1 Angel Food Cake
1 (3 ounce) box vanilla or cheesecake instant pudding mix
1 (6 ounce) box strawberry Jello
3 cups boiling water
1 (8 ounce) carton frozen strawberries
1 (8 ounce) container Cool Whip
Fresh Strawberry halves

Steps:

  • Tear angel food cake into chunks and place in bottom of 13 x 9" dish. Prepare pudding as directed on box and spoon over cake. Mix Jello with boiling water and stir until completely dissolved, then pour over frozen strawberries. After strawberries have thawed, pour over cake and pudding. Top with Cool Whip. Decorate with fresh strawberries. Refrigerate.

1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
2 cans (21 ounces each) blueberry pie filling

Steps:

  • In a large bowl, beat cream cheese and confectioners' sugar until smooth; fold in whipped topping and cake cubes. Spread evenly into an ungreased 13x9-in. dish; top with pie filling. Refrigerate, covered, at least 2 hours before serving.

1 box french vanilla cake mix
12 oz 7up/Sprite
1 can(s) cake frosting, any flavor
1 c strawberries, diced
1/2 c blackberries, halved

Steps:

  • 1. Preheat oven to 350 degrees. Grease cake pans. (I used two 8" round pans.)
  • 2. In a mixer, combine cake mix and 12 oz. of soda. Mix until combined. Pour into cake pans and bake according to directions on the box. (Toothpick should come out clean.)
  • 3. Dice your strawberries and blackberries while the cake is baking.
  • 4. Once cool, place 1 round cake pan on the bottom of a baking dish, whole. Take the 2nd cake and crumble or dice it.
  • 5. Add a layer of frosting. (I chose chocolate. You could replace frosting with a cool whip/pudding mix as well.)
  • 6. Add a layer of diced strawberries & blackberries on top of the frosting.
  • 7. Sprinkle part of the crumbled cake over the fruit. Repeat steps 5 & 6. Refrigerate before & after serving.

additional blueberries (optional)

Steps:

  • In a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in milk and pudding mix. Fold in 1-1/2 cups of whipped topping.
  • Place half of the cake cubes in a 3-qt. glass bowl. Layer with half of the berries and pudding mixture. Cover with remaining cake cubes. Layer with remaining berries and pudding mixture. Spread remaining whipped topping over top. Garnish with additional berries if desired. Store leftovers in the refrigerator.

5 ounces pecan halves (about 1 1/2 cups)
1 cup all-purpose flour
2 tablespoons granulated sugar
Pinch of fine sea salt
6 tablespoons unsalted butter, melted
1 cup confectioners' sugar
2 envelopes unflavored gelatin
1 cup heavy cream
Two 8-ounce containers cream cheese, at room temperature
1 teaspoon vanilla extract
2 pints blueberries
1/4 cup granulated sugar, or to taste
2 tablespoons cornstarch
Juice of 1/2 lemon

Steps:

  • For the pecan crust: Preheat the oven to 350 degrees F.
  • Place the pecans in the bowl of a food processor fitted with the blade attachment. Pulse until finely ground. Add the flour, granulated sugar and salt and pulse to combine. Add the butter and process until combined. Transfer the mixture to a 9-by-13-inch rectangular baking dish; press flat. Transfer to the refrigerator to chill until firm, about 20 minutes.
  • Bake until golden brown, 10 to 12 minutes. Remove to a rack to cool.
  • For the cheesecake filling: Meanwhile, place the confectioners' sugar and gelatin in a medium bowl. Add 1/4 cup cold water and stir to combine. Bring the heavy cream to just a simmer in a small pot over medium-high heat. Add the hot cream to the gelatin mixture and stir to combine and dissolve. Set aside.
  • Wipe out the food processor bowl to clean away most of the crumbs. Beat the cream cheese and vanilla in the bowl of the food processor until smooth. Add the heavy cream-gelatin mixture and process until smooth, scraping the sides of the bowl as needed. Pour into the cooled nut crust. Refrigerate until firm, at least 1 hour.
  • For the blueberry topping: Meanwhile, combine the blueberries, granulated sugar and cornstarch in a small saucepan. Stir to combine so that the blueberries are coated with the dry ingredients. Add the lemon juice and stir to combine. Bring to a simmer over medium heat and cook, stirring, until the cornstarch and sugar have melted, about 2 minutes. Set aside to cool at least 30 minutes before pouring over the chilled cheesecake filling. Chill until the topping is set, about 15 minutes, before serving.

1 round angel food cake, cut into 1-inch pieces (8 inches in diameter)
1 cup fresh blueberries
1 cup quartered fresh strawberries
1 cup fresh raspberry

Steps:

  • In chilled medium bowl, beat whipping cream and sugar with electric mixer on high speed until stiff peaks form. Gently stir in yogurt.
  • Place cake pieces in large bowl; gently stir in yogurt mixture. In medium bowl, gently mix berries.
  • Spoon half of the cake mixture into 9-inch springform pan; press firmly in pan with rubber spatula. Top with half of the berries. Repeat with remaining cake mixture; press with spatula. Top with berries. Cover and refrigerate at least 4 hours or overnight.
  • Run metal spatula carefully along side of dessert to loosen; remove side of pan. Cut dessert into wedges.
