BEEF AND ASPARAGUS WITH OYSTER SAUCE
Steps:
- Slice 1/2 pound steak across the grain into strips. Marinate for 1/2 hour in 2 Tablespoons soy sauce, 1 teaspoon peanut oil and 1 teaspoon cornstarch. In wok, heat 2 Tablespoons peanut oil. Add ginger and garlic. saute until brown. Remove and discard ginger and garlic. Stir-fry meat for about 2 minutes. Add asparagus, mushrooms and onions. Stir-fry until asparagus turns bright jade green. Stir sauce ingredients together until well blended. Pour over vegetable-meat mixture. Reduce heat. Cook 1 to 2 minutes until sauce is thickened. Steps:
- Cut meat across the grain into very thin slices.
- Place in a bowl and combine with soy sauce, rice wine, water and cornstarch.
- Allow to marinate at least 10 minutes (I sometimes do this in the morning, then cook when I get home).
- Meanwhile prepare remaining ingredients and stir together sauce mixture.
- Heat oil in a wok or large skillet.
- Add meat and cook, stirring constantly, until meat is about 75 per cent cooked.
- Remove and reserve.
- Scrape out pan if necessary and return to heat.
- Add another 2 tablespoons oil if needed and heat.
- Add garlic, ginger and green onions and cook 30 to 60 seconds until fragrant.
- Stir in cut-up broccoli and add water.
- Cover and cook 3 minutes.
- Re-add beef to pan and combine well.
- Add sauce to mixture and bring to boil.
- Cook until thickened and beef and broccoli are cooked through.
- Serve with steamed rice.
BEEF WITH FRESH ASPARAGUS
I believe this is from the Yan Can Cookbook that I borrowed from my sister-in-law years ago. This is a flavorful and colorful combination. I think I may have added more soy sauce during the cooking process when I made this, so naturally, make the necessary adjustments to suit your family. It would probably be good with a little heat added to it (crushed red pepper or chiles maybe) Prep time includes 2 hours for marination.

- Mix together soy sauce, wine, sesame oil, ginger, cornstarch and oil for marinade.
- Cut beef across the grain into 1 1/2 by 2 inch slices. Marinate 2 hours.
- Break off and discard tough ends of asparagus. Cut diagonally into 1 1/2-2 inch lengths.
- Peel and cut carrot into 1/2 inch rounds.
- Heat oil in wok or skillet over high heat.
- Add ginger and stif for 30 seconds.
- Add beef to skillet and stir-fry till redness disappears, about 1 1/2 to 2 minutes. Remove and set aside.
- Add asparagus and carrots to wok/skillet, stirring for 30 seconds.
- Stir in remaining ingredients, except cornstarch solution.
- Cover and cook for 2 1/2-3 minutes.
- Return beef to skillet, stir well and thicken with cornstarch.
- Serve hot over cooked rice.

- Combine oyster and soy sauces along with sesame oil, sugar and cornflour in a small bowl.
- Set aside.
- Heat 1 tablespoon of the peanut oil in a wok.
- Swirl to coat.
- Add half the beef and stir fry until browned.
- Remove and set aside.
- Repeat with the remaining peanut oil and beef and remove and set aside.
- Add garlic, ginger and chilli to the wok.
- Cook for 30 seconds.
- Add onion and capsicum and stir fry for 1 minute.
- Return the beef to the pan along with the combined sauces.
- Stir to warm through.
- Serve immediately with rice.

- Bring 2 to 3 cups water to a boil in a saucepan over medium-high heat.
- When it is boiling rapidly, add all the asparagus EXCEPT the tips.
- When the water begins boiling again, add the tips, and boil for about 1 minute.
- The aim is for the asparagus to still be crunchy, so judge cooking time by whether it is thin or thick.
- Drain and reserve.
- Mix cornflour with water and keep handy.
- Heat oil in a frying pan or wok.
- Cook the beef, green onion and grated ginger until the beef shows just a little red.
- Add the beef broth, sugar, oyster sauce, soy sauce and tofu, being careful not to break up the tofu very much.
- Simmer over medium heat 2 to 3 minutes, until the pieces of tofu are warm inside.
- Stir in the asparagus.
- When the asparagus is done to your liking add cornflour-water mixture and remove from heat.

BEEF I ASPARAGUS NOODLE BOWL W OYSTER SAUCE

- 1. Mix the ingredients for the marinade together. Add the steak and let marinate for 30 minutes. Cook the noodles according to package directions and drain.
- 2. Add 1 tbsp oil to a wok or skillet. Add the asparagus and stir fry for 2 minutes then add the steak with the marinade. Cook until steak is at desired doneness.
- 3. Remove the steak and asparagus and set aside. Add the other tbsp of oil to the pan and add the onion, garlic, and ginger. Cook 1 minutes. Add the stock, rice wine and oyster sauce and bring to a boil. Add the steak and asparagus back in the pan. Cook 30 seconds.
- 4. Serve over the noodles and garnish with sesame seeds.
BROOKLYN WISEGUY-CANTONESE BEEF WITH OYSTER SAUCE
This is the story: A certain Chinese restaurant in Brooklyn was known to be frequented by "wiseguys". One wiseguy in particular (let's call him Joey) was very fond of the classic Beef with Oyster Sauce, although he often kidded the owner about the thin sliced "mystery meat" it was served with. "Don't youse guys ever feel like a nice steak?" was the usual question. Eager to please his patrons, the owner instructed the chef to prepare the dish in this manner, as a surprise for Joey. Realising a knife would be needed to cut the steak, a waiter was told to bring one to the table before serving, as knives aren't part of a usual place setting in Chinese restaurants. The waiter, new and somewhat intimidated by the wiseguys, nervously handed the knife directly to Joey. Joey eyeballed the knife, and looked up at the waiter. "Are youse expecting trouble tonight?" Preparing this dish is no trouble at all.

- Mix marinade ingredients and rub into steaks.
- Let sit for 20 minutes.
- Mix together ingredients for sauce and set aside.
- Toss lettuce with oil and vinegar and divide onto individual serving plates (or 1 large serving plate).
- Heat a wok or heavy based pan, then add oil to coat.
- When oil is very hot, add garlic, ginger, onions, and mushrooms, and stir-fry on high heat until crisp cooked (about 3 minutes), turning constantly to avoid scorching.

I love this when the fresh asparagus is in season. Sometimes I throw in some onion wedges or a red capsicum for colour with the asparagus. Prep time includes marinating time.

Steps:
- Trim the meat, and slice across the grain evenly into long, thin strips.
- Combine the soy, sherry, ginger, sesame oil, garlic and chilli; add the meat stirring to coat and leave to marinate for 30 minutes.
- Drain the meat, reserving the marinade.
- Heat 20ml of oil in a wok or heavy-based frying pan, add the asparagus and stir-fry for 2 minutes.
- Remove from the wok.
- Heat the remaining oil in the wok, cook the meat quickly in small batches over high heat until browned but not cooked through.
- Remove and drain on absorbent paper.
- Blend the cornstarch with the reserved marinade until smooth.
- Return asparagus and meat to wok with marinade mixture.
- Stir-fry over high heat until meat is cooked through and sauce has thickened.
- Serve at once.
