7 ounces chopped Brisket, recipe follows
7 ounces Pulled Pork, recipe follows
1/2 link All Beef Hot Links, recipe follows
1 tablespoon BBQ Sauce, recipe follows
1 tablespoons Mustard BBQ Sauce, recipe follows
2 ounces Feta Slaw, recipe follows
One 12-pound brisket or 1 whole bone-in pork butt (Boston butt )
4 ounces ground pepper
4 ounces salt
4 ounces brown sugar
3 ounces paprika
2 ounces chili powder
2 ounces garlic powder
2 ounces onion powder
1400 grams beef (not a fatty cut)
450 grams beef fat
40 grams minced garlic
34 grams sea salt
11 grams chile flakes
7.5 grams black peppercorns
6 grams pink curing salt
5 grams cayenne pepper
4.5 grams coriander seeds
2.5 gallons ketchup
6 cups apple cider vinegar
4 cups molasses
3 cups steak sauce, such as A-1
2 cups mustard
1 cup Worcestershire sauce
1/2 cup BBQ rub
1/2 cup garlic pepper
1/2 cup ground black pepper
1 tablespoon ground cinnamon
2 gallons Creole mustard, such as Zatarain's
12 cups honey
12 cups apple cider vinegar
5 cups raspberry jelly
4 cups ketchup
2 cups BBQ rub
1 cup Worcestershire sauce
4 pounds shredded green cabbage
2 cups shredded red cabbage
2 cups julienne carrots (cut into thin matchsticks)
2 cups crumbled feta
2 cups diced green onion
1 cup red wine vinegar
1 cup white wine vinegar
1 tablespoon ground black pepper
1 tablespoon salt

Steps:

  • Open the hoagie roll. Lay the brisket and pork on the bread, then add hot link to the middle. Pour the sauces on the meats; the BBQ Sauce goes on the brisket and the Mustard BBQ Sauce goes on the pork. Top with Feta Slaw and fold together to make one large sandwich.
  • Preheat a smoker or oven for cooking at about 225 degrees F.
  • Trim brisket fat on the deckle (large side) just enough to where there is still fat covering the meat. (You do not need to trim the pork butt.) Stir together the pepper, salt, sugar, paprika, chili powder, garlic powder and onion powder in a small bowl. Apply the rub to all sides of the meat thoroughly. Let sit at room temperature for about 30 minutes. Place in smoker or oven and let cook until internal temperature reaches 200 degrees F, about 12 hours.
  • Let sit 30 minutes, then chop meat.
  • Grind beef and fat together through a meat grinder and put into a bus tub.
  • Mix together garlic, sea salt, chile flakes, peppercorns, curing salt, cayenne and coriander seeds, then pour in 8 ounces cold water for even distribution.
  • Add water and seasonings to the meat and toss for 2 minutes. Transfer to a plastic bag and let marinade in the refrigerator overnight.
  • Put hog casings in warm salt water and let sit in the refrigerator overnight.
  • Place hog casings on a sausage stuffer. Fill with filling, twisting into 6-inch links.
  • Special equipment: a meat grinder; hog casings; sausage stuffer
  • Mix the ketchup, vinegar, molasses, steak sauce, mustard, Worcestershire, BBQ rub, garlic pepper, black pepper, cinnamon and 3 quarts water in a 5-gallon bucket.
  • Mix the mustard, honey, vinegar, jelly, ketchup, BBQ rub and Worcestershire in a 5-gallon bucket.
  • Put the cabbages, carrots, feta, green onion, vinegars, pepper and salt in a large bowl and mix thoroughly until the liquid is gone.

1 large hamburger bun
1 slice bologna, 1/4 inch sliced off of a roll
1 slice onion
banana pepper
mustard or mayonnaise
1 slice tomatoes
lettuce (optional)

Steps:

  • Put slice of bolonga on hot grill cut with spatula in 3-4 places to allow meat to turn up.
  • Put bread on grill smooth side down,turn meat a couple times and get hot thru completley.
  • With patula put meat on one side of bun lay to side.
  • Add mustard or mayo, cold slice of onion, banana peppers, and tomatoe and lettuce if desired.
  • Put bun together and serve.

1 egg
1 slice bologna
1 slice cheese
1 kaiser roll

Steps:

  • Melt a pat of butter in a fry pan and fry the bologna till golden.
  • Remove the bologna and fry the egg (break the yolk, if you wish) in the same pan.
  • Slice open the kaiser roll and place the cooked bologna slice on the roll.
  • When you have flipped the egg and its near done, place the slice of cheese on top till melted. Remove and place on top of bologna and top with the other half of bun. Enjoy!

BURNT BOLOGNA SANDWICH

This recipe was given to me over 20 years ago by our favorite checker at the grocery store, My adult children still eat it. The sandwich isn't really burnt. These are very quick to make so the time I posted is a guess.

1 (8 inch) flour tortillas (Not burrito size)
1 slice bologna (your favorite kind)
1 slice American cheese
mayonnaise (optional)
butter

Steps:

  • Fry bologna until lightly browned on each side.
  • Lightly butter one side of flour tortilla.
  • If using mayonnaise spread lightly on unbuttered side of tortilla.
  • Put the slice of browned bologna and cheese on unbuttered side of tortilla.
  • Fold in half and cook buttered side down in a warm skillet until tortilla is lightly browned.
  • Turn and cook other side until lightly browned.
  • Serve.

KITTENCAL'S FRIED BOLOGNA SANDWICH

This makes the best fried bologna sandwich, I think it's the buttered grilled buns that really add to the flavor! My DS loves this with a couple slices of dill pickles and chips. I like to sprinkle some garlic powder on top of the slices after spreading with butter, and before browning, but that is only optional.

2 slices bologna (1/2-inch thick)
2 large kaiser rolls
8 teaspoons softened butter (no substitutes, or to taste)
brown mustard
2 -4 slices swiss cheese
sweet onion, slices

Steps:

  • Slice each of the buns in half, then spread each side with about 2 teaspoons butter (can use more).
  • Spray the pan with non-stick cooking spray or melt 1-2 tablespoons butter in the skillet until melted.
  • Place the buns on the skillet buttered side down; leave untouched in the skillet for 1-2 minutes or until browned; remove to a plate and spread brown mustard on one or both sides of the buns (over the butter).
  • Fry the bologna slices in the same skillet with a slit cut in the middle to prevent it from curling while frying turning once after it had developed that slighty burnt crispy coating on one side.
  • Turn the slices over and place a slice (or two) of Swiss cheese on top, then continue to cook until the underneath part is browned and the cheese on top has melted; remove from skillet or griddle, then place the slices of cooked bologna onto each bun the top with onion slices then cover with the top part of bun.
  • Delicious!

5 slices garlic bologna, such as Alexander and Hornung
2 tablespoons oil, more if needed
5 slices onions
1 slice swiss cheese
1 onion roll
1 teaspoon mustard
4 pickle chips
handful potato chips

Steps:

  • Slice the bologna into 1/8-inch strips.
  • Oil a flat top grill and cook the bologna on it until it crisps nicely.
  • Saute the onions on the flat top until caramelized.
  • Once caramelized, put the onions on top of the bologna. Add a slice of Swiss cheese.
  • Toast the onion roll. Spread with the mustard, add the bologna, onions and cheese, the pickles and a '"smosh" of potato chips.
