BIG-BATCH LEMON-MINT JULEP

Big-Batch Lemon-Mint Julep image

You don't need to be throwing a Kentucky Derby party to make a pitcher of this refreshing twist on the classic mint julep. Sixteen lemons (use the 17th to rub glass rims) makes enough for 16 cocktails.

Provided by Martha Stewart

Categories     Food & Cooking     Drink Recipes     Cocktail Recipes

Yield Makes 16 drinks

Number Of Ingredients 5

17 lemons
3 1/2 cups sugar
32 sprigs mint
Ice cubes
3 cups Kentucky bourbon

Steps:

  • Squeeze 16 of the lemons, reserving the rinds and juice. In a large saucepan, combine 3 cups of the sugar and 3 cups water, stirring until dissolved. Add the lemon rinds, and cook over medium heat until the liquid becomes syrupy, about 15 minutes. Remove from heat, and let stand until room temperature. Remove, and discard lemon rinds. Stir in the lemon juice, about 4 cups.
  • Spread remaining 1/2 cup sugar on a small plate. Cut the remaining lemon into quarters. Rub the wedges along the rims of 16 mint-julep cups or tall glasses, and invert the glasses in the sugar to create a sugared rim.
  • Crush a few mint leaves into the bottom of each glass with a muddler or the back of a wooden spoon. Fill each glass with ice cubes, and pour 1/2 cup of lemon syrup in each glass. Top off with about 1 1/2 ounces of bourbon per glass. Garnish each glass with a fresh sprig of mint.

Time 30m

Yield 8 to 12 servings

Number Of Ingredients 7

1 cup sugar
2 small bunches mint, plus sprigs for garnish
4 wide strips lemon zest, plus 1 cup fresh lemon juice (from 6 to 8 lemons), plus lemon slices for garnish
3 orange pekoe tea bags
3 mint tea bags
2 1/2 cups bourbon
A few dashes of Angostura bitters (optional)

Steps:

  • Combine the sugar and 1 cup water in a small saucepan. Bring to a simmer over medium heat, stirring, until the sugar is dissolved. Remove from the heat and add the mint and lemon zest. Transfer the syrup to a liquid measuring cup or bowl, cover and refrigerate until very cold, at least 1 hour.
  • Meanwhile, bring 3 cups water to a boil in a saucepan. Add the tea bags, remove from the heat and let steep 10 minutes. Discard the bags, then pour the tea into a 64-ounce jar and refrigerate until very cold, at least 2 hours.
  • Strain the syrup into the jar. Add the lemon juice, bourbon and bitters, if using. Refrigerate until ready to serve.
  • To serve, pour into glasses filled with crushed ice and garnish with lemon slices and mint sprigs.

THE PERFECT MINT JULEP

Provided by Food Network

Categories     beverage

Time P1DT35m

Yield 10 to 12 servings

Number Of Ingredients 5

4 cups bourbon
2 bunches fresh spearmint
1 cup distilled water
1 cup granulated sugar
Powdered sugar

Steps:

  • To prepare mint extract, remove about 40 small mint leaves. Wash and place in a small bowl. Cover with 3 ounces bourbon. Allow the leaves to soak for 15 minutes. Then gather the leaves in paper toweling. Thoroughly wring the mint over the bowl of whisky. Dip the bundle again and repeat the process several times.
  • To prepare simple syrup, mix 1 cup of granulated sugar and 1 cup of distilled water in a small saucepan. Heat to dissolve sugar. Stir constantly so the sugar does not burn. Set aside to cool.
  • To prepare mint julep mixture, pour 3 1/2 cups of bourbon into a large glass bowl or glass pitcher. Add 1 cup of the simple syrup to the bourbon.
  • Now begin adding the mint extract 1 tablespoon at a time to the julep mixture. Each batch of mint extract is different, so you must taste and smell after each tablespoon is added. You are looking for a soft mint aroma and taste-generally about 3 tablespoons. When you think it's right, pour the whole mixture back into the empty liter bottle and refrigerate it for at least 24 hours to "marry" the flavors.
  • To serve the julep, fill each glass (preferably a silver mint julep cup) 1/2 full with shaved ice. Insert a spring of mint and then pack in more ice to about 1-inch over the top of the cup. Then, insert a straw that has been cut to 1-inch above the top of the cup so the nose is forced close to the mint when sipping the julep.
  • When frost forms on the cup, pour the refrigerated julep mixture over the ice and add a sprinkle of powdered sugar to the top of the ice. Serve immediately.
