2 pounds 80/20 ground beef, refrigerated
3 cloves garlic, minced
2 tablespoons minced onion
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 1/2 teaspoons fresh ground pepper

Steps:

  • In a large mixing bowl add the ground beef and then sprinkle the remaining ingredients on top.
  • Fold the meat a few times to incorporate the ingredients. This should take only about 30 to 45 seconds. Do NOT overmix the meat.
  • On a large plate or serving tray lined with parchment paper place your meat in the center. Score the meat with the side of your hand into 6 evenly spaced sections.
  • Tear off each section and carefully form each into a patty that is approximately one inch thick and 4 inches across. As you form the patty, be sure to form it with a ½ inch indention in the center
  • Cover the formed patties with plastic wrap and transfer to the refrigerator until ready to grill.
  • Heat your grill to Medium-HIGH heat.
  • Place patties on the grill over direct heat. Cook for 3 minutes, then flip. Do NOT press down on the patties.
  • For medium-rare cook until internal temperature reaches 135°F
  • For medium burgers, cook until internal temperature reaches 145°F
  • For well-done burgers, cook until internal temperature reaches 160°F
  • When you have about 1 minute left on the cooking time, add the cheese to the burgers, and close the lid to allow it to melt.
  • Remove burgers from the grill and let them rest for 3 minutes before serving.

8 slices American or cheddar cheese (optional)

Steps:

  • Preheat a grill to medium high. Divide the beef into four 6-ounce portions. Gather each into a ball, then gently flatten into a 4 1/2-inch-wide patty about 3/4 inch thick (be careful not to overwork the meat). Press your thumb into the center of each patty to make a 1/2-inch-deep indentation (this prevents the patties from bulging as they cook). Season the patties with salt and pepper.
  • Lightly oil the grill grates. Grill the patties indentation-side up until they are marked and release easily from the grill, about 4 minutes. Prepare a grill for medium-high heat.

Steps:

  • Form the ground beef into four 8-ounce patties. A quick and easy way to do this is to divide the meat into 4 piles. Place a pile on the top of a deli container lid. Take a second deli container lid and place the top of it against the meat. Press down evenly and firmly and watch as a perfect patty forms. Repeat with the remaining meat. Make an indentation in the middle of each patty with your thumb to keep the burger from shrinking as it cooks.
  • Sprinkle each patty on both sides with 3/4 teaspoon salt and 1/4 teaspoon pepper. Lightly brush the grill grates with oil. Grill the patties, indentation-side up, until marked on the bottom, about 4 minutes. Flip and cook until marked and slightly firm, about 4 more minutes for medium-rare.   • While the burgers cook, place the onion slices on the grill (try to keep them together in a disk).   • Right before serving, toast the buns cut-side down on the grill. Top the bottom bun with a burger patty and layer with grilled onion, lettuce and a slice of tomato. I must give credit where credit is due. I took this recipe from a TV grilling show called "Red Hot & Ready". The burgers were originally called "Caesar Burgers" but I think my name is more appropriate. These burgers are without a doubt the best I have ever had.

1 small onion, diced
2 tablespoons horseradish
2 tablespoons Worcestershire sauce
1 ounce garlic, finely diced
1 dash celery salt
1 dash pepper
6 ounces butter
3 teaspoons Tabasco sauce
1 teaspoon crushed red pepper flakes

Steps:

  • First off we must prepare a spicy butter mixing 6 oz soft butter in bowl with 1 teaspoon tabasco sauce and 1 teaspoon crushed red pepper.
  • Roll spicy butter into a log using plastic wrap and place in fridge.
  • Combine remaining ingredients in a bowl and mix well.
  • Take hardened spicy butter log from fridge, remove plastic wrap and cut butter into discs.
  • Take ground beef mix and shape into 6 oz balls, inserting spicy butter discs in middle (the spicy butter will flavour and keep the burgers moist while grilling).
  • Flatten balls into uniform patties, no more than an inch think, to ensure proper cooking.
  • Grill to desired temperature, serve on toasty buns and enjoy!

  • Heat a skillet over medium heat. Once hot, add walnuts and toast them for about 8 minutes, stirring them occasionally until they start to turn golden brown. Cool completely.
  • Grind the walnuts in the food processor just until they resemble breadcrumbs. Set aside.
  • In the same skillet, heat olive oil over medium heat. Once hot, add the onions, and sauté until for 3 minutes. Add the garlic and sauté for an additional 2 minutes.
