Categories     Afternoon tea, Dessert

Time 1h40m

Number Of Ingredients 14

175g salted butter, plus extra for greasing
200g bar dark chocolate
300g plain flour
375g golden caster sugar
25g cocoa
1 tsp bicarbonate of soda
2 medium eggs
200g buttermilk or natural yoghurt
425g can pitted cherry, 2 tbsp juice reserved, rest drained
100g morello cherry jam
4 tbsp kirsch (or more juice from a can if you want it to be non-alcoholic)
500ml tub double cream
3 tbsp icing sugar
1 small punnet fresh cherries (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of 3 x 20cm cake tins. Boil the kettle. Put the butter and 75g chocolate broken into chunks in a small pan and gently heat, stirring, until completely melted.
  • Mix together the flour, sugar, cocoa and bicarbonate of soda with a pinch of salt in a mixing bowl. Whisk the eggs and buttermilk or yogurt together. Scrape the melted chocolate mixture and egg mixture into the dry ingredients, add 100ml boiling water and whizz briefly with an electric whisk until the cake batter is lump free.
  • Divide the mixture between the tins and bake for 25 mins, swapping the tins round after 20 mins if they're on different shelves. To test they're done, push in a skewer and check that it comes out clean.
  • Prick the cakes a few times with a skewer. Mix together the 2 tbsp reserved cherry juice and the kirsch (or more juice) and drizzle over the cakes. Cool the cakes.
  • Mix together the remaining drained cherries and jam. Tip 200ml of the cream into a small pan and heat until just below simmering point. Chop the remaining chocolate and put in a heatproof bowl, pour over the hot cream and stir until melted. Set aside until spreadable.
  • When the cakes are cool whisk the remaining cream and the icing sugar together until softly whipped. Spread over two of the cakes, then spoon over the jammy cherries. Stack the cakes together. Spread the chocolate cream over the third cake and sit on top of the other cakes. Pile the fresh cherries in and around the cake and serve

BLACK FOREST CAKE

Categories     dessert

Time 3h40m

Yield 2 (6-inch) round 3 layer cakes, 8 servings

Number Of Ingredients 23

5 eggs
1/2 cup plus 1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup plus 1 tablespoon bread flour
1/4 cup cocoa powder
1/2 cup plus 1 tablespoon pastry flour
1/4 cup plus 1 tablespoon oil
2 cups sugar
1 1/3 cups water
4 teaspoons cherry brandy
1/2 teaspoon cream of tartar
1 quart fresh cherries, pitted and halved
1 cup cherry brandy
1 1/3 cups milk, divided
1/3 cup sugar, divided
4 tablespoons cornstarch
2 eggs
2 tablespoons butter
1/2 teaspoon vanilla extract
1 pint heavy cream
3 tablespoons sugar
Chocolate shavings for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • For the cake: Heat a skillet full of water to a bare simmer. In the large bowl of an electric mixer, whip eggs on high speed for 5 minutes. To the eggs add sugar, salt and vanilla and combine. Set the bowl into the hot water bath to heat the mixture to between 110 and 120 degrees F. Stabilize the mixture by whipping on medium speed for 15 more minutes.
  • Meanwhile sift together the bread flour, the cocoa powder, and the pastry flour. Prepare the baking pans by greasing 2 (6-inch) diameter round pans and dusting with flour.
  • Gradually fold the sifted dry ingredients into the egg mixture by hand. Slowly pour in the oil while folding. Fill the pans approximately 2/3 full with the batter and place immediately in the oven. Bake in preheated oven for 25 to 30 minutes. (The surface of the cake should spring back when touched.) Cool 10 minutes in the pans, then remove to wire racks to let cool completely.
  • For the syrup: Combine the sugar, water, cherry brandy, and cream of tartar in a small saucepan. Cook over low heat stirring only until the sugar is dissolved and the syrup is hot. Cover and simmer gently for 2 minutes. Remove from heat, uncover and let cool.
  • For the cherry filling: Place cherries in a small saucepot and add brandy, stirring to coat cherries. Heat over medium low heat until most of liquid evaporates, then remove from heat and let cool.
  • For the pastry cream: Reserve 2 tablespoons of the milk then combine the rest of the milk with half the sugar and bring to a gentle boil. In a small bowl whisk the 2 tablespoons of reserved milk into the cornstarch to create a slurry. Add the other half of the sugar and then the eggs to the slurry and whisk to completely combine. Temper the egg mixture with the boiling milk. (This is done by spooning some of the milk into the egg mixture to equalize temperatures without cooking the eggs.) Return all liquids to the pot and bring to a boil, whisking constantly. Cook for 1 minute. Remove the milk mixture from the heat and whisk in butter and vanilla extract. Pour into a large pan, put plastic wrap directly on the surface, and allow to cool.
  • Slice each of the cake rounds (horizontally) into 3 (1/2-inch) thick layers using a long thin knife or taut wire. Place the layers onto baking sheets (which have a rim) and pour cherry syrup over the layers, allowing them to soak.
  • For the cream topping: Whip the heavy cream and sugar with an electric mixer to a medium peak.
  • Assemble the cakes by spreading a layer of the pastry cream on the bottom layer, then placing brandied cherries on top. Place a second layer on top of cherries and repeat. Top with final layer of cake. (Each cake will have 3 layers.) Frost top layer of cake with whipped cream topping and garnish with cherries and chocolate shavings.

BLACK FOREST CAKE FOR TWO

Time 1h35m

Yield 2 servings

Number Of Ingredients 17

Nonstick baking spray, for the parchment paper
1 cup all-purpose flour
1 cup granulated sugar
Pinch kosher salt
1/4 cup buttermilk
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1 large egg, beaten
1 stick salted butter
2 heaping tablespoons cocoa powder
2 cups frozen cherries
1/4 cup granulated sugar
2 tablespoons cherry liquor
1 cup heavy cream, cold
1/4 cup powdered sugar
2 teaspoons vanilla extract
1 semisweet or milk chocolate bar, to grate over the cake

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a quarter-sheet pan with parchment paper overlapping the longer sides, then spray with baking spray, ensuring the exposed sides of the pan are well-greased.
  • Combine the flour, granulated sugar and salt in a large bowl. Stir together and set aside.
  • Mix the buttermilk, baking soda, vanilla and egg in a small pitcher. Set aside.
  • Melt the butter in a small saucepan, then add the cocoa. Whisk together to combine. Add 1/2 cup water and bring to a boil, then cook for 10 to 15 seconds. Add the chocolate mixture to the flour and stir together for a moment to cool slightly. Add the egg mixture and stir until smooth. Add the batter to the prepared pan and bake until cooked through in the center, about 15 minutes. Set aside and allow to cool completely, about 30 minutes.
  • For the cherry sauce: Combine the cherries, granulated sugar and liquor in a small saucepan over medium-high heat. Bring to boil and cook, stirring occasionally, until the liquid has reduced and thickened, 6 to 7 minutes,. Remove from the heat and set aside to cool to room temperature.
  • For the whipped cream: Whip together the heavy cream, powdered sugar and vanilla with a stand mixer until stiff peaks form, 3 to 4 minutes. Cover and transfer to the refrigerator until ready to build the cake.
  • Once the cake has cooled completely, flip it onto a cutting board and remove the parchment paper. Cut the cake in half, then cut each piece in half again, giving you 4 equal pieces.
  • Carefully put the first piece of the cake on a cake stand or platter. Spread a quarter of the whipped cream on top, then scatter a third of the cherry mixture over the top. Repeat two more times, trying to build the cake layers as straight and even as possible. Place the final piece of cake on the top and spread the remaining whipped cream over the top. Grate the chocolate bar over the top of the whipped cream for the finishing touch.
  • Chill the cake for 20 minutes to help firm up the whipped cream before slicing and serving.

BLACK FOREST CAKE

Black Forest Cake image

Some historians trace this famous cherry-chocolate cake (called Schwarzwälder Kirschtorte in German) back to the 16th century, but it was most likely named and popularized by German baker Josef Keller in 1915 Germans take their world-famous dessert seriously: The cake was granted protected status by the European Commission in 2013, meaning that for a dessert to be sold as a Black Forest Cake, it must contain Black Forest kirsch, a brandy made from local cherries.

Provided by Food Network Kitchen

Time 3h10m

Yield 8 to 10 servings

Number Of Ingredients 17

Unsalted butter, for the pans
1/3 cup unsweetened Dutch-process cocoa powder, plus more for the pans
8 large eggs, at room temperature
3/4 cup cake flour
1/4 teaspoon salt
1/2 cup almond flour
11/3 cups granulated sugar
2 teaspoons pure vanilla extract
1/2 cup confectioners' sugar
1 tablespoon cornstarch
3 cups cold heavy cream
1 teaspoon pure vanilla extract
2 cups cherries in light syrup, such as Morello, drained and chopped, plus 2 tablespoons syrup from one 24-ounce jar)
1 to 2 tablespoons kirsch (cherry brandy; optional)
2 tablespoons granulated sugar
1/2 teaspoon pure almond extract
Shaved chocolate, for topping

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter the bottoms and sides of two 9-inch round cake pans; line the bottoms with parchment paper. Butter the parchment and dust the bottoms and sides of the pans with cocoa powder, tapping out the excess.
  • Put the eggs (in their shells) in a medium bowl and cover with hot tap water; let stand 5 minutes (warming the eggs will help them whip better). Sift the cocoa powder, cake flour and salt into a medium bowl, then whisk in the almond flour; set aside.
  • Remove the eggs from the water and crack into a large bowl. Add the granulated sugar and beat with a mixer on low speed to combine. Increase the speed to medium high and beat until pale, fluffy and thick, about 10 minutes. The mixture should fall off the beaters in a ribbon when lifted.
  • Sprinkle one-third of the flour mixture over the egg mixture and gently fold with a whisk until combined. Repeat with the remaining flour mixture in two batches, adding the vanilla with the final addition. Divide the batter evenly between the prepared pans. Bake until the cakes pull away from the sides of the pans and a toothpick inserted into the centers comes out clean, about 25 minutes. Immediately run a small offset spatula around the edges to loosen. Let the cakes cool 5 minutes in the pans, then remove to a rack, parchment-side down, and let cool completely.
  • Meanwhile, make the whipped cream: Whisk the confectioners' sugar and cornstarch in a small saucepan (the cornstarch will help stabilize the whipped cream). Slowly add 3/4 cup heavy cream, whisking, until a paste forms. Bring to a boil over high heat, stirring, until thick and bubbling, about 1 minute. Transfer to a bowl, place a piece of plastic wrap directly onto the surface and refrigerate until completely cooled, about 30 minutes.
  • Meanwhile, make the filling: Bring the cherries, cherry syrup, kirsch and granulated sugar to a simmer in a small saucepan, stirring, until the sugar dissolves, 1 to 2 minutes. Stir in the almond extract and transfer to a bowl. Refrigerate 30 minutes.
  • Finish the whipped cream: Beat the remaining 2 1/4 cups cold heavy cream and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 1 minute. With the mixer running, add the cooked cream mixture and beat until stiff peaks form, 1 to 2 minutes.
  • Drain the cherries and reserve the syrup. Discard the parchment from the cakes. Trim a thin layer off the top of each cake with a long serrated knife. Put one cake cut-side up on a cake stand or serving plate and brush with half of the reserved syrup. Spread about 1 cup whipped cream over the top in a thin layer, then top with all but 1/4 cup cherries. Spread 1 cup whipped cream over the cherries in a thin layer. Top with the remaining cake and brush with the remaining syrup. Spread 1 1/2 cups whipped cream over the top and sides of the cake in a thin layer (some crumbs are OK). Refrigerate 30 minutes.
  • Spread the remaining whipped cream over the top and sides of the cake. Refrigerate 30 minutes. Sprinkle the shaved chocolate around the top of the cake and press into the sides; top with the reserved cherries. Refrigerate overnight; the cake will soak up the syrup.

AUTHENTIC BLACK FOREST CAKE (SCHWARZWALD KIRSCH KUCHEN)

Authentic Black Forest Cake (Schwarzwald Kirsch Kuchen) image

This cake isn't meant to be very sweet but is rather a dessert for adults with deep rich flavours and enough alcohol to make your head spin! If you cannot get fresh cherries you can use canned Bing cherries but please do not use cherry pie filling because it will take away from the authentic taste of the cake. If can't find Kirsch do not use another type of alcohol because it will not turn out the same - instead use cherry juice. Because of the high alcohol content only serve this to adults.

1 teaspoon salt
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups buttermilk
1/2 cup kirsch
1/2 cup unsalted butter
3 cups icing sugar
1 pinch salt
1/4 cup espresso
1 1/2 lbs fresh black cherries
2 cups heavy whipping cream
1/2 teaspoon vanilla
1/8 cup kirsch
2 tablespoons dry milk
2 tablespoons icing sugar
1/2 cup shaved dark chocolate

Steps:

  • Pit most of the cherries leaving about 10 for decoration on top of the cake. Take the pitted cherries and soak them in a jar of the 1/2 cup Kirsch overnight.
  • Preheat the oven to 350°F Line the bottom of three 9 inch round cake pans with parchment.
  • Sift the dry cake ingredients together.
  • Cream the shortening and sugar. Add the eggs and vanilla and mix well.
  • Add the dry ingredients alternately with the buttermilk and mix well.
  • Pour evenly into the cake pans. Bake for 20 minutes or until a tooth pick comes out clean.

  • In a bowl beat the butter until light and creamy. Add the icing sugar, salt and espresso and mix well. If the icing is too thick add Kirsch or cherry juice.
  • Cut the cherries into halves.
  • Place the base layer on top of your cake tray, spread 1/2 of the filling over one top, cover with cherries and top with another layer of cake.
  • Spread the second half of the filling over that layer of cake, cover with cherries and top with the third layer of cake. Cover this and let sit in the fridge for a day or two to allow the kirsch to soak into the cake and become moist.
  • The day you're going to serve this cake prepare the icing. Whip the cream until it forms stiff peaks.
  • Gently fold in the dry milk and icing sugar.
  • Add the vanilla and pour in the Kirsch until it's a good consistency.
  • If you like more icing double this recipe. Spread the icing over all of the cake.
  • Place the fresh, intact cherries on top for decoration and cover the top with the chocolate shavings. Serve and enjoy!

1 pinch salt
50 g cocoa
150 g flour
½ tsp baking powder
50 g corn starch
60 g melted butter
100 ml Kirschwasser
20 ml water
20 g sugar
or 100 ml cherry juice instead of the ingredients above
1 jar cherries ((680 g // 24 oz))
45 g corn starch
1 pinch cinnamon (optional)
½ lemon - the jucice of it
60 g sugar
700 ml whipping cream
25 ml Kirschwasser
65 g sugar
4½ tsp gelatine powder (or 9 gelatine sheets)
1 bar dark chocolate, cooled
400 ml whipping cream
1 pouch stabilizer (i.e. Whip it)
12 cherries (fresh or cocktail cherries)

Steps:

  • Beat the eggs with the salt and sugar for about 20 minutes.
  • In a separate bowl, mix thedry ingredients: flour, cocoa, corn starch and baking powder. Carefully fold itinto the egg mix. Also carefully add the melted butter and fold it in.
  • Grease the baking pan (26 cm /10 ¼ inch diameter) and fill the dough in. Bake at 190°C / 375°F for about 25 to 30 minutes.
  • Let the cake cool completely, then put it into the fridge for an hour to make it firm for cutting.
  • Put the Cherries in a sieve and collect the juice underneath.
  • Put all ingredients (starch, cinnamon, sugar and lemon juice)into a saucepan and bring to a boil. Let boil until the liquid thickens.
  • Add the cherries and let cool.
  • Prepare the gelatine acording to package instructions.
  • Beat the cream and add the Kirschwasser and sugar until stiff. Mix some of the cream with the gelatine, then mix this into the cream.
  • Also mix in the 25 ml Kirschwasser.
  • Cut the cake twice to create 3 layers.
  • Put the first layer upside down on a cake plate and brush ⅓ of the "Cake Potion" onto it.
  • Use a piping bag with whipping cream to make a rime around the edge of the cake.
  • Use half of the cherry filling to place it inside the cream rim onto the cake.
  • If you have one: Place a cake ring around the cake.
  • Cover the entire layer with cream.
  • Take the next layer of cake and place it on top of the cream.
  • Repeat the previous steps: Brush ⅓ of the cake potion on it, make a cream rim, place remaining cherry filling inside the circle and cover everything with cream.
  • Brush the third cake layer with the cake potion, then put it with the cut side down and the bottom side up, so it is now the top of your cake.
  • Cover the cake with a large lid and place into the fridge for at least 4 hours or better over night.
  • Whip the cream with the stabilizer. If you don't have stabilizer, use a tablespoon of corn starch.
  • With a sharp knife, shave some chocolate from the bar. Then grate the remaining chocolate.
  • Take the cake from the fridge and cover it entirely with cream. Leave some cream for the top decoration though.
  • Use the grated chocolate to cover the sides of the cake. If you freeze the grated chocolate for a little bit, you can use your hands to put the chocolate onto the cake - worked best for me.
  • Divide the top of the cake into 12 slices by just tracing the sizes but not cutting the cake.
  • Use a piping bag and a tip to create 12 swirls on top of the cake - one swirl on each slice.
  • Place the shaved chocolate on the center of the top, then put a cherry onto each cream swirl.
  • Done!

BLACK FOREST CHERRY CAKE ROLL

Black Forest Cherry Cake Roll image

This chocolate-and-cherry cake is great for the holidays -- or whenever you need a special dessert. Since it's from scratch homemade it's a bit labor intensive but you get the satisfaction of being able to tell the folks at the table "Why yes, I made it myself". You can bake the cake the day before and that is a big help.

Time 1h2m

Yield 15 serving(s)

Number Of Ingredients 22

1/4 cup sugar
1 tablespoon cornstarch
2 tablespoons water
1 cup red frozen pitted tart cherries
1 1/2 teaspoons cherry flavored liqueur or 1 1/2 teaspoons cherry brandy
1/3 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon baking soda
4 egg yolks
1/2 teaspoon vanilla
1/3 cup granulated sugar
4 egg whites
1/2 cup granulated sugar
sifted powdered sugar
1/3 cup sugar
2 tablespoons water
2 slightly beaten egg yolks
1 1/2 teaspoons cherry flavored liqueur (optional) or 1 1/2 teaspoons cherry brandy (optional)
1/2 teaspoon vanilla
1/2 cup unsalted butter, softened
1/4 cup semisweet chocolate piece, melted and cooled
chocolate curls (optional)

Steps:

  • For cherry filling, stir together the 1/4 cup sugar and the cornstarch in a small saucepan. Stir in the 2 tablespoons water. Add cherries. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Stir in 1-1/2 teaspoons cherry liqueur or brandy. Cover surface with plastic wrap; cool.
  • For cake, grease and lightly flour a 15x10x1-inch baking pan; set aside. Combine flour, cocoa powder, and baking soda in a small mixing bowl; set aside. Beat egg yolks and 1/2 teaspoon vanilla in a medium bowl with an electric mixer on high speed for 5 minutes or until thick and lemon colored. Gradually add the 1/3 cup granulated sugar, beating on high speed until sugar is almost dissolved.
  • Wash beaters thoroughly. Beat egg whites in a large mixing bowl on medium speed until soft peaks form (tips curl). Gradually add the 1/2 cup granulated sugar, beating until stiff peaks form (tips stand straight). Fold egg yolk mixture into egg white mixture. Sprinkle flour mixture over egg mixture; fold in gently just until combined. Spread batter evenly in the prepared pan.
  • Bake in a 375°F oven for 12 to 15 minutes or until top springs back when lightly touched. Immediately loosen edges of cake from pan; turn cake out onto a towel sprinkled with powdered sugar. Roll towel and cake into a spiral, starting from a long edge. Cool on a wire rack.
  • For chocolate buttercream: Stir together 1/3 cup sugar and 2 tablespoons water in a heavy small saucepan. Bring to boiling. Remove from heat. Gradually stir about half of the sugar mixture into 2 slightly beaten egg yolks. Return all of the egg yolk mixture to the saucepan. Bring to a gentle boil; reduce heat (mixture may look curdled but will become smooth). Cook and stir for 2 minutes more. Remove from heat.
  • Add 1-1/2 teaspoons cherry liqueur or cherry brandy, if desired. Stir in 1/2 teaspoon vanilla. Cool to room temperature. Beat unsalted butter in a large mixing bowl with an electric mixer on high speed until fluffy. Add cooled egg yolk mixture and melted chocolate, beating until combined. If necessary, chill until mixture is of spreading consistency.
  • To assemble, unroll cake. Spread cake with chocolate buttercream to within 1/2 inch of edges. Spread cherry filling lengthwise over buttercream layer in a 1-1/2-inch-wide band, starting 1/2 inch from a long edge. Roll up cake without the towel, starting with long edge closest to filling. Wrap in plastic wrap; refrigerate for at least 1 hour or up to 2 hours.
  • To serve, cut cake roll into 1-inch-thick slices. Garnish slices with chocolate curls, if desired. Makes 15 servings.
  • Make-ahead tip: Bake, roll, and cool cake as directed. Place cake, with towel, in large airtight container or wrap well with foil. Chill up to 24 hours. Let stand about 30 minutes at room temperature before unrolling and filling.

Black Forest Cake image

Provided by Food Network

Yield 8 to 10 servings

Number Of Ingredients 21

I cup cake flour
1/2 teaspoon salt
2 pounds canned sour cherries, drained, reserving the juice
l/3 cup sugar
5 teaspoons cornstarch
2 tablespoons cherry liqueur
1/2 cup sugar
1/2 water
l/4 cup cherry liqueur
l envelope of unflavored gelatin
3 tablespoons cherry flavored liqueur
3 cups well-chilled heavy cream
1/3 cup sifted confectioners' sugar
l teaspoon vanilla
l 1/2 cups chocolate shavings and curls glaceed cherries for garnish
6 ounces bittersweet chocolate, cut into bits
6 tablespoons unsalted butter
1 teaspoon vanilla extract
l/3 cup water
6 large eggs at room temperature
1 cup sugar

Steps:

  • Make the cake: Preheat oven to 350 degrees F. Butter three 7-inch cake pans, line them with wax paper and butter and flour the paper.
  • In the top of a double boiler set over simmering water melt the chocolate with the butter, vanilla and water, stirring until smooth. Remove the pan from heat.
  • Into a bowl sift together the flour and salt. In a bowl with an electric mixer beat the eggs with the sugar for 5 to 10 minutes, or until batter ribbons when beaters are lifted. Fold flour mixture into egg mixture until just combined and fold in chocolate mixture gently but thoroughly.
  • Pour batter into pans, smoothing the tops, and bake for 10 -15 minutes, or until cake tester inserted in center comes out clean. Let cool in pans 5 minutes. Run knife around edge of pans and invert onto racks to cool completely.
  • Make the filling: In a saucepan combine reserved cherry juice, sugar, and cornstarch. Bring mixture to a boil over moderate heat, stirring, and simmer, stirring, for 1 to 2 minutes, or until thickened. Stir in cherries and kirsch, transfer to a bowl and let cool. Filling may be made 1 day in advance and kept covered and chilled.
  • Make the syrup: In a saucepan combine the sugar and water, bring to a simmer, stirring, and simmer until sugar is dissolved. Remove pan from heat and stir in liqueur. Let cool.
  • Make the whipped cream topping: In small saucepan combine gelatin and liqueur and let soften 5 minutes. Gently heat mixture over low heat, stirring, until liquid is clear. Remove from heat. In chilled bowl with chilled beaters beat cream until it holds soft peaks, add sugar and vanilla and beat until it holds stiff peaks. Add gelatin mixture in stream, beating, and beat until it holds stiff peaks.
  • Assemble cake: Invert one layer of cake onto a cardboard round, brush with some of syrup and spread half cherry filling over it. Spread 1 1/2 cups of whipped cream over cherries, sprinkle with 1/4 cup chocolate shavings and invert second layer of genoise onto cake. Brush with syrup, spread with remaining cherry filling and top with 1 1/2 cups whipped cream, spreading it into an even layer. Sprinkle with 1/4 cup of chocolate shavings and invert third genoise layer onto cake. Brush top with syrup and spread remaining whipped cream over top and sides of cake reserving about 2/3 cup for gamish. Coat side of cake with some of remaining chocolate shavings. Transfer remaining whipped cream to a pastry bag fitted with a large star tip, pipe rosettes decoratively around top edge of cake and top each rosette with glaceed cherry. Sprinkle top of cake with remaining chocolate shavings and let cake stand, covered and chilled, for at least 3 hours and up to 8 hours.

BLACK FOREST CAKE RECIPE

Black Forest Cake Recipe image

Provided by Shiran

Time 2h5m

Number Of Ingredients 18

1¾ cups (250 g/8.8 oz.) all-purpose flour, sifted
⅔ cup (65 g/2.3 oz.) natural unsweetened cocoa powder, sifted
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups (400 g/14 oz.) granulated sugar
2 large eggs
½ cup (120 ml) neutral oil, such as canola or vegetable oil
2 teaspoons pure vanilla extract
1 cup (240 ml) buttermilk
1 cup (240 ml) hot water
1 cup drained, canned cherries
¼ cup Kirsch, or another cherry liqueur
cherry juice from canned cherries (drain cherries and reserve the juice)
3 cups heavy cream, cold
½ cup powdered sugar, sifted
200 g/7 oz. chocolate shavings
Fresh whole cherries

Steps:

  • To make the chocolate cake: Preheat oven to 350°F/180°C. Generously butter two 8-inch cake pans that are at least 2-inches high, and dust with cocoa powder, tapping the ramekins slightly to remove any excess.
  • In a large bowl, place flour, cocoa powder, baking powder, baking soda, salt, and sugar. Mix until combined. Set aside.
  • In a medium bowl, mix together eggs, oil, vanilla, buttermilk, and water (pour the water slowly so it won't cook the eggs). Whisk until smooth. Add egg mixture into flour mixture and mix until smooth. Don't overbeat - batter will be lumpy at first, but mix gently and eventually stir with a whisk just until smooth. The batter will be thin and liquid. That's ok.
  • Scrape batter into prepared pans. Bake cakes for 30-35 minutes (depending on your oven - this might take longer), or until a skewer inserted into the center comes out clean or with just a few moist crumbs. Allow to cool for 10 minutes in the pan before unmolding, then let cakes cool completely on a wire rack. I recommend wrapping the cakes in plastic wrap and refrigerate or freeze them for several hours before cutting them. Cut each cake layer in half horizontally.
  • To make the syrup: place drained cherries in a medium bowl, and add to the bowl ¼ cup Kirsch and ½ cup cherry juice from can. Leave to soak at room temperature for 30 minutes or more, then drain cherries in a sieve over a bowl, keeping both the cherries and syrup. Add more cherry juice to the syrup to get 3/4 cup syrup (you won't need the rest of the juice, discard it or save for another use). This will be the soaking syrup for the cake layers.
  • To make the whipped cream: Using a stand mixer or hand mixer with a whisk attachment, beat heavy cream and powdered sugar until stiff peaks form. Read more about making perfect whipped cream here.
  • Assembly: Place one cake layer on a cake stand or plate and brush with 1/3 of the cherry syrup. Cover top with a thick layer of whipped cream frosting (about 1 cup) and top with 1/3 of the cherries. Repeat twice more with remaining layers and top with the last cake layer (there's no need to soak the top layer with syrup). Frost the top and sides of the cake with whipped cream. If you want, reserve some of the whipped cream, about 1½ cups, for decorating the top. Use a pastry bag with a large flower tip, and pipe rounds around the top. Top with whole cherries. Cover the sides and top with chocolate shavings, if desired. Store cake in the fridge, covered, for up to 4 days.

Steps:

  • Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
  • Line a 9 inch (23 cm) cake pan with greaseproof or other non-stick paper.
  • With an electric mixer, beat the softened butter with sugar until white and fluffy.
  • Add one egg at a time, mix well between each egg.
  • Add sifted flour, cocoa powder, baking powder, baking soda, vanilla extract and buttermilk, and mix until the batter is smooth.
  • Transfer to a cake pan and bake at 350 degrees just until set in the middle, approximately 45-60 minutes. A wooden pick inserted in center should come out with just a few moist crumbs on it. Do not over-bake!
  • When cake is cool, use a long serrated knife to cut the cake horizontally into 3 equal layers. It is easier to cut if kept in a refrigerator for a few hours before cutting.
  • Filling
  • Drain cherry pie filling in a colander to remove most of the thickened juices.
  • Beat the whipping cream with confectioners' sugar until it thickens.
  • Using a vegetable peeler, shave chocolate; refrigerate until the cake is assembled.

1 cup granulated sugar (divided)
1 tsp vanilla extract
1 cup all-purpose flour
2 tsp baking powder

1/4 cup unsweetened cocoa powder ((see Note 3))
1 1/2 cups cherry juice (divided (see Note 1))
2 cups cherries (pitted (see Note 1))
5 Tbsp cornstarch
2 Tbsp sugar
1/3 cup kirsch (divided (see Note 2))
4 cups heavy cream
1/2 cup powdered sugar
16 fresh cherries
4 oz bittersweet Baking chocolate (coarsely grated)

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C) and line the bottom of an 8-inch springform pan with parchment paper.
  • In the bowl of a stand mixer fitted with the whisk attachment, beat egg whites with 1/2 cup sugar on high speed until stiff peaks form, about 8 minutes. Transfer to a large bowl and set aside.
  • In the bowl of the stand mixer (no need to clean the bowl) fitted with the paddle attachment, combine egg yolks, remaining 1/2 cup sugar, and vanilla extract. Beat at medium speed until thick and creamy. The mixture will change color from yellow to a paler color. Add egg yolk mixture to the egg white mixture and carefully fold it in with a spatula, DON'T stir the mixture.
  • Combine all-purpose flour, baking powder, cornstarch, and cocoa powder. Sieve over the egg mixture and fold in carefully until combined.
  • Transfer to the springform pan and smooth top with a silicone spatula. Bake for 25 minutes or until a skewer interested in the center comes out clean with only a few crumbs attached.
  • Remove the ring of the springform pan and carefully turn cake onto a parchment paper-lined cooling rack, peel of parchment paper from the bottom and let cool completely.
  • When the cake is cooled completely use a serrated bread knife to cut the cake into three even layers.
  • To make the cherry filling, remove 4 Tbsp of cherry juice from 1 cup of cherry juice and combine it in a small bowl with the cornstarch and sugar. Bring the remaining cherry juice in a small saucepan to a simmer, remove from the heat and whisk in the cornstarch mixture. Bring back to a simmer while whisking constantly until it starts to thicken. Whisk in the cherries and remove from heat. Add about half of the kirsch to the cherries or leave it out. Let cool for 5-10 minutes.
  • To make the whipped cream, beat 4 cups of heavy cream (depending on your mixer you might have to whip the cream in two batchein the bowl of a stand mixer fitted with the whisk attachment at high speed until soft peaks form. Then add 1/2 cup powdered sugar and beat until stiff peaks form, about 2-3 minutes longer. The whipped cream should be very stiff and spreadable but be careful not to over-whip it. Refrigerate whipped cream until ready to assemble.
  • To assemble the cake, put the cake layer that was the top before on a platter. Put the springform ring (or use a cake ring around it to make it easier to assemble the cake. Drizzle some kirsch or cherry juice over the cake, then top with half of the cherry mixture leaving a 1-inch border. Top with about 1/4 of the whipped cream, smoothing it out with a spatula.
  • Top with the middle cake layer and repeat drizzling with liquid, topping with cherries and cream. Put third cake layer on top (smooth side up). Set aside about ¾ cup of cream for decoration. Spread 1/3 of the remaining whipped cream on top, then remove springform ring and spread remaining cream with a spatula around the sides of the cake until completely covered in whipped cream.
  • Decorate sides of the cake with grated chocolate. Pipe 16 swirls of whipped cream on top and garnish middle of the cake with remaining coarse chocolate. Put a cherry on each cream swirl and refrigerate cake until serving.

BLACK FOREST CAKE

Black Forest Cake image

A German cherry cake based on a recipe from McCall's Cooking School, page #41 under Cakes, Cookies. The intro says, "One taste of this fabulous dessert and you'll understand why it is the most famous dessert of the Black Forest region of Germany. Three layers of cake are drizzled with a cherry-brandy syrup and then filled with brandied cherries and whipped cream. The cake is frosted with more whipped cream and garnished with shaved chocolate and chocolate curls. It is so spectacular that you should skip dinner and just invite guests over for coffee and dessert!" I couldn't agree more. I first made this for my step-son's high school German class' Oktoberfest potluck. He recently flew back into town for the weekend and I made it for his birthday. It is a bit of work but so fun to put together and so delicious. It is a light and airy sponge cake with just a hint of cherry brandy (kirsch). My step-son thinks this would be great with the glazed cherries doubled and placed on top of both of the bottom two layers instead of just the one. Cook time doesn't include standing time for the glazed cherries.

  • Preheat oven to 320 °F (160°C). Line the bottom and the sides of a 9" (23cm) springform pan with parchment paper and set aside. The easiest way to line a springform pan with parchment paper is to cut out a circle for the bottom and 2-3 inch strips for the sides.
  • In a large mixing bowl, using a stand or handheld mixer fitted with a whisk or paddle attachment, mix eggs, sugar, butter, and vanilla* until creamy and fully combined about 2-3 minutes.
  • Sift in flour, cocoa, baking powder, and salt. Stir to combine, another 1-2 minutes. Transfer to the prepared baking pan and bake for about 33-38 minutes or until a toothpick in the center comes out clean. Do not overbake. I baked mine exactly 35 minutes. Let cool to room temperature.

  • Prepare the cakes according to directions in 2 8 or 9 inch rounds. Allow the cake to cool completely and remove from the pans.
  • While the cakes cool, strain the heavy syrup out of the cherries into a small bowl. Use a pastry brush to brush the syrup all over the cake*, making sure you can get into any nooks and crannies. Reserve the left over syrup to drizzle over the cherries and whipped cream.
  • While the syrup soaks into the cakes, make the whipped cream frosting. Use a hand mixer to beat the whipped cream in a bowl until soft peaks form. Add the vanilla extract and a pinch of salt. Then dust in the powdered sugar, continuing to beat the cream until medium stiff peaks form no streaks of powdered sugar remain.
  • Place one layer of the cake on a cake stand or whatever plate you are planning on serving the cake on. Spread half of the whipped cream onto the cake and top with the all drained cherries (you’ll use fresh ones for the top so no need to save any). Drizzle with some of the remaining syrup if desired, making sure you leave some of it for the top. It’s okay if this is messy! Repeat with the other cake layer and top with the fresh cherries. Drizzle with the remainder of the syrup and top with chocolate shavings if desired.

  • Drain the cherries over a bowl to catch the juice. Combine 2 tablespoons of the cherry juice with the Kirsch or cherry liquor and brush over each of the cake layers while they are still warm, letting the liquid soak into the cakes. Let the cakes cool completely, then wrap tightly with plastic wrap and freeze for at least 1 hour. (*See note)
  • Put the chopped bittersweet chocolate into a bowl. Heat 8 ounces of the heavy cream in a saucepan or in the microwave until it is just beginning to simmer. Pour the cream over the chocolate, let it sit for 5 minutes undisturbed, then stir until all the chocolate is melted and it's perfectly smooth. Place, uncovered, in the refrigerator until thick enough to spread, stirring from time to time.
  • Meanwhile, beat the remaining 12 ounces of heavy cream with the powdered sugar and vanilla until stiff peaks form. Make sure to beat the cream until it's quite thick - beating it almost to the point where it begins to transform into butter.
  • Combine the drained cherries with the cherry preserves, stirring gently so that you don't smash the cherries.

  • Combine the eggs, flour, milk, granulated sugar, cocoa powder and vegetable oil in a blender and mix until homogeneous.
  • Warm a crepe pan and when hot pour in a ladleful of crepe batter. Cook on medium-high heat until the top looks set and the edges of the crepe naturally peel off the pan (about 2 minutes). Gently slide a spatula under the crepe and flip it over. Cook the other side for just about a half minute. Repeat until all of the batter has been used.
  • Let crepes cool completely before moving on to the next step. If making ahead, stack them on a plate, cover with cling film and keep refrigerated.
  • Optionally you can trim the edges of the crepes. Find a plate the desired size, place it on top of each crepe and run a knife around the edges. This is not an obigatory step, but helps achieve more regular edges to your cake.

  • Preheat oven to 300°F. Line a 13- x 9-inch baking pan with heavy-duty aluminum foil, allowing 2 inches of overhang on all sides. Lightly grease foil with cooking spray. Combine chocolate and butter in top of a double boiler over simmering water, and cook over medium, stirring occasionally, until melted and smooth, about 6 minutes. Cool chocolate mixture 5 minutes. Place egg white in bowl of a heavy-duty stand mixer fitted with the whisk attachment, and beat on medium speed until frothy, about 1 minute. Increase speed to medium-high, and gradually add 2 tablespoons sugar, beating until stiff peaks form, 2 to 3 minutes.
  • Line a 13- x 9-inch baking pan with parchment paper, allowing 2 inches of overhang on 2 long sides; set aside. Combine dark chocolate, milk chocolate, and butter in top of a double boiler over simmering water, and cook over medium, stirring occasionally, until melted and smooth, about 3 minutes. Remove from heat, and stir in cornflakes and salt until well combined. Spread mixture in a very thin layer (about 1/8 inch thick) to completely cover bottom of prepared pan. Freeze until set, at least 1 hour or up to 2 days. Using parchment paper as handles, lift chocolate crunch from pan in one piece. Carefully remove parchment, and place chocolate crunch sheet on top of cooled cake layer in baking pan. Freeze, uncovered, while preparing mousse.
  • Combine milk chocolate and dark chocolate in top of a double boiler over simmering water, and cook over medium, stirring occasionally, until melted and smooth, about 10 minutes. Let chocolate stand until slightly cool, about 15 minutes. Meanwhile, beat heavy cream and salt in bowl of a heavy-duty stand mixer fitted with the whisk attachment on medium speed until fluffy but still pourable (not quite soft peaks), about 3 minutes. Fold half of the whipped cream into slightly cooled chocolate until combined. Gently fold in remaining whipped cream. Spread mousse on top of frozen chocolate crunch layer in baking pan. Using an offset spatula, smooth mousse to sides of pan in an even layer to completely cover surface. If needed, dip offset spatula in hot water, and dry with a towel to make top layer of mousse as level as possible. Chill, uncovered, until set, about 2 hours.
  • Combine cherries and juice, pomegranate juice, and chile in a blender. Process until smooth, about 45 seconds. Pour mixture through a fine wire-mesh strainer into a bowl; discard solids. Sprinkle gelatin over 3 tablespoons cold water in a small bowl; let stand 5 minutes. Meanwhile, whisk together sugar and pectin in a small saucepan. Add cherry mixture and corn syrup to sugar mixture. Bring to a boil over medium-high, whisking often. Boil, whisking constantly, 2 minutes. Remove from heat, and whisk in bloomed gelatin until dissolved. Transfer mixture to a medium bowl, and let cool completely, about 2 hours. Pour glaze over chilled mousse layer. Tilt pan to evenly cover surface. Chill, uncovered, until glaze is set, about 1 hour. Prepared cake can be chilled up to 2 days.
