BILL KNAPP'S AU GRATIN POTATOES
I got this out of our local newspaper. I always loved their potatoes and couldn't wait to try this recipe--it sure tasted like theirs.

Steps:
- Prepare potatoes.
- Melt butter in large sauce pan.
- Add flour and blend.
- Gradually add milk and cook until thick.
- Add remaining ingredients and stir until cheese melts and sauce is smooth.
- Stir in potatoes.
- Pour into casserole dish.
- Bake uncovered at 350°F for 25-30 minutes until top is browned.
- Can top with soft bread crumbs.

One of the most loved foods on the menu at Bill Knapp's was their cheesy potatoes. The restaurants are long gone but you can bring back the dish for your family with this copycat version.

- Prepare potatoes. Melt butter in large saucepan. Add flour and blend. Gradually add the milk and cook until thick. Add remaining ingredients and stir until cheese melts. Add potatoes and stir well. Pour into a greased casserole dish. Bake, uncovered, at 350 degrees F for 25-30 minutes. until top is browned. cook's notes for best results use whole milk and butter. No substitutes. Can top with buttered soft bread crumbs.

GROUND BEEF AU GRATIN POTATOES WITH VEGETABLES
I had leftovers from Recipe#78028,and didn't just want to heat them up and use them as the same side dish. So, I cooked up ground beef with onions,and seasonings. - Preheat oven to 350 degrees, and lightly grease or spray a 1 1/2 quart baking dish with cooking spray.
- Add beef,onion, and seasoning to a large skillet and over medium heat, cook meat until no longer pink.
- Drain, and return meat to skillet.
- Add potatoes and vegetables to meat,stirring well to combine.
- Place mixture into prepared pan, and sprinkle with cheese.
- Bake for 30 minutes or until bubbly and cheese is melted.

I don't know how many of you remember the Bill Knapp's restaurant chain that operated mainly in the Midwest, but they had the best Au Gratin potatoes ever! Steps:
- 1. Peel and cut potatoes into approximately 1/2" cubes. Place in heavy saucepan and cover with water and bring to a boil. Reduce heat, cover and cook for about 20 min or until tender. Drain well and pat with paper towels to remove as much moisture as possible. Spray a 3 quart casserole dish with cooking spray and add potatoes. Chill for at least 2 hours or overnight.
- 2. After potatoes have thoroughly chilled, melt butter in a large sauce pan. Whisk in salt and flour until well blended. Gradually stir in milk and cook, stirring constantly until thickened. Add paprika, pepper, bullion, and cheese. Cook and continue to stir until cheese melts. Remove from heat and set aside.
- 3. Preheat oven to 350 degrees. Remove potatoes from refrigerator and pour cheese sauce over the potatoes. Gently stir, folding until well mixed. Bake for 30 to 35 minutes or until lightly browned and bubbly.
- 4. SPECIAL NOTE: If you double this recipe, it fits nicely into a 9 X 13 baking dish. You can also divide into individual sized mini casserole dishes, which is the same way that Bill Knapp's served it.
AU GRATIN POTATO'S
Cheesy, and simple to make, with very few ingredients. To save a step and add a bit of flavor, I prefer to leave the skins on.

Steps:
- peel potatos.
- cut into 1/2" cubes.
- place potatos in a large pot and put just enough water to cover potato's.
- cook on high and boil about 10 minutes, being careful not to get them too soft.
- drain potatos and rinse with cold water.
- transfer into a baking dish.
- gently stir in old english cheese, soften in microwave if needed.
- sprinkle top with paprika.
- bake at 350 for about 30-45 minutes, then place under broiler until cheese is fully melted and top is nicely browned.
- just before serving and while still hot, brush with melted butter.

- Cook potatoes with skins; leave a little on firm side. Peel and dice after cold. Melt margarine, paprika, salt, pepper, mustard and cheese on low hear. Pour over potatoes. Sprinkle with additional paprika. Bake 20 to 25 minutes at 350 degrees.
