Steps:
- Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
- Combine the flour, baking soda, baking powder and salt in a medium sized bowl and set aside.
- Cream the butter and sugars together in a large mixer bowl on medium speed until light in color and fluffy, 2-3 minutes. You should be able to see the change in color happen and know it's ready.
- Add the egg and mix until well combined.
- Add the vanilla extract and mix until well combined.
- Add the dry ingredients and mix until the dough is well combined. It will be thick and shouldn't be sticky. Do not over mix. Once it's well combined, use a rubber spatula to help it come together to form a more cohesive ball.
- Create 1 1/2 tablespoon sized balls of cookie dough. Gently roll into a ball, then roll each ball in the additional sugar to coat. Set the balls on the baking sheet.
- Bake cookies for 7-8 minutes. The cookies will spread and the centers will look soft, but should look done. Remove just before the edges begin to turn golden. Don't over bake. The cookies will be a little puffy when you take them out of the oven but will fall a bit as they cool.
- Remove from the oven and allow to cool on baking sheets for 4-5 minutes before transferring to a wire rack to cool completely.

- Stir together flour, baking powder and salt; set aside.
- In a large bowl, cream together butter and sugar until fluffy.
- Beat in eggs one at a time, then beat in vanilla.
- Gradually stir in dry mixture just until blended.
- Roll the dough into walnut-sized balls then roll in colored sugar.
- Refrigerate balls for at least 20 minutes or freeze until ready to bake.
- Place cookies 2" apart on an un-greased cookie sheet and flatten slightly with the palm of your hand.
- Bake in a 350°F oven for 8-10 minutes until lightly browned at the edges.
- Cool on cookie sheet for 5 minutes, then remove to cool on a wire rack.

- In a large bowl or the bowl of a stand mixer with the cookie whisk attachment, beat together the melted butter, 1 1/2 cups granulated sugar, and the light brown sugar. Add the eggs and vanilla and beat until just combined and smooth.
- Add in the flour, cornstarch, salt, baking soda, and baking powder. Mix until well combined, but be sure not to over-mix. Cover the dough and refrigerate for at least an hour.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Scoop a 2-3 heaping tablespoons of cookie dough at a time and roll into balls, then roll the balls in sugar to coat. Place onto the prepared baking sheet, giving plenty of room for spreading. You should be able to fit 6-8 cookies per tray.
- Bake for 12-16 minutes, or until the edges are JUST beginning to set and the centers are still puffy and soft and seem underbaked. Remove from the oven and let cool FULLY on the baking sheet to set the cookies.
CHEWY SUGAR COOKIES

- Position oven racks in the top and bottom thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment paper.
- Whisk together the flour, baking powder and salt in a small bowl.
- Beat the sugar and butter with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the vanilla and egg and beat to incorporate. Add the flour mixture in 2 batches and beat on medium-low speed until incorporated.
- Put some sugar in a small bowl. Scoop heaping tablespoonfuls of the batter, roll them into balls and coat in the sugar. Arrange the balls on the prepared baking sheets about 2 inches apart. (There will be additional batter for a second batch.)

SOFT, CHEWY SUGAR COOKIES
I was never a huge sugar cookie fan until I went to a local bakery and bit into one of their frosted sugar cookies. It had a fudgy texture that complimented the harder frosting and sprinkles on top. - Mix till creamy; add sifted dry ingredients: salt, soda, and flour.

I make this sugar cookie recipe every Christmas with my family. My mom is a teacher, and she had a baker's daughter many years ago. The baker made these for a class party, and my mom loved them so much that she shared her recipe. The trick is not to overcook them. I always use almond extract because I think it gives a better flavor. I have also made them with royal icing, and they tasted equally delicious. It is all your personal preference. This recipe does make a lot of cookies, depending on how big you cut them, but they always go really fast. This recipe makes a soft, tender dough. The dough initially is sticky, so add flour as you roll them out- but remember, the more flour you add and the more you mix them, the tougher the dough. Enjoy them!

- Cream sugar and shortning. Add sour cream, eggs, and almond/vanilla. Mix well.
- In a separate bowl, mix flour, baking soda, and salt.
- Add to creamed mixture until well blended. Remember, the more you mix, the tougher your dough will be.
- Chill for a few hours (at least 3-4). The dough will be soft and slightly sticky.
- Roll out (I use a floured pastry cloth), and cut with a cookie cutter. Flour cutter between each cookie to prevent sticking.
- Bake at 350 degrees for 8-10 minutes. Cookies shouldn't be brown, just done to the touch.
- FROSTING- See ingredients below.
- 2 lbs. powdered sugar 1 cup shortening 1/2 cup water 1/2 teaspoon almond extract.
- Just mix ingredients until smooth.

- Heat oven to 375°F.
- Line two large baking sheets with parchment paper.
- Whisk together flour, baking powder and salt; set aside.
- With mixer, beat butter, 1 cup granulated sugar and brown sugar at medium speed until light and fluffy, about 3 minutes.
- Add egg and vanilla; beat at medium speed until combined, about 30 seconds.
- Add dry ingredients and beat at low speed until just combined, about 30 seconds.
- Place 1/2 cup sugar in shallow bowl.

- Preheat oven to 375°F.
- In a small bowl, stir together flour, baking soda, and baking powder; set aside.
- In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
- Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet.
