This recipe is from the January 2009 issue of Vegetarian Times courtesy of Mari Kermit-Canfield. Top each burrito with a little bit of mango salsa, if you have some on hand.

1 tablespoon olive oil
1/2 red onion, diced
1 garlic clove, minced
2 ripe plantains, peeled and diced
1 (14 ounce) can black beans, rinsed and drained
1/4 cup cilantro, finely chopped
1 green onion, finely chopped
2 tablespoons ground cumin
1 tablespoon hot sauce, habenero or 1 tablespoon cayenne
1 1/2 teaspoons adobo seasoning, such as Goya
1 teaspoon ground coriander
1/2 teaspoon ground black pepper
8 corn tortillas
1 cup cheddar cheese, grated

Steps:

  • Heat oil in large saucepan over medium-high heat. Add red onion and garlic, and saute until browned. Stir in plantains, and cook 5 minutes.
  • Add black beans, cilantro, green onion, cumin, hot sauce, adobo seasoning, coriander and pepper; cook 5 more minutes.
  • Spoon filling into warmed corn tortillas; top with cheese and mango salsa, if desired; roll up; and serve.

1/2 pound dried black beans, soaked in water overnight and drained
1 bay leaf
2 teaspoons olive oil
1 medium onion, diced
4 cloves garlic, minced
1/2 teaspoon ground cumin
2 tablespoons chopped fresh oregano
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
1 tablespoon chopped fresh cilantro
Vegetable oil for frying
2 green plantains, peeled and cut on the diagonal into 1/8-inch slices
Salt to taste

Steps:

  • To make the beans, place them in a large saucepan with 2 cups of water and the bay leaf. Bring to a boil, reduce heat and simmer until tender, about 1 1/2 hours. Add only a little water, if needed, to keep the beans barely covered while they cook. Meanwhile, heat the olive oil in a medium-size nonstick skillet over medium heat. Add the onion and cook for 5 minutes. Add the garlic and cook for 1 minute. Stir in the cumin and oregano and cook a few minutes longer.
  • When the beans are cooked, stir in the onion mixture, 1 teaspoon of salt and the pepper and cook for 5 minutes more. Let cool. Place the beans in a food processor and pulse until pureed. Taste and adjust seasoning if needed. Scrape into a serving bowl and garnish with cilantro.
  • To make the chips, heat enough oil in a large skillet to make a depth of 1/8 inch. Working in batches, add the plantain slices to the skillet and cook until browned and crisp, about 2 minutes per side. Drain on paper towels and sprinkle with salt. Serve immediately with the bean dip.

2 cups black turtle beans, cooked and roughly ground
1/2 cup tomatoes, seeded and diced
1/4 cup cilantro, chopped
2 tablespoons cumin
2 tablespoons ancho chili powder
2 tablespoons garlic, minced
6 tablespoon vegetable oil
4 Moi fillets, pine bones removed, skin on (or substitute English sole)
1 firm plantain, peeled and sliced very thin
Additional peanut oil for deep-frying
Salt and pepper to taste
Cilantro sprigs for garnish

Steps:

  • In a medium size mixing bowl mix the beans, tomato, cilantro, cumin, ancho chili powder, garlic and salt and pepper. Mix thoroughly and form into 4 even sized cakes. In a medium size teflon saute pan heat a small amount of vegetable oil and brown off both sides and keep warm in the oven until the Moi is done.
  • In the same saute pan, heat a little more oil and saute the Moi, skin side down first. Deep fry the plantain slices, season with salt and set aside. Serve the Moi with the black bean cakes and garnish with fried plantains and cilantro.

What's a party without some chips and dip? I like offering my guests a Latino option in addition to tortilla chips and salsa; something they may not see at an average party. So here you are - a recipe for plantain chips and black bean dip! While plantains are often found in Caribbean cooking, they are also used in the food of my Mami's native country, Peru. In this recipe I baked the chips instead of frying to cut back on some fat.

4 Green Plantains
Olive oil spray or cooking spray
1 (19 oz) can Progresso™ Vegetable Classics hearty black bean soup
2 garlic cloves
2 tablespoons diced onion
1 tablespoon vegetable oil
1/2 cup grated queso blanco (White Mexican style cheese) plus 1 tablespoon for garnish

Steps:

  • Preheat the oven to 350°F.
  • Peel the plantains by cutting tips and scoring skin lengthwise in about four places.
  • Slice the plantains into thin rounds (tip: use a mandolin or slicer on the side of most graters). Grease cookie sheets using olive oil spray or other cooking spray. Lay plantain slices out on the baking sheets without overlapping. Spray plantains with the olive oil spray or cooking spray. Bake 10 to 15 minutes or until crispy.
  • While chips cook, heat tablespoon of vegetable oil over medium heat in a small frying pan. Add onion and garlic and sauté until fragrant. Remove from heat. In a food processor or blender, puree the black bean soup, onions and garlic.
  • Put the black bean mixture in a microwaveable bowl and mix in the grated Queso Blanco. Microwave for four minutes, or until hot throughout, stirring periodically. Garnish with one tablespoon grated cheese. Serve immediately.

Plantain and Black Bean Fritters image

1/4 cup diced onion
1/2 teaspoon minced garlic
1 cup dried black beans, picked over and soaked overnight
Pinch dried oregano, optional
3 black plantains
Bread Crumbs
3 red onions, thinly sliced
1 cup fresh lime juice

Steps:

  • Drain the bean liquid and rinse. Heat a small saucepan with enough oil to coat the bottom of the pan, over medium heat. Add the onions and garlic and cook until translucent, about 4 minutes. Add the beans, a dash of oregano (if using) and water to cover 2 inches above the beans. Bring to boil over high heat, reduce the heat to low, and cook partly covered, until tender. Keep water in reserve to replenish the cooking liquid as necessary so the beans are always covered by at least 1-inch. The beans should be cooked until tender, about 1 hour. Drain excess liquid. Place the beans in a bowl and mash until pureed. Season with salt and black pepper and keep at room temperature.
  • To assemble the plate: Heat a saute pan over medium-high heat. Add enough oil to cover the bottom of the pan. Place the fritters in the hot oil and cook until golden brown on each side. Reduce to low flame and continue to cook until the fritter is hot throughout. Serve immediately, with a dollop of sour cream and cured red onions.
  • Plantain Dough: Rinse the plantains with the skins on. Place the plantains in a sauce pan and cover with hot water. Place the saucepan over high heat and cook until the skins of the plantain start to open. Drain the liquid and lay the plantains to cool. Peel the plaintains while the plantains are still warm, mash in a bowl to form a dough. If the dough is too wet add bread crumbs until workable. Divide the dough into 8 balls. Using a clean flat surface, flatten the balls into round circles 1-inch thick. Spoon 1/4 teaspoon of the black bean mixture in the center of the plantain. Fold the edges of the plantain over the center of the plantain to close the bean mixture inside. If you can't cover all the bean mix, take a piece of plantain mash and place over the beans, while forming into a 1-inch thick round circle.
  • Cured Red Onions: Place the sliced red onions in a small shallow container. Pour the lime juice over the onions, and season with salt. Mix well to combine the flavors. Cover and let sit in the refrigerator for 2 to 3 days.
