1/2 cup chopped onion
1 teaspoon ground mustard

Steps:

  • Preheat oven to 350°. In a Dutch oven, melt butter over medium heat. Add onion, mustard, salt and pepper; cook until onion is tender, 6-8 minutes. Add garlic; cook until fragrant. Whisk in flour; continue whisking 3-5 minutes., Whisk in milk; bring to a boil. Reduce heat; simmer, uncovered, until thickened slightly, 8-10 minutes. Gradually stir in 2 cups shredded cheddar cheese; stir in Monterey Jack cheese. Add potatoes and toss to coat. Simmer 10 minutes, stirring frequently., Transfer potato mixture to a greased 13x9-in. baking dish. Top with remaining cheddar cheese. Bake, uncovered, for 1 hour. Top with bread crumbs; return to oven until potatoes are tender, 10-15 minutes. Let stand 15 minutes before serving. If desired, sprinkle with chives.

1½ kg King Edward potato, Desiree, or similar, peeled
1 onion, finely chopped
knob of butter, plus extra for greasing
100ml white wine
300ml milk
400ml double cream
3 sage leaves, finely chopped
50g gruyère, grated

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes for 3 mins to soften a little, then drain. When cool enough to handle, slice into 5mm pieces. Cook the onion in the butter in a pan until softened, about 5 mins, then pour over the wine, milk and cream and heat through. Place the potato slices into a large bowl, pour over the cream mixture, sage leaves and half the cheese. Carefully stir until the potato slices are coated.
  • Grease a large baking dish (about 20 x 30cm) with a little butter, then tip the potatoes in. Smooth over the top, scatter over the remaining cheese and season with black pepper. Cover with foil and cook for 30 mins, then uncover and cook 30-40 mins more until a fork slides in easily and the top is golden brown.

8 large potatoes (peeled and thinly sliced)
100 g (3.5oz) Gruyere (grated)
100 g (3.5oz) Raclette (grated )
50 g (1.5.oz) Parmesan (finely grated )
2 tbsp thyme leaves
salt and pepper (to taste)
½ cup milk
1 tbsp cornflour / cornstarch
2 cups heavy / whipping cream
1 tsp salt
½ tsp pepper
5 garlic cloves (thinly sliced)

Steps:

  • Preheat the oven to 180°C/350°F.
  • Butter a large casserole dish then add a layer of sliced potatoes.
  • Combine all the cheeses then reserve ? for the topping.
  • Season the potatoes with salt, pepper and thyme. Add a few tablespoons of cheese. Repeat until all the potatoes and cheese have been used.
  • Combine the milk, cornflour/cornstarch, cream, salt and pepper and whisk until smooth.
  • Pour the cream mixture over the potatoes. Press down to allow the cream to cover the potatoes.
  • Cover the dish with foil then place in the oven.
  • Allow to bake for 45 minutes until a knife can easily be inserted. Remove the foil, top with the remaining cheese and place back in the oven.
  • Allow to bake for another 15 minutes until the cheese has melted and the top is golden brown.
  • Remove from the oven, allow to cool for 5 minutes then serve.

16 ounces sour cream
10.5 ounce can cream of chicken ((or celery or mushroom))
1/4 cup melted butter
1 bunch green onions ((or can sub 1/2 teaspoon onion powder))
1 teaspoon Kosher salt
1/2 teaspoon pepper
1 1/2 cups shredded cheddar cheese ((more if desired))
1-2 cups crushed cornflakes ((or ritz crackers or panko crumbs, optional))
1/4 cup melted butter

Steps:

  • Preheat oven to 350°F and butter a 9×13" baking dish. Set aside. Make sure your potatoes are mostly thawed and drain any excess water.
  • In a medium-sized bowl, combine potatoes, sour cream, cream of chicken, green onions (or onion powder), salt, pepper, 1/4 cup melted butter and shredded cheese. Stir until combined. Then spread into the baking dish. Top with extra cheese if desired.
  • Top with crushed cornflakes or crumbs. Drizzle remaining melted butter on top. Bake for 30-40 minutes, or until golden brown and bubbling hot. If using cubed potatoes instead of shredded hash browns, bake for about 40 minutes.

Steps:

  • Preheat oven to 350F/180C.

3 pounds russet potatoes (about 5 medium or 4 large, scrubbed)
8 tablespoons butter (one standard cube)
6 green onions (chopped)
1 teaspoon salt
1/2 teaspoon pepper
2 cups sour cream
8 ounces cheddar cheese (grated)

Steps:

  • If your potatoes are large, cut them in half crosswise. Place scrubbed potatoes in a large pot and add enough cold water to cover. Bring to boil over high heat. Reduce heat and keep at a low boil for 15 minutes. Drain and set aside until just cool enough to handle (easier to peel while still warm).
  • Meanwhile, preheat oven to 350˚F. Butter a 13 x 9-inch baking dish.
  • Peel partially boiled potatoes with the help of a paring knife, most of the peel should slide off easily. Shred potatoes by hand or with a food processor fitted with the shredding disc. If using a food processor, empty the bowl at least once as you go to prevent the potato peels from compressing together. Transfer to a large bowl.
  • Melt butter in a small sauce pan. Add green onions, salt and pepper; stir to combine. Remove from heat.
  • In a medium bowl combine sour cream and butter mixture, stirring until smooth. Add cheese and stir to combine.
  • Add cheese mixture to shredded potatoes. With a wooden spoon or rubber spatula, stir thoroughly until cheese mixture is evenly distributed, coating each potato shred. Transfer mixture to prepared baking dish, spreading with a spoon or spatula to an even layer.
  • Bake 45-50 minutes until bubbly with lightly browned edges. Serve.

1 large white or yellow onion, diced small
3 to 4 cloves garlic, finely minced or pressed
2 tablespoons unsalted butter

2 teaspoons seasoning blend such as Mrs. Dash, Trader Joe's 21 Salute, or poultry seasoning*

1 cup vegetable or chicken broth

1.5 cups shredded Colby Jack cheese, divided

Steps:

  • Preheat oven to 400F and to a 9×13-inch casserole dish or baking pan, arrange the potatoes upright in the pan along one of the long edges. Repeat with the remaining potatoes until you have three columns of potato slices; set aside. Tip - If you have a mandoline, use it here!
  • To a saucepan, add and melt the butter, add the onion and garlic, and cook for 5 minutes; stir frequently.
  • Add flour, and cook for another minute, whisking nearly constantly, or until the flour is lightly golden browned. This is what's called a 'roux' and is important so that later on the mixture properly thickens.
  • Add the salt, seasoning blend, pepper, broth, cream, and stir until somewhat thickened, about 3 minutes.
  • Turn off the heat and stir in 1 cup each of the Colby Jack and cheddar cheeses and 1/2 cup of the Parmesan; set aside momentarily.
  • Spread the sour cream over potatoes and pour the cheesy mixture evenly over potatoes.

30 g unsalted butter
2 tablespoons plain flour
500 ml semi-skimmed milk
300 ml double cream
75 g Cheddar cheese
75 g Gruyère cheese

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel and cut the potatoes into 3mm-thick slices, then cook in a large pan of boiling salted water until just tender. Drain well, then transfer to a large baking dish.

Easy Cheesy Potatoes (also known as Funeral Potatoes) are an easy, creamy, comfort food casserole perfect for potlucks, cookouts, family gatherings, or for any everyday meal, for that matter. Loaded with cheesy deliciousness, they're always a crowd-pleasing favorite.

1 (2 lb.) package frozen hash browns, thawed
1/2 c. chopped onion
1 (10.5 oz.) can cream of chicken soup
2 c. (16 oz.) sour cream
2 c. grated mild or medium cheddar cheese
1/2 c. butter, melted
1 T. salt
1/4 tsp. pepper
1 c. lightly crushed Corn Flakes
1/4 c. butter, melted

Steps:

  • In a large bowl, combine thawed hash brown potatoes, chopped onion, cream of chicken soup, sour cream, shredded cheese, the 1/2 cup melted butter, salt, and pepper. Stir together until well combined.
  • Spoon mixture into a lightly greased 9x13-inch baking dish.
  • In a small bowl, combine crushed Corn Flakes and the 1/4 melted butter. Toss to coat all the Corn Flakes in butter. Sprinkle evenly over potato mixture.
  • Bake at 350℉ for 45 minutes, until heated through and bubbly around the edges.
  • For make-ahead prep, assemble potato mixture and refrigerate, leaving off the Corn Flakes topping. At baking time, remove from refrigerator and allow to stand at room temperature for 30 minutes before baking. Top with Corn Flakes topping just before baking, and increase baking time a few minutes, if needed.
