 30-40 minutes. Transfer to a cooling rack, and cool for 15 minutes before serving. Garnish with freshly chopped parsley or chives.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper. Stir cream of mushroom soup into the cooked ground beef; pour the mixture into a 9x13-inch baking dish. Layer tater tots evenly over the ground beef mixture; top with Cheddar cheese.
- Bake until tater tots are golden brown and hot, 30 to 45 minutes.

BLUE RIBBON TATER-TOT CASSEROLE
My mom found this "contest winning recipe" in the local newspaper in the '70's and I've enjoyed this recipe since. It's very comforting and kid-friendly the way the fried onions blend with the creamy filling. It's something I make for the flavor and not because it is so easy!

- Line an 8x12-inch casserole (or two smaller Corning Ware casseroles), or 7x11-inch pan with the potato rounds, on the bottom and sides (I use a little more ingredients, doubling the soup and make a heaping 9x13-inch).
- Bake 10 minutes at 400°F.
- Brown beef.
- Add broccoli, tomatoes, HALF the onion rings, and add to the cooked ground beef and spread on top of cooked tater tots.
- Mix soup, milk, half the cheese and seasonings and pour over beef mixture.
- Fill casserole dish and bake covered (or it will dry out) at 400°F for 20 minutes.
- Remove cover and add rest of cheese and dried onions.
- Let rest couple minutes for the cheese to melt.
- Serve.

- 1. Spray a large casserole dish with non-stick spray.
- 2. Tear the 6-12 slices of bread into pieces about the size of a half-dollar. Line the bottom of the pan with the bread. Make sure the bottom of the pan is completely covered. Set aside.
- 3. Fully cook the bacon (or sausage) in a skillet. Remove and pat dry with a paper towel to get rid of the extra grease. **Note: You can use as much or as little meat as you want. If you have a meat lover in the family you might want to try both bacon and sausage together in this recipe.**
- 4. Spread the meat generously over the bread, making sure the meat is evenly distributed. Sprinkle 1/2 the bag of cheese on top of the bacon/bread layer. Set aside.
- 5. Bake tater tots as directed on package. Once they are crispy & golden brown, place them on top of the cheese layer. Using a fork, run over tater tots to break some open so there will be potatoes in every bite. Set aside.
- 6. In a medium/large bowl, crack 8 eggs (if making a smaller casserole you may have to use 6; or if a larger about 10+) Scramble the eggs with a fork. Add 2 1/2 cups milk and 1/2 cup heavy cream to the egg mixture and whisk well. Season to taste with salt and pepper. **Note: Again if you do not have these on hand or want to trim the calories just substitute for an additional 1/2 cup milk.***
- 7. Pour egg/milk over the casserole, paying special attention to the corners and sides as they tend to dry out if they don't have enough liquid.
- 8. Sprinkle the other 1/2 bag of shredded cheese on the top of the casserole.
- 9. Cover with foil and let refrigerate overnight. (You don't necessarily have to do this step but it makes the casserole a hundred times better! Really easy to make it the night beforehand and just pop it in the oven in the morning!)
- 10. Remove from refrigerator. Remove tin foil. Bake at 350 degrees for 45-60 minutes depending on your oven. **Note: You can always put the foil back over the dish to prevent premature browning/burning.**
- 11. Let cool for about 5 minutes before serving. Enjoy! :)

- Line up the tater tots in a buttered 9-by-13-inch baking dish.
- Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
- In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.
CLASSIC TATER TOT CASSEROLE

- Preheat oven to 375°F.
- Brown ground beef and onion over medium heat until no pink remains. Drain any fat.
- In a bowl mix the vegetables, soup, milk, seasonings, beef mixture, and ½ cup shredded cheese together and spread into a casserole dish. Sprinkle remaining cheese on top.
- Top with tater tots and bake 40-50 minutes or until the sauce is bubbly and the tots are golden brown.

- Spread 20 potato nuggets in the casserole dish.

- Grease three 9-in. round baking pans; set aside. In a large bowl, cream the butter, peanut butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
