SPICY BLOODY MARYS

3 large celery stalks, plus additional stalks for serving
3 teaspoons prepared horseradish
2 teaspoons grated yellow onion
1/2 cup freshly squeezed lemon juice (2 lemons)
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
1/2 teaspoon kosher salt
1/2 teaspoon Tabasco, or to taste
1 (46 ounce) can Sacramento tomato juice
2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.

When I first saw this recipe I saw orange juice in the ingredient list and I thought, no, I don't think so. But I decided to give it a try and gave it to my Bloody Mary loving husband to give it the final approval. He gives it a very outstanding rating!!-- So I am offering it to you to give a try to see if you agree with him! I hope you like it as well as he does!

46 ounces tomato juice (we like V8)
3/4 cup fresh orange juice
3 tablespoons Worcestershire sauce
2 tablespoons prepared horseradish (more or less to suit your taste ~ we use generous amounts)
1 lemon, juice of
1 teaspoon hot pepper sauce (Tabasco)
1 1/2 teaspoons celery salt
1 cup vodka (good quality)
ice cube
celery
lemon slice

Steps:

  • In a large pitcher, stir together tomato juice and orange juice, Worcestershire sauce, horseradish, juice of fresh lemon, hot pepper sauce, celery salt and vodka.
  • Fill glasses with ice, pour and garnish.

BLOOD ORANGE MARMALADE

Growing up, I was not a fan of marmalade since it was kind of firm and dense, had a bitter taste, and I could never figure out why it was full of chopped-up pieces of what we used to throw away when we peeled an orange. But then one day, I was served a marmalade that changed my life--or at least what I thought about marmalade. I've been a huge fan of that style ever since, and it's exactly the kind I'm showing you in this recipe!

5 large blood oranges
½ cup cold water
2 teaspoons fresh lemon juice, or to taste
1 ¾ cups white sugar

Steps:

  • Wash oranges well. Use a peeler to remove all the zest in long strips. It's okay if some of the white pith comes with it.
  • Transfer the peels to a saucepan and add 6 cups of cold water. Bring to a simmer over high heat. Reduce heat to medium-low to low and simmer until the peels are soft and tender, 45 minutes to 1 hour.
  • While that cooks, cut oranges in half and juice them into a large measuring cup; this should equal 1 cup. Pour in 1/2 cup cold water and set aside.
  • Remove peels from heat and drain off the water. Transfer peels to a cutting board, and when cool enough to handle, slice the zest into very thin strips. Transfer into the blood orange juice.
  • Pour zest-juice mixture into the saucepan along with lemon juice and sugar. Bring to a simmer over medium-high heat. Reduce heat to medium-low; cook, stirring occasionally, until the mixture reduces and thickens slightly, 30 to 40 minutes. A probe or candy thermometer should read about 225 degrees F (107 degrees C).
  • Meanwhile, inspect jam jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until juice mixture is ready. Wash new, unused lids and rings in warm soapy water.
  • Pour into sterilized jam jars and let cool to room temperature. Seal jars and transfer to the refrigerator for 8 hours, or overnight, before enjoying.

3 cups Sacramento tomato juice
2 (8-ounce) bottles clam juice, such Bumble Bee
1/2 teaspoon grated lime zest
1/2 cup freshly squeezed lime juice (3 to 4 limes)
2 teaspoons wasabi powder
2 teaspoons Tabasco Chipotle Pepper Sauce (see Cook's Note)
1 tablespoon Worcestershire sauce
1 cup good vodka, such as Grey Goose
Kosher salt and freshly ground black pepper
2 tablespoons Old Bay Seasoning
1 lime wedge, plus 6 lime slices, for garnish
18 large pimento-stuffed olives, such as Sable and Rosenfeld
6 cooked and peeled jumbo shrimp, with tails on

Steps:

  • In a large pitcher, stir together the tomato juice, clam juice, and lime zest. In a small glass measuring cup, whisk together the lime juice and wasabi powder and add to the pitcher. Stir in the Tabasco, Worcestershire, vodka, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Spread the Old Bay Seasoning on a small plate. Moisten the rims of six highball glasses by running a lime wedge around the edge of each glass and dip the rims in the Old Bay Seasoning. Set aside to dry.
  • Fill the glasses half full with ice and pour in the Bloody Mary mixture. For each drink, add 2 or 3 olives threaded on a 6-inch skewer, then place one shrimp and one slice of lime on the rim of each glass. Serve cold.

A few dashes hot sauce (optional)
