1 large egg yolk
1 tablespoon seafood seasoning (recommended: Old Bay Seasoning)
1 tablespoon Dijon mustard
1/2 teaspoon grated lemon zest
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons cider vinegar
1/2 cup peanut or canola oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon minced scallions, both white and green parts
1 pound lump blue crabmeat, drained and picked clean of shell
4 cups fresh bread crumbs
1/4 cup chopped parsley leaves
About 4 tablespoons unsalted butter
Red Cocktail Sauce or Green Cocktail Sauce, recipes follow
4 lemon wedges
1 cup ketchup or chili sauce (recommended: Heinz)
1 tablespoon plus 2 teaspoons prepared horseradish
2 dashes hot sauce (recommended: Tabasco)
1 lemon, juiced
1 teaspoon Worcestershire sauce
Combine all the ingredients in a small bowl.

Steps:

  • Put the egg yolk, seafood seasoning, mustard, lemon zest and juice, and vinegar in the bowl of a food processor or a blender and process until smooth. Gradually pour in the oil with the machine running until the mixture emulsifies and forms a mayonnaise. Season with the salt and pepper. (Note: this quantity of mayonnaise will not emulsify in the bowl of the largest size food processor. Use a medium size food processor, a mini processor, or a blender.)
  • Transfer the mayonnaise to a bowl and, using a rubber spatula, fold in the scallions and the crabmeat until well combined. Combine the bread crumbs and the parsley in a shallow container. Form the crab mixture into 8 patties about 3-inches wide and 3/4-inch thick and drop them into the bread crumb-parsley mixture. Dredge the crab cakes on both sides. If you have time, leave the crab cakes in the container of bread crumbs, cover with plastic wrap, and chill for 1 hour or more.
  • When you are ready to fry the crab cakes, put 2 large nonstick skillets over medium heat. Add about 2 tablespoons butter to each pan. When the butter is melted, add 4 crab cakes to each pan, patting off excess crumbs first. Slowly fry the crab cakes over medium heat until they are golden brown on both sides and hot through, turning once with a spatula, about 4 minutes per side. If the crab cakes are browning too quickly, reduce the heat. The internal temperature of a cooked crab cake should be 155 degrees F on an instant-read thermometer.
  • Transfer the crab cakes to plates, 2 per person, and serve with your choice of sauce and lemon wedges.
  • 8 ounces tomatillos, husked and cut into quarters
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 2 teaspoons green hot sauce (recommended: Tabasco)
  • 1 teaspoon chopped garlic
  • 1 teaspoon mustard seeds, toasted
  • 1 teaspoon peeled and grated fresh horseradish
  • Put the tomatillos in the bowl of a food processor and process until coarsely pureed. Remove the tomatillo puree to a sieve, drain off the liquid and discard. Put the drained puree in a bowl and stir in the vinegar, sugar, hot sauce, garlic, mustard seeds, and horseradish.

8 saltine crackers, finely crushed
2 tablespoons mayonnaise
½ teaspoon Dijon mustard
½ teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon Worcestershire sauce
1 egg, beaten
salt to taste
1 pinch cayenne pepper
1 pound fresh crabmeat, well drained
¼ cup dry bread crumbs
2 tablespoons butter

Steps:

  • Mix saltine crackers, mayonnaise, Dijon mustard, seafood seasoning, Worcestershire sauce, egg, salt, and cayenne pepper in a large bowl.
  • Stir in crabmeat until mixture is combined but still chunky. Cover and refrigerate for 1 hour.
  • Sprinkle breadcrumbs on a plate.
  • Shape chilled crab mixture into 4 small thick patties; coat completely with bread crumbs.
  • Melt butter in a skillet over medium-heat; cook crab cakes until golden brown, about 4 minutes per side.

1/3 cup diced green bell pepper
1/2 cup sliced green onion
1 (11 ounce) can Mexican-style corn
1/3 cup light mayonnaise
3/4 cup Italian breadcrumbs
1 egg, beaten
1/2 teaspoon hot sauce
1/2 cup cornmeal

Steps:

  • In a bowl mix the crabmeat, green pepper, green onion, corn, mayonnaise, breadcrumbs; egg, and hot sauce.
  • Combine well, and place the cornmeal in a shallow dish, and shape the crabmeat mixture into 12 equal cakes.
  • Dredge each cake in the cornmeal to coat both sides well.
  • Use a large skillet coated with nonstick cooking spray, and set over medium - low heat, carefully add the crab cakes, and cook until golden brown and cooked through for about 4 minutes on each side, and serve warm.

250 g crabmeat
250 g small peeled cooked prawns, roughly chopped (shrimp)
3 green onions, finely sliced
1/2 cup breadcrumbs
2 eggs
2 teaspoons green curry paste
2 teaspoons fish sauce
4 teaspoons lime juice
2 tablespoons chopped fresh coriander
fresh ground black pepper
2 tablespoons oil (or maybe a little more)

Steps:

  • Mix all ingredients together well.
  • Shape into 8 cakes.
  • Heat the oil over medium heat and fry the cakes until cooked and golden on one side (about 5 minutes).
  • Turn over and cook for another couple of minutes or until cooked right through.
  • Serve at once with a wedge of lime on the side.

I searched the site, but even though there are 250+ crab cake recipes, I could not find one like this one. I got this recipe from the Stonewall Kitchen demo kitchen. I have made it once, and it is very simple, easy, and very tasty. Definitely make the mixture ahead and refrigerate - they stay together much better and cook up easier. Prep time includes refrigeration time. They served them with a remoulade sauce, but I served them with Stonewall Kitchen's Mango Habanero Aioli (Recipe #445347) - Yum!

1 lb lump crabmeat, drained and picked to remove shells
1 cup Ritz cracker crumbs
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 large egg

1/4 cup scallion, chopped

1 lb butter, softened
6 medium soft shelled crabs, cleaned
1/2 French bread, loaf sliced
cajun seasoning
2 tablespoons olive oil
7 cloves garlic, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper, ground
1 tablespoon parsley, minced
2 cups fresh basil leaves
4 cloves garlic, minced
1 cup walnuts, shells removed
1 cup olive oil
1 cup parmesan cheese, grated
1/4 cup romano cheese, grated
salt and pepper

Steps:

  • In a food processor, chop basil, garlic and walnuts.
  • With it running, slowly add olive oil in a steady stream.
  • Add cheeses, salt and pepper and pulse the mixer a couple times.
  • Set aside.
  • Dredge the crabs in butter and place in a hot skillet over medium heat.
  • Add about 1/3 of the butter and sauté crabs about 2- 3 minutes per side.
  • Season to taste with cajon seasoning while sautéing.
  • Remove the crabs and place on warm platter, add all ingredients for Bordelaise together, including remaining butter and with the exception of the parsley, sauté 3-4 minutes, remove from heat and add parsley.
  • Lay slices of french bread on the plates, cover with Bordelaise, add crabs, top with pesto and sprinkle with cajon seasoning.
