DINER MEATLOAF

Steps:
- Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
- Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
- Tear the bread into small pieces and add to beef mixture.
- Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
- Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
- Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.

- Preheat oven to 350 degrees.
- Combine ground beef, oatmeal, milk, egg, onion, salt, and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
- Transfer meat into a large loaf pan and press it down evenly into the pan.
- For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Pour evenly over meatloaf.
- Bake at 350 degrees for 1 hour and 20 minutes.
- Remove from oven and drain off excess grease. Let stand for 5 minutes before serving.

- 1. Pre-heat oven to 350 degrees. Spray a square baking dish, one large loaf pan or 2 small loaf pans with cooking spray.
- 2. Combine first 7 ingredients in large bowl and mix well. Put in pan and shape so meatloaf doesn't touch the sides. Indent top of meatloaf with the side of your hand and make 1 line down the middle of meat loaf about 1/4 inch deep.
- 3. Combine the last 3 ingredients in a small bowl and mix well. Spread half of the sauce over the meatloaf. Reserve the other half to put on top of meatloaf after cooking 45 minutes. *
- 4. Put meatloaf in pre-heat oven and cook for 45 minutes and add the rest of the sauce to the top. Check after an hour. Then check every 15 minutes until done.
- 5. *If you like your sauce a little sweeter add more brown sugar. Like it a little spicier add more ground dry mustard.

- Preheat oven to 350 degrees F.
- Pulse oats in a food processor to form a coarse meal. Transfer to a large bowl and set aside. Pulse mushrooms in the food processor until minced, 10 to 15 pulses.
- Heat 1 Tbsp. oil in large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; cook, stirring occasionally, until tender, 3 to 4 minutes. Add the mushrooms; cook, stirring occasionally, until browned, 3 to 5 minutes. Add vinegar; cook, stirring and scraping up any browned bits, until the liquid has evaporated, 1 to 2 minutes. Let cool for 10 minutes.
- Add the mushroom mixture to the bowl with the oats, along with beef, egg, mustard, Worcestershire, salt, and pepper. Gently mix until combined; do not overmix.
- Brush an 8x4-inch loaf pan with the remaining 1 tsp. oil; transfer the beef mixture to the pan and smooth into a loaf. Combine ketchup and cayenne in a small bowl; brush over the top of the loaf.
- Bake until an instant-read thermometer inserted in the thickest part registers 160 degrees F, 50 to 60 minutes. Let stand for at least 10 minutes before removing from the pan. Using a serrated knife, carefully cut the loaf into 6 slices.

- Preheat oven to 350 degrees.
- In a medium bowl, combine the beef, oats, milk, egg, onion, salt, and pepper. Use your hands to incorporate everything.

BIRTHDAY DINNER MEATLOAF
My hubby and kiddos ALWAYS ask me to make this. Since I can't make it every night, as per request, I tell them I will always make it on their birthdays and at least once a month!! I always have, on hand, the ingredients to make this which makes it easy too! Great recipe!

Steps:
- In a bowl, beat the eggs and milk.
- Stir in the cheese, onion, oats and salt.
- Add the meat and BBQ sauce and mix WELL with your hands.
- Shape into 6 equal size loaves (they will be round) and place in a greased (with PAM) 8 X 8 inch pan or glass dish.
- Sauce: Combine all sauce ingredients and stir well.
- Spoon sauce over each loaf so it is well covered. Leave a little sauce for putting over the rice.
- Bake uncovered at 350 degrees for 45 minutes.
- Serve over rice -- ENJOY!
- **I always double the sauce ingredients so I can have extra to pour over the rice after it is cooked.

- Place a medium sized skillet over med/high heat. Add oil and diced onion. Sauté until sweating, about 3-4 mins.
