Make an incredibly delicious berry cobbler Traeger grill style, by cooking this dessert, with blackberries, blueberries and raspberries on a BBQ (or in oven)!

3 cups mixed berries (blackberries, blueberries, raspberries) (,frozen)
1 cup brown sugar
1 pinch salt
1 teaspoon lemon zest (, finely grated)
1 lemon (juice of)
1 teaspoon vanilla extract
1½ cups all purpose flour
3 Tablespoons granulated sugar
1.5 teaspoons Baking powder
1/2 teaspoon salt
8 Tablespoons COLD butter (, 1 cube= 1/2 cup)
1/2 cup sour cream
2 Tablespoons raw sugar

Steps:

  • Combine frozen blackberries, blueberries and raspberries in a large mixing bowl. Add brown sugar, lemon juice, lemon zest, vanilla and a little pinch of salt. Stir to fully coat fruit. Place fruit in a 10" cast iron skillet (or an 8x8 aluminum pan for grilling) or an 8x8 baking dish (if baking in oven). Let fruit sit in skillet and thaw while you make cobbler topping. Leave any accumulated juices from the thawing fruit in skillet. Set aside.
  • Make cobbler topping by mixing flour, sugar, baking powder and salt in a medium bowl. COLD butter is cut into the flour with a pastry blender (or a couple forks) until the butter is the size of peas. Once mixed, gently stir sour cream into the mixture (only until the dough begins to come together). Pinch dough into small pieces and place over the top of the fruit until covered. Sprinkle top of cobbler with raw sugar, if desired.

This cobbler is made in a cast-iron skillet right on the grill. It's packed full of juicy blueberries and flavored with lemon and thyme. Fresh herbs and sweets are a match made in heaven, and even better when you don't have to turn on your oven!

6 1/4 cups fresh blueberries (about 3 pints)
1/2 cup granulated sugar
2 tablespoons cornstarch
1 1/2 teaspoons chopped thyme
1/2 teaspoon kosher salt
Zest and juice of 1 large lemon (about 2 teaspoons zest and 1/4 cup juice)
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking soda
1 teaspoon lemon zest (from about 1/2 large lemon)
1/2 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, cut into small pieces, cold
1/3 cup buttermilk
2 tablespoons turbinado sugar
Vanilla ice cream, for serving, optional

Steps:

  • Prepare a grill for medium indirect heat. For gas grills (with 3 or more burners), turn all the burners to medium-low; after about 15 minutes, turn off the middle burner (you want the temperature to be 325 degrees F). For charcoal grills, bank one chimney starter full of lit and ash-covered briquettes to one side of the grill (be sure to consult the grill manufacturer's guide for best results).
  • For the filling: Combine the blueberries, granulated sugar, cornstarch, thyme and salt in a large bowl. Fold in the lemon zest, lemon juice and vanilla. Set aside while you make the biscuit dough.
  • For the biscuits: Whisk the flour, granulated sugar, baking soda, lemon zest and salt in a medium bowl. Work the butter into the flour with your fingertips until pea-size bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together in a shaggy dough. (Don't overmix the dough.)
  • Pour the filling into a 10-inch cast-iron skillet. Tear the dough into 8 even pieces, flatten them slightly with your hands and then arrange them on top of the blueberries. Sprinkle the top of the biscuits with the turbinado sugar.
  • Put the skillet onto the indirect (no flame) side of the grill. Close the lid and cook until the biscuits are a golden and the filling is bubbling, 35 to 40 minutes. Let cool for 1 hour before serving.
  • Serve with vanilla ice cream, if desired.

1 ½ cups blueberry
1 ½ cups strawberry
1 ½ cups blackberry
1 ½ cups raspberry
½ cup sugar
3 tablespoons cornstarch
ice cream, for topping

Steps:

  • Cut biscuits into small even pieces (about 9 per biscuit) and place in a bowl.
  • Sprinkle sugar, flour, cinnamon, and salt over the dough bites. Mix well.
  • On the grill, using a disposable foil pan or grill proof pan, combine blueberries, strawberries, blackberries, raspberries, sugar, and cornstarch. Stir well and let cook until fruit starts to release its juices.
  • Cover fruit with the cinnamon sugar-coated biscuit dough in as even a layer as possible.
  • Cover pan tightly with foil and close the grill. Keeping the temperature at 350˚F (175˚C) grill for 20 minutes.
  • Take the foil off pan and close grill again for 10 more minutes, or until dough is cooked through and golden brown. (Times and temperatures may vary based on grill).
  • Remove from the grill & serve with a scoop of ice cream.
  • Enjoy!
