My vegetarian friend made these and I got to try them. I thought they were delicious and am posting so I can make them for my family. Thanks Claire. Recipe adapted from Southern Living.

3 (16 ounce) cans black beans, rinsed and drained
1 1/2 cups uncooked oats
1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 cup chopped fresh cilantro
2 large eggs, beaten
1 teaspoon salt
1/4 cup all-purpose flour
1/4 cup cornmeal
1 tablespoon vegetable oil
8 hamburger buns

Steps:

  • Coarsely mash the beans with a fork or potato masher.
  • Mix together the mashed beans, oats, and next 5 ingredients.
  • Shape mixture into 8 patties.
  • Mix together the flour and cornmeal; dredge patties in flour mixture.
  • Let the oil get hot in a large non-stick skillet over medium-high heat; cook the patties for 5 minutes on each side or until lightly browned; drain on paper towels.
  • Serve on buns ( toasted buns work well).

4 cups apple cider vinegar
2 cups brown sugar
2 red onions, sliced
2 pounds cooked black beans
1 cup corn kernels
1 cup cooked wild rice
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon coriander
Salt and freshly ground black pepper
1 cup sour cream
1/4 cup honey, plus more if needed
1/4 cup lime juice
2 tablespoons chopped fresh cilantro
Salt and freshly ground black pepper
6 brioche buns
6 tablespoons butter
1/4 cup grapeseed oil
3 cups arugula
1/2 lime, juiced

Steps:

  • For the pickled onions: In a pot, combine the vinegar and brown sugar, and bring to a simmer. Whisk to dissolve the sugar. Add the onions and bring the pot back to a simmer and cook until the onions are tender.
  • Remove from the heat and store the onions in their pickling liquid in a non-reactive container for at least 1 hour, but preferably overnight.
  • For the burgers: In a bowl mash 1 1/2 pounds of the black beans. Add the remaining black beans to the bowl with the corn, rice, chili powder, cumin and coriander, and mix everything together by hand. Season with salt and pepper. Form the burger mixture into 6 patties and set aside.
  • For the cream: In a bowl whisk together the sour cream, honey, lime juice and cilantro. Season with salt and pepper, and adjust the flavor with more honey if the dressing is too tart.
  • For Plating: Heat a cast-iron griddle over high heat until it begins to smoke. Butter both sides of the buns and toast them on the griddle until golden brown.
  • Heat the grapeseed oil on the griddle. Place the burgers on the griddle and sear the first side for about 3 minutes. Flip and cook the second side until seared and the center is hot, about more 3 minutes.
  • In a bowl combine the arugula with 2 tablespoons of the prepared sour cream, a squeeze of lime juice and some salt.
  • Spread the prepared sour cream on each side of the buns. Place the burgers on the bun and top each with 2 ounces of the pickled red onions and 1/2 cup of the arugula salad.

1/2 medium yellow onion, roughly chopped
1 tablespoon chopped garlic
2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

2 cups canned seasoned black beans, drained
1 cup seasoned breadcrumbs
1/4 cup grated onion
1/2 teaspoon chili powder
1 large egg
Salt and freshly ground pepper
Canola oil, for the pan
4 slices Swiss cheese
1/2 cup mayonnaise
Hot sauce
4 burger buns, toasted
Lettuce and sliced tomatoes, for topping

Steps:

  • Mash the beans.
  • Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
  • Make the burger mixture.
  • Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
  • Form the patties.
  • Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don't shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
  • Cook the burgers.
  • Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
  • Top the burgers.
  • Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

Arugula, for serving
Sliced tomatoes, for serving

Steps:

  • Mix together the beans, breadcrumbs, onions, chili powder, egg and some salt and pepper in a medium bowl. Form the mixture into 1 big (or 2 smaller) patties.
  • Preheat a grill pan over medium-high heat and add some canola oil. Cook the burger 4 minutes per side. Serve on a kaiser roll with arugula, tomato slices and mayo.

1/2 cup uncooked brown rice
1 (15 ounce) can black beans, drained and rinsed
1 small onion, chopped (white or yellow)
1 garlic clove, minced
1 cup frozen corn
1 teaspoon salt
cayenne pepper (to taste)
1/3 teaspoon chili powder
1 egg
1/3 cup breadcrumbs (preferably seasoned)

Steps:

  • In a small pot, combine rice and 1 cup water; bring to a boil, and then turn down to medium heat and cook 20 minutes.In a saucepan, heat a little oil over medium heat and saute the onion and garlic about 5 minutes, until the onion is translucent and soft.
  • Add the corn and spices and cook until the corn is defrosted, another 5 minutes.
  • In a medium bowl, mash the drained beans with a fork or your fingers.
  • Add the rice, corn, and onion; combine, mashing it with your fork as you go. Taste and adjust the spices now, because once you put the egg in you could risk salmonella.
  • Add the egg and mix in well.
  • Add the breadcrumbs.
  • Form into patties by patting the desired amount of mixtured into a flat round. (I used a giant cookie scoop to make sure all the patties were the same size, but you can just divide the mixture into six sections).
  • Cook about 2 minutes on each side (if you can't flip the patty without breaking it, it's probably not finished cooking).

75g wholemeal bread ,or sourdough
75g walnuts
400g sweet potato
400g can black beans, drained
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp onion granules
1 tbsp tomato purée
2 tbsp rapeseed oil, to fry
½ cucumber, halved, deseeded and sliced on an angle
2 large carrots (about 300g) peeled into ribbons
small bunch coriander, finely chopped
2 tbsp lime juice
1 tbsp rapeseed oil
4 sourdough burger buns
2 large tomatoes, thickly sliced
1 avocado, peeled, stoned and sliced
50g rocket
coconut yogurt or burger sauce of choice

Steps:

  • Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
  • Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
  • Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
  • Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. Serve with the carrot and cucumber salad alongside.

2 (15 ounce) cans black beans, drained and rinsed
1 (14 1/2 ounce) can Rotel Tomatoes
2 garlic cloves
1 teaspoon onion powder
1 cup carrot, chopped (i used a handful of pre-bagged shredded)
1 dash spike seasoning, seasoning or 1 dash salt and pepper, to taste
2 cups old fashioned oats, not quick oats

Steps:

  • In food processor put first 6 ingredients and process until blended. I left some carrots chunky.
  • Add oats and stir to mix well.
  • Let sit for 20 minutes to soften oats.
  • Preheat oven to 400degrees.
  • Roll into burger patties and put on baking sheet- I used a cast iron griddle to help with non-stick and to keep it fat free. You can spray baking sheet w/ oil prior to placing burgers on it.
  • Bake 8 minutes on each side. The recipe says you can also "fry" burgers in non-stick fry pan.
  • Serve w/ whole wheat buns w/ toppings of choice. Enjoy this recipe made 7 good sized burgers.
  • You can also freeze these after cooking and reheat. I am planning on taking these camping.
