Spicy Parmesan Meatballs with Angel Hair Pasta image

3/4 cup Fiber One™ original bran cereal
1 lb extra-lean (at least 90%) ground beef
1/4 cup shredded Parmesan cheese (1 oz)
3/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 can (8 oz) tomato sauce
1 can (14.5 oz) diced tomatoes with green pepper and onion, undrained
1/8 teaspoon ground red pepper (cayenne)
6 oz uncooked whole wheat angel hair (capellini) pasta
Additional shredded Parmesan cheese, if desired
1 to 2 tablespoons chopped fresh parsley, if desired

Steps:

  • Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In large bowl, mix crushed cereal, ground beef, 1/4 cup cheese, the Italian seasoning, garlic powder and 1/4 cup of the tomato sauce until well blended. Shape into 16 (1 1/2-inch) meatballs.
  • Spray 12-inch skillet with cooking spray. Cook meatballs in skillet over medium heat 8 to 10 minutes, turning occasionally, until browned. Drain if necessary.
  • Add remaining tomato sauce, the tomatoes and red pepper to meatballs; turn meatballs to coat. Cover; cook over medium-low heat 15 to 20 minutes, stirring sauce and turning meatballs occasionally, until meatballs are thoroughly cooked and no longer pink in center.
  • Meanwhile, cook and drain pasta as directed on package. Serve meatballs over pasta. Top each serving with additional Parmesan cheese and parsley.

1 1/2 lbs beef cube steak
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 C prepared italian salad dressing
1/2 C bread crumbs
1/2 C all purpose flour
1/2 C parmesan cheese (shredded)
1 tsp garlic salt seasoning
1/4 C olive oil
3 garlic cloves (sliced)
1-1 1/2 C prepared spaghetti sauce
1 C mozzarella cheese (shredded)
1/2 lb angel hair pasta
4 tbsp butter
1/2 C parmesan cheese

Steps:

  • Cut cube steak into individual portions and season with kosher salt and pepper. Combine breadcrumbs and flour with parmesan cheese and garlic salt. Dip each piece of cube steak into the italian dressing and then coat in the breadcrumb mixture. Set aside.
  • Heat 2 tbsp of olive oil in a large skillet over medium high heat and cook sliced garlic in the oil until very lightly browned, remove just the garlic from pan and set aside. Brown the steaks in batches until golden brown on each side, adding more oil as needed and remove from the heat-steaks do not need to be cooked all the way through. Arrange the steaks in the skillet and pour spaghetti sauce over the top and finish with shredded mozzarella cheese.
  • Bake uncovered at 400 degrees for 30-35 minutes or until bubbly and the steaks are cooked through, time will vary depending on thickness of the steaks.
  • While steaks are in the oven, cook pasta according to package directions and drain, saving 1 C of the starchy cooking water. Add reserved garlic, butter and parmesan cheese to hot pasta, adding the cooking water as needed to loosen it up. Serve steaks and sauce alongside the pasta.

1 ½ pounds beef cube steak
1 onion, sliced into thin rings
1 green bell pepper, sliced in rings
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
2 tablespoons olive oil
1 (16 ounce) jar spaghetti sauce
½ cup shredded mozzarella cheese
12 ounces angel hair pasta
2 teaspoons minced garlic
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut cube steak into serving size pieces. Coat meat with the bread crumbs and parmesan cheese. Heat olive oil in a large frying pan, and saute 1 teaspoon of the garlic for 3 minutes. Quick fry (brown quickly on both sides) meat. Place meat in a casserole baking dish, slightly overlapping edges. Place onion rings and peppers on top of meat, and pour marinara sauce over all.
  • Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes, depending on the thickness of the meat. Sprinkle mozzarella over meat and leave in the oven till bubbly.
  • Boil pasta al dente. Drain, and toss in butter and 1 teaspoon garlic. For a stronger garlic taste, season with garlic powder. Top with grated parmesan and parsley for color. Serve meat and sauce atop a mound of pasta! HINT: make the meat ahead of time, and refrigerate over night, the acid in the tomato sauce will tenderize the meat even more. If you do this, save the mozzarella till the last minute.

Tender angel hair pasta noodles tossed in a delicious coating of sauteed garlic, Parmesan, butter, and olive oil. The perfect side-dish or simple pasta dinner for when you want something yummy but only have ten minutes.

1 16 oz package of angel hair pasta
8-10 large segments of garlic, finely chopped (I usually use a whole clove)
4 tbsp butter
4 tbsp olive oil
2 tbsp dried parsley
½ cup freshly grated Parmesan cheese
½ tsp salt
¼ tsp pepper
1 large lemon wedge (optional)

Steps:

  • Boil pasta according to package directions for al dente pasta. Make sure to salt the water.
  • While waiting for water to boil and pasta to cook, add olive oil and butter to a large sauté pan. (You want the pan to be large enough that you will be able to add the pasta once it finishes cooking.)
  • Once butter has melted, add garlic, dried parsley, salt, and pepper. Sauté, stirring constantly, until it starts to turn golden brown. Do not overcook the garlic. Once it starts to turn a light brown or golden, remove from heat.
  • Once pasta is done, drain and quickly add it to the garlic, olive oil, butter mixture. Toss until evenly coated.
  • Add grated Parmesan and squeeze of lemon, if desired. Toss again. At this point, taste it and decide if you need to add more salt. You can also drizzle with a little more olive oil if desired.
  • Salt to taste if needed and serve immediately. I like to reserve a spoonful of the sautéed garlic to put in the center of the serving dish with a little more Parmesan cheese...as pictured.
  • Enjoy!

1/3 cup EVOO, Extra Virgin Olive Oil
1/2 cup Butter, 1 cube
1/2 tsp Red Pepper Flakes (Increase if you prefer more spice/heat)
1 Tbsp Salt, for pasta water
1-2 Scallions, white bulbs & two inches of greens, chopped
2-3 Large cloves of garlic, minced
1 lb Angel Hair Pasta, cooked Al Dente
1/2 cup pasta water reserved
Grated Parmesan Roman cheese, to taste
Fresh parsley, chopped for garnish
Salt and pepper to taste for buttery garlic sauce

Steps:

  • Fill a large pot with 6 or more quarts of water, and bring to a rolling boil. Note: we set the heat to high.
  • Add 1 Tbsp salt to boiling pasta water, this is the only time you can or should salt the pasta.
  • Add 1 lb of Angel Hair pasta to boiling water, we add a handful at a time, and cook until Al Dente or tender but firm, and approximately 2-6 minutes depending on your personal preference.
  • When pasta is cooked and before straining pasta into collander reserve 1/2 cup of pasta water,
  • Use a colander to strain water from cooked pasta.
  • While waiting for the water to boil, begin heating the oil and butter in a large skillet and over medium heat; 1/3 cup EVOO & 1/2 or one stick of butter.
  • Finely slice or chop the scallions and green stalks. Add to your large frying pan when oil and butter are bubbling, and saute for 3-5 minutes.
  • After the scallions have sauteed add the minced garlic, red pepper flakes, and salt and pepper to taste. Saute for another few minutes.
  • Add reserved 1/2 cup of pasta water to the butter garlic sauce and saute until the mixture has thickened slightly. Note: The reserved pasta water will help the sauce cling to the pasta.
  • Slowly add the drained pasta to the buttery garlic sauce and toss until the pasta is evenly coated.
  • Remove pasta to a serving bowl, garnish with freshly chopped parsley and grated cheese if desired.
  • Serve and enjoy.
