Steps:
- Trim fat from roasts; cut meat into large chunks. Place in a 5-qt slow cooker.
- Top with the chilies, onion, jalapenos, garlic, chili powder, cumin and seasoning blend if desired. Pour broth over all. Cover and cook on low for 8-9 hours.
- Remove beef; cool slightly. Shred with two forks. Cool cooking liquid slightly; skim fat.
- In a blender, cover and process cooking liquid in small batches until smooth. Return liquid and beef to slow cooker; heat through. Place 1/3 cup beef mixture on each tortilla. Top with tomatoes, lettuce and cheese if desired. Fold in ends and sides.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and garlic. Drain and discard grease. Add refried beans and burrito seasoning packet. Add green chiles and heat over low heat, stirring occasionally, until heated through, about 5 minutes more.
- Wrap tortillas in a damp paper towel and cook in a microwave oven until warmed through, about 10 seconds.
- Spoon about 2 tablespoons beef mixture into a warm tortilla. Add a tablespoon or more of Cheddar cheese. Fold both sides in, then fold and roll over mixture to seal burrito. Repeat with remaining tortillas, filling, and cheese.
- Wrap burritos in waxed paper or place in plastic bags and store in the freezer for use in lunch boxes.

- Cut roast in half and place in a 3- or 4-qt. slow cooker. Add broth. Cover and cook on low for 8-9 hours or until meat is tender. , Remove beef. When cool enough to handle, shred meat with 2 forks. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and green chiles in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water, chili powder, salt, red pepper flakes, cumin, and garlic powder; bring to a boil. Reduce heat to medium-low and simmer. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
- In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat.
- Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping.

- On a flat working surface, lay out a tortilla. Spread 1/4 cup beans in a line down the center. Sprinkle on a small handful of cheese. Sprinkle a spoonful of chiles over the cheese as well as a teaspoon of onions. Add hot sauce to taste.
- Roll up the tortilla over the filling, tucking in the sides as you go.
- Continue until all the burritos are filled and rolled.
- The filled burritos can be placed in a ziptop freezer bag and frozen. Or you can heat them and serve them right away. We like to heat them on the griddle, turning to crisp all sides.

- Cook the ground beef in a large skillet over medium high heat until no longer pink, breaking up as it cooks. When it is almost done, add the cumin, chili powder, coriander, salt and pepper. When completely cooked, stir in the refried beans and water. Stir to combine and remove from heat.
- Meanwhile, in another skillet over medium heat, melt the butter. Add the flour and whisk together. Cook for 1 minute. Slowly whisk in the chicken broth. Let it come to a bubble and cook, stirring often, until it starts to thicken. Remove from the heat and stir in the sour cream and green chiles.
- Assemble the burritos: Working with one tortilla at a time, spread 1/6 of the beef mixture down the center of the tortilla. Sprinkle about 2 tablespoons of the cheese over the beef. Fold in two ends of the tortilla, then roll into a burrito. Place the burrito on a plate and spoon some of the Green Chile Sauce over the burrito. Add 2 more tablespoons of the cheese over the top. Top with shredded lettuce and diced tomato.

- Brown the ground beef with the salt and pepper to taste (if using shredded meat that has already been cooked, skip this step.
- Mix the meat, beans and green chilies together.
- Cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.
- Spread 1/3 of the meat and bean mixture on top of tortillas.
- Pour 1/2 cup of the sauce over the meat.
- Sprinkle on 1/2 cup of the cheese.
- Repeat layer once more.
- Add one more layer by adding tortillas and meat mixture.
- Top with another layer of tortillas; pour last cup of sauce over the tortilla covered casserole.
- Sprinkle with remaining cheese.
- Bake in 350 degree oven until hot and the cheese is melted.
- Top with lettuce and tomatoes.
- Serve with sour cream.

Hot chili is a very underrated summer menu item. Bring a big ol' thermos of this to a picnic or other warm weather cookout, and it makes a great side to those grilled burgers and dogs. - Place a pot over high heat. Drizzle in vegetable oil. Add diced onion, ground beef, and salt. Break up meat with wooden spoon into small pieces as it browns. After meat browns and releases its juices, continue stirring until the released liquid evaporates, about 4 minutes. Reduce heat to medium-high.
