- Heat oven to 375° F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Heat mashed potatoes as directed on package.
- Meanwhile, in 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain; set aside. Add sausage and onion to skillet; cook 5 minutes or until onion is softened. Return beef to skillet. Add wine; cook and stir 1 minute. Stir in vegetables, tomato paste, salt and pepper; cook 5 minutes or until vegetables are tender.
- In small bowl, mix broth and flour with whisk. Add to beef mixture. Heat to boiling, stirring constantly; cook 3 minutes or until thickened. Spoon mixture into baking dish. Spread heated potatoes evenly over hot beef mixture. Bake uncovered 20 minutes or until filling is bubbly and potatoes are lightly browned.

BEEF SHEPHERD'S PIE

- Preheat oven to 375 degrees F.
- Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
- Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
- Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt. Bring to a simmer over medium-high heat, uncovered, until the potatoes are tender but not mushy, about 15 minutes. At the same time, combine the milk and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
- Drain the potatoes and return to the saucepan. Toss the potatoes over medium heat until dry. Add the heated milk mixture and mash the potatoes until just slightly chunky, then stir in the parsley and season with salt and pepper, to taste.
SAUSAGE FLORENTINE SHEPHERD'S PIE

- Preheat oven to 375°. In a Dutch oven over medium heat, cook sausage, crumbling meat, until no longer pink, 5-6 minutes; drain. Steps:
- 1. Preheat oven to 350 degrees.
- 2. Heat large fry pan with oil. When hot add Hamburger and Italian sausage. Add the onion when meat is almost done. Drain and set aside.
- 3. Using the same large fry pan, melt butter over medium-high heat.
- 4. Whisk in the flour.
- 5. Whisking constantly, add the half-and-half (little at a time to prevent lumping) and cook until the mixture is thickened and smooth. (Whisking constantly is important). Note: If getting to hot, remove from heat, then return to heat.
- 6. Add cream cheese and stir till melted.
- 7. Sprinkle in sausage gravy mix and add the milk (Add more milk if you need to thin out the mixture).
- 8. Season with the salt and pepper to taste. Reduce heat and cook till thickened.
- 9. Stir in all vegetables and meat mixture.
- 10. Pour mixture into a 9x13 lasagna pan sprayed with Pam.
- 11. Sprinkle 3 cups of the cheese on top of mixture.
- 12. Warm potatoes in microwave as directed on package. Stir. Glob potatoes in piles on top of cheese and spread.
- 13. Sprinkle remaining cheese on top of potatoes.
- 14. Bake at 350 degrees on the middle rack for 30 minutes.

- Peel the potatoes and put in a large pan with water along with the sausages. Cook until the potatoes are tender enough to be mashed.
- Drain and mash the potatoes. Set aside. Chop the sausages and set aside.
- In a large pan, add the butter, ½ grated onion, mashed potatoes, and milk. Mix until it becomes a puree. Season with salt and pepper. Set aside.
- In a large pan, put the oil, chopped onion, green chilli and mix until the onion is transparent.
- Add the chopped sausage, tomatoes, and salt. Cook until the tomatoes are soft and become a sauce. Sprinkle in the parsley and green onions. Mix gently. Set aside.
- Preheat the oven to 200ºC (400ºF).
- In a large, oven-safe casserole dish, smooth a layer of half the potato puree, a layer sausage sauce, mozzarella, then the remaining potato puree.
- Sprinkle the top with parmesan cheese and chopped parsley.
- Bake for 35 minutes or until the cheese is melted and the top layer is turning it is golden.

BEEF-AND-LAMB SHEPHERD'S PIE

- Preheat the oven to 400 degrees F. Put the potatoes in a large saucepan, cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat and simmer until tender, 20 to 25 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the leeks and season with 1/2 teaspoon salt. Cook, stirring, until the leeks are soft but not browned, about 8 minutes. Transfer half of the leeks to a large bowl and set aside.
- Add the beef and lamb to the skillet with the remaining leeks. Cook over medium heat, breaking up the meat, until no longer pink, about 6 minutes. Pour off any excess fat from the skillet; season the meat with 1/2 teaspoon salt and a few grinds of pepper.
- Stir the carrots, garlic, Worcestershire sauce and thyme into the meat. Clear a space in the middle of the skillet and add the tomato paste. Cook the tomato paste, stirring, until slightly darkened, about 1 minute, then stir into the meat mixture. Pour in the stout and simmer until slightly reduced, about 2 minutes. Add the broth and bring to a simmer.
- Cook, stirring, until the carrots are almost tender, about 5 minutes. Stir in the peas; reduce the heat to low and let simmer while you mash the potatoes.
- Drain the potatoes and let cool slightly. Transfer to the bowl with the reserved leeks; add the butter, half-and-half and 1/2 teaspoon salt and mash well. Stir in 1/2 cup cheddar.
- Spread the meat mixture in a 3-quart baking dish. Dollop the mashed potatoes on top, then spread with the back of a spoon. Sprinkle with the remaining 1/2 cup cheddar. Bake until bubbling around the edges and the topping is browned in spots, about 25 minutes. Let rest 10 minutes before serving.
- You can assemble any of these dishes up to 2 hours ahead. Cover and refrigerate, then add about 10 minutes to the baking time.
ITALIAN SHEPHERD'S PIE
This Shepherd's Pie has a little Italian influence with Italian sausage, tomatoes and parmesan cheese. It's one of our favorite dishes and there are never any leftovers.

Steps:
- Place ground beef and sausage in a medium skillet.
- Cook until beef looses its pink color.
- Add tomatoes, mushrooms, garlic and vinegar. Simmer uncovered for about 10 minutes.
- Stir in peas, basil, oregano, salt and pepper. Simmer 10 minutes.
- Remove from heat.
- Meanwhile, boil potatoes in water to cover until tender, about 20 minutes.
- Drain and transfer to large mixing bowl.
- Beat in milk, cheese, butter and salt. Continue beating until smooth.
- Heat oven to 350 degrees F.
- Spoon meat mixture into 2 quart shallow casserole.
- Spoon potato mixture on top and spread evenly to edge.
- Bake until golden and bubbling, about 30 minutes.
- Let stand 10 minute before serving.

- THE BEEF & BACON.
- Sauté the onion and garlic on a low heat until cooked.
- Add bacon and fry (turn up to a medium heat to lightly cook bacon),.
- Remove all ingredients from the pan,.
- Add the mince to the empty pan; cook until browned and liquid has reduced.
- Add the onion, garlic and diced bacon into the pan with the mince. Add the grated carrot, grated potato, mixed herbs, parsley, beef stock with Worcestershire sauce, salt and pepper.
- Add water; mix well and then cook on low heat until liquid has reduced by half.
- Add cornflour and water until sauce thickens. Remove from pan and cool.
- THE POTATO MASH: Cook potatoes and heat milk. Mash all together when potatoes are cooked and nearly falling apart.
- THE PIE:.
- Grease a large semi deep (about 10 - 12 cm deep) baking tray and line with puff pastry . Place beef and bacon mixture (once cool) in tray lined with pastry.
- Cook in oven on 180°C until pastry is lightly browned. Remove from oven.
- Place the potato mash over the mince; smooth out and sprinkle with grated tasty cheese to satisfaction.
- Heat oven to 220°C Place on middle shelf and bake for approximately 20 - 30 minutes.
- Allow to sit for 5 minutes and then it's ready to be portioned, served and enjoyed.
