This is a good recipe for gravy.Very simple. This gravy can be used over Salisbury Steak & mashed potatoes or for dipping your french fries in. MMMMM...so good.

1/4 cup butter
1/4 cup flour
2 cups beef broth
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Kitchen Bouquet (more if you like)

Steps:

  • Melt butter in a saucepan over medium heat. Add flour and whisk together, making sure to get all visible lumps.
  • Add salt and pepper.
  • Cook over medium heat for 5 minutes or until mixture starts to turn light brown, be sure to stir constantly.
  • Turn heat to low and SLOWLY add broth, stirring constantly.
  • It will spit & bubble so be careful.
  • Add Kitchen Bouquet.
  • Turn heat back up to medium.
  • Continue stirring until gravy boils and thickens.
  • Makes about 2 cups.

Easy beef gravy. This recipe works with beef that doesn't have too much juice and/or when boiling potatoes for mashing. Or with just a can of beef broth and water. I like this as it works well when making mashed potatoes and beef, when not too many drippings from the main beef course are available.

1 (16 ounce) can beef broth
1/4 cup water
1/4 cup cornstarch
1/4 cup butter
little salt
1 tablespoon pepper

Steps:

  • Add one can of beef broth over medium heat and 1/4 cup cornstarch, mix using wire whisk. Add half stick of butter. Add 1/4 cup water or if available- skim foamy starch water from boiling potatoes with spoon and add about 4 tablespoons of this to pot. Add any meat drippings if available. Stir often. Add pepper. Cook to boil -- then simmer -- low -- salt to taste. using wire strainer- pour gravy into strainer over bowl or gravy boat. Serves 4-6.

  • In a large skillet, cook beef until browned; drain.

  • Simmer, uncovered, for 5-10 minutes or until onion is tender.
  • In a small bowl, combine the cornstarch and remaining broth until smooth.
  • Stir into beef mixture.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Serve over mashed potatoes or pasta.

This is not a fancy beef gravy and I am not claiming it to be the best, but for the ease of this recipe it's sure a great gravy that can be used for many recipes --- my favorite way to use this gravy is prepare as directed then add in slices of cooked leftover beef roast, steak or cooked meatballs to hot gravy, then serve on toasted buns with mashed potatoes--- the amount of flour listed will give you a thick gravy if you prefer a thinner gravy reduce the flour by 1 to 1-1/2 tablespoons --- do not add any salt if desired it may be added in at the end of cooking --- also see my recipe#145064

1/2 teaspoon black pepper (or to taste)

2 tablespoons oil
1 tablespoon butter
1 small onion, finely chopped
8 ounces slice white button mushrooms (can use more if desired, or use one or two 10-ounce cans sliced mushrooms well drained)
5 tablespoons all-purpose flour (you may reduce to 4 tablespoons for a thinner gravy)
1 pinch cayenne pepper (optional)
2 cups canned low sodium beef broth (use a good-quality beef broth)
2 -3 teaspoons Worcestershire sauce
3 tablespoons ketchup (can use more)
2 -4 teaspoons beef bouillon powder (optional or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)
1/4 cup sour cream
salt (optional and to taste)
1 lb ground beef (can use half each beef and ground pork)
1 egg, slightly beaten
1 tablespoon fresh minced garlic
1/3 cup milk
1/3 cup dry breadcrumbs
1/3 cup grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon fresh ground black pepper
2 teaspoons dried parsley flakes

Steps:

  • Mix all meatball ingredients in a bowl using clean hands.
  • Shape into 1-inch balls.
  • Heat oil and butter in a skillet over medium-high heat (use a skillet with high sides to hold in the gravy and meatballs or use a saucepan) add in the meatballs in two batches and brown until almost cooked through turning frequently for even browning (about 10 minutes) remove to a plate.
  • You may drain some fat from the skillet but leave in about 3 tablespoons.
  • Add in onion and saute until softened (about 3-4 minutes) scraping any browned bits that have accumulated on the bottom of the skillet while cooking.
  • Add in mushrooms cook stirring until softened.
  • Add in flour and stir for 1 minute.
  • Slowly add in beef broth; bring to a boil stirring/whisking constantly until smooth, bubbly and thickened.
  • Add in Worcestershire sauce, ketchup and black pepper; bring back to a simmer stirring (if using add in the beef bouillon powder, start with 3 tablespoons ketchup you may add in more if desired).
  • Add in cooked meatballs and simmer uncovered for about 20-25 minutes over low heat, stirring frequently.
  • Season with salt to taste if desired.
  • At the end of cooking stir in 1/4 cup sour cream until combined and heated through (do not boil).

  • Heat butter over medium heat in a saucepan until it foams. Stir in mushrooms. Season with salt. Simmer until liquid evaporates, about 20 minutes.
  • Stir in the flour, cooking and stirring for about 5 minutes. Add about 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly.
