Beef Stew with Dumplings image

I was given this recipe when my husband and I were first married. I've been making this wonderful beef stew recipe for 35 years and have never found a better one.

Time 2h20m

Yield 5

Number Of Ingredients 18

1 ½ pounds cubed beef stew meat
¼ cup all-purpose flour
¼ cup butter
1 cup sliced onion
2 cloves garlic, minced
2 cups water
¼ cup chopped fresh parsley
1 teaspoon salt
⅛ teaspoon pepper
1 bay leaf
2 cups cubed potatoes
1 ½ cups diced carrots
1 cup sliced celery
½ cup chopped green pepper
1 cup sliced fresh mushrooms
1 ½ cups biscuit baking mix
½ cup milk
3 tablespoons butter, melted

Steps:

  • In a bowl, toss cubed beef with flour to coat.
  • Heat 4 tablespoons butter in a heavy skillet over medium-high heat. Place flour in a bag or bowl, and add beef cubes. Toss to coat with flour. Place coated cubes in the skillet and fry until well-browned on all sides; remove from pan and set aside.
  • Cook onion and garlic in same pan until tender. Return meat to pan with water, parsley, salt, pepper, and bay leaf. Reduce heat to low, cover, and simmer 1 hour, stirring occasionally and adding more water if needed. Stir in potatoes, carrots, celery, and green pepper, and continue cooking another 15 minutes. Remove the bay leaf, and stir in mushrooms.
  • In a small bowl, mix together baking mix, 3 tablespoons melted butter, and milk until just blended. Drop dough by the tablespoonful into stew. Simmer, uncovered, approximately 10 minutes. Cover, and simmer 10 minutes more, or until dumplings are cooked through, but not dry.

MUM'S STOVE-TOP GROUND BEEF STEW WITH DUMPLINGS

Mum's Stove-top Ground Beef Stew With Dumplings image

I seem to be the only one in my family as a child that did not like dumplings lol I have yet to try them, and I probably won't ever try them :) But that doesn't mean YOU shouldn't try them lol Apparently, they are really good with this stew. I did happen to love the stew and sopped up all the juices with bread. I was also a...

Categories     Beef

Time 3h

Number Of Ingredients 11

2 lb lean or extra lean ground beef
salt and pepper to taste
1 medium cooking onion, chopped
6 carrots, cut in small, consistent sized pieces
5 medium potatoes, peeled and cut (1 - 1 1/2")
1 pkg frozen green peas (small pkg)
water to cover beef
1 can(s) beef broth (plus 1 can water)
1 c diced tomatoes, drained of liquid
all purpose flour
bisquick or other similar biscuit mix, follow directions

Steps:

  • 1. In a 3 quart pot, heat meat slowly on stove till browned, NOT fried. I think Mum said med. heat and adjust lower, if needed. Add a little salt and pepper.
  • 2. When meat is browned, cover with water to about 1/2" over the meat, add onion and simmer for 20 mins. Mum never drained the meat first. (watch and stir if necessary to prevent sticking).
  • 3. Add both the can of broth and can of water and simmer for ½ hr - 45 mins. Stir occasionally to prevent any sticking.
  • 4. Add cut veggies and a little more salt and pepper to taste. Let simmer slowly till all veggies are done, about 45 mins to 1 hr. Thicken with flour gradually to consistency you prefer.
  • 5. This is a THIN stew so you need something to sop up the juices. Make small to medium size Bisquick dumplings and plop on top of stew about 15 mins before you eat. Make sure you have enough liquid in the stew, because dumplings will absorb moisture. You turn back the temp so that the dumplings basically steam. Cover for 15 mins and serve. Crusty bread works too :)

BEEF STEW WITH ONION GRAVY AND BISCUIT DUMPLINGS

Beef Stew With Onion Gravy and Biscuit Dumplings image

I LOVE onion gravy in beef stew, absolutely delicious! The lima beans add more protein and the biscuits are great for soaking up that wonderful gravy. And this recipe has the added bonus of making your house smell delicious!

Provided by MA HIKER

Categories     < 4 Hours

Time 2h30m

Yield 6-8 serving(s)

Number Of Ingredients 12

2 1/2 lbs beef tips
1/4 cup all-purpose flour
salt & pepper
1 tablespoon olive oil
1 vidalia onion, very large (cut lengthwise and sliced very thinly)
1/2 cup beef broth
1/2 cup white wine (I use dry Vermouth for my white cooking wine)
1 tablespoon dried basil
1 (16 ounce) bag frozen lima beans (I prefer baby lima beans)
1/2 cup half-and-half
1 tablespoon cornstarch
1 (10 ounce) can refrigerated biscuits, 10 count

Steps:

  • Toss the beef tips with the flour, salt and pepper in a large Ziploc bag to coat well. Heat the olive oil in a large pot. Brown the beef in the pan. Once browned, reserve beef on a plate and cook the onions until soft. Return the beef to the pan, add the broth, white wine and basil to the pot. Turn down to a simmer, cover, and let cook for 2 hours (can cook for longer if necessary, just keep on low heat). Toward end of cooking time preheat oven to 350 degrees. Stir the lima beans into the stew. In a measuring cup mix the half-and-half with the cornstarch until the cornstarch is dissolved. Stir it into the stew. Turn heat up to medium-high and heat to almost boiling stirring regularly. Transfer stew to large 9 by 13 glass pan (I actually use a little larger corning ware pan) Open biscuits can and place individual biscuits on top of the stew. Cook in 350 degree oven for 15-20 minutes until biscuits are golden brown.

BEEF STEW FOR TWO

Beef Stew for Two image

A down-sized version of my favorite beef stew, perfectly sized for two. It may be smaller in size but is every bit as delicious as the full sized version!

Provided by Marie Rayner

Time 3h30m

Number Of Ingredients 19

3/4 LB of stewing beef, trimmed and cut into 1 inch pieces
1 TBS flour
salt and black pepper to taste
a splash of light olive oil
1 medium onion, peeled and chopped
1 clove garlic, peeled and minced
2 medium carrots, peeled and sliced into coins
1 medium parsnip, peeled and sliced into coins
1/4 of a small rutabaga (swede) peeled and cut into 1/2 inch cubes
1 large baking potato
2 cups beef stock
1 TBS tomato ketchup
1 TBS balsamic vinegar
1 tsp creamed horseradish
1 small broken bay leaf
1/4 tsp each thyme, summer savory and parsley flakes
1 tsp Worcestershire Sauce
1/3 cup of Bisquick baking mix
1/3 cup of milk

Steps:

  • Toss the beef cubes together with the flour, along with some salt and pepper to taste.
  • Heat the oil in a heavy bottomed stove top/oven safe casserole dish/Dutch oven, over moderate heat. (You will not need a really large one, but it should hold at least four to five cups.)Add the beef cubes and brown them all over.
  • Once they have browned add the onions, garlic, carrots, swede and parsnip, along with the herbs. Sauté over medium heat for about 10 minutes, then add the stock, ketchup, horseradish, Worcestershire sauce, and Balsamic vinegar. Bring to the boil, then reduce to a simmer. Simmer while you are preheating the oven.
  • Preheat the oven to 325*F/160*C/ gas mark 3.
  • Cover the casserole tightly and pop it into the oven. Bake for 1 hour.
  • Peel your potato and cut into large chunks.
  • Add the potato to the casserole, give everything a good stir, and return to the oven, again, tightly covered.
  • Bake for a further 1 to 1 1/2 hours until the meat and vegetables are tender.
  • If you are making the optional dumplings. Stir together the baking mix and the milk to combine and dollop on top of the hot stew. Cover tightly and return to the oven for a further 15 minutes. Delicious!
