BLACK BEAN AND AVOCADO QUESADILLAS
Healthy alternative and delicious quesadillas. I got this from Essence magazine. Very easy to make also!

Steps:
- Mash half the black beans with potato masher until smooth, and mix with remaining whole beans.
- Spread equal parts beans, cheese and jalapenos on flour tortillas.
- Stack second tortilla on top of the filling.
- Heat 1 teaspoon of oil in a large nonstick saute pan over medium-high heat. Put two quesadillas in the pan, pressing down with spatula to close.
- Cook 2 to 4 minutes on both sides.
- Repeat with the remaining two quesadillas.
- Dice avocado, then toss with the lime juice and salt. Serve atop the quesadillas.
AVOCADO BLACK BEAN QUESADILLA
This avocado black bean quesadilla is filled with mashed black beans, spices and vegetables and is a delicious easy meatless dinner recipe that's ready in 10 minutes! Serve with your favorite sauce and a side salad like this one.

- Rinse and drain the black beans, chop the cilantro, arugula, jalapenos and olives. Peel the avocado.
- For the black bean filling: add 1/2 of the ingredients for the black beans to a bowl and mash them together. If you have a food processor and don't mind cleaning it - it will do this faster. After the ingrediens are mashed, mix in the other half of the ingredients.
- Spread the black bean mixture over 1/2 of the tortilla, add avocado, arugula and cilantro, olives, jalapeno and mozzarella cheese on top. Then fold the tortilla in half.
- Add some oil of choice to a nonstick pan and toast the quesadilla on both sides until golden brown.
- Slice, let cool off for a minute and enjoy!

SPINACH AND BLACK BEAN QUESADILLAS
These Quesadillas can be cut into wedges and served as appetizers or can be used whole as a light lunch served with a salad.

Steps:
- Heat 1 tablespoon of the oil in a heavy nonstick skillet over midium-high heat.
- Add the onion, garlic, and jalapeno pepper, and saute until soft about 3 minutes.
- Add the mashed beans to the pan and saute, for 1 minute.
- Fold in the spinach, stirring well to incorporate.
- Remove the pan from the heat and allow the mixture to cool.
- Season with the five spice-powder and salt and pepper.
- Place 6 of the tortillas flat on a work surface and divid the bean mixture among them, spreading the filling on top of each tortilla but leaving a 1/2-inch border around the tortilla edges.
- Brush the tortilla edges with beaten egg, then place a second tortilla on top, pressing down to seal.
- Preheat the oven to 200F degrees.
- Place a heavy skillet over medium-high heat.
- Brush tops and bottoms of the tortillas with the remaining oil and cook each one in the hot skillet until light brown, about 2 minutes on each side.
- Keep the finished quesadillas warm in the preheated oven until all of them are cooked.
- Remove the quesadillas from the oven.
- Leave whole or cut into wedges and serve immediately.
VEGAN BLACK BEAN QUESADILLAS
I was inspired to make this after looking around at the other quesadilla recipes on here. So I took a few ideas and kind of smooshed them together to make this amazing meal. I fed it to my non-vegan friends who told me it's the best food I've ever made. **A tip for the soy cheese**-grate the cheese and set it aside before you start cooking. Letting it warm up to room temperature will help it melt a lot easier (and evenly!) in the oven.

- To prepare the beans, rinse them off and pour them into a large bowl or tupperware container. Cover with at least 3 inches of water and let soak for 1-3 days. If they smell or get a foam on top of the water, that's ok, it's gases escaping from the beans. After the soaking is done, drain the beans and rinse them off. Pour into a pot, cover with water, and simmer for 1 hour or until the beans are soft when you bite into them.
- After the beans are done cooking, pour into a colander to drain. Heat the oil in a large, deep pan over medium heat. Add the garlic and onions and saute until the onions are softened.
- Next, add the peppers, beans, tomatoes, cumin, chili powder and salt. Stir well and cook for 5 minutes or until the vegetbles are softened.
- Finally, add the corn and cilantro, stir well to combine and cook for another few minutes.
- Preheat the oven to 425°F.
- Lay 2-3 tortillas on a cookie sheet lined with foil. Spoon the bean mixture onto half of each tortilla, top with the grated soy cheese, and fold the other half of the tortilla over. Either spray the top of the quesadilla with cooking spray, or dip your finger in vegetable oil and smear over the top.
- Do this with each tortilla and bake in the oven for 5-15 minutes, until the cheese is melted and the top of the quesadilla is golden brown. Remove from the oven and let it rest for 5 minutes before cutting into thirds. Serve with vegan sour cream and a side of Spanish rice.

- In a medium pan over medium-high heat, saute onion and bell pepper in 1 tablespoon oil for 2-3 minutes or until tender. Add the black beans and taco seasoning. Cook for another minute. Transfer mixture into a small bowl and set aside.
- Rinse and wipe down pan and return to heat. Drizzle with a light layer of oil or spray with cooking spray.
- In a small bowl, lightly mash the avocados with a fork. Stir in cilantro and juice of 1/2 lime, season with salt and pepper to taste. Spread a quarter of mashed avocado onto half of a tortilla. Top with bean mixture and 1/4th cup of cheese. Fold the tortilla closed over the veggies. Repeat until all tortillas are filled and all fillings are used.
- Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted. Serve with your favorite salsa or sour-cream, Enjoy!
