GRILLED BBQ CHICKEN SANDWICHES
Steps:
- For the barbecue sauce: In a medium saucepot over medium heat, add the ketchup, apple cider vinegar, dark brown sugar, Worcestershire sauce, black pepper, garlic powder, dry mustard, onion powder, hot sauce and 1 cup water and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and cook until the sauce is thickened, about 1 1/2 hours.
- For the chicken: Heat a grill pan over medium-high heat.
- Lightly drizzle some olive oil onto the chicken to prevent the chicken from sticking to the grill pan. Season the chicken with salt and pepper. When the grill pan is hot, add the chicken and cook until char marks appear and the chicken is cooked through, 2 to 3 minutes per side.
- Toss the chicken with the barbecue sauce. Let simmer on low until ready to serve, to infuse the chicken with the flavor of the sauce.
- For the sandwich: Spread an even layer of mayonnaise on the top and bottom of a potato bun, add the chicken, a few red onion slices and 2 bread and butter pickles. Top with the other half of the potato bun.
BACON BBQ GRILLED CHEESE SANDWICH
If you love BBQ and bacon (and who doesn't) you will love this sandwich. The sweetness of the BBQ sauce and the savory bacon go really well together and smoked provolone is a great addition. This is a quick, easy and yummy lunch or dinner and a nice change from a plain grilled cheese. The whole crew couldn't get enough of this!

Steps:
- Melt 1 tbsp of butter in a skillet over medium heat. Add the sliced red onion and stir occasionally until color changes to slightly brown and taste is sweet, about 10-15 minutes. Remove onions from skillet and set aside.
- Spread 1 tablespoon of the remaining butter onto one side of each slice of bread.
- Divide barbecue sauce evenly among 4 of the slices and spread evenly opposite the butter side. Lay cheddar cheese on top of sauce. Divide caramelized onion among the sandwiches, then top with pepper jack. Finish assembly by placing remaining bread slices on top. The butter sides of the bread should both be on the outside of the sandwiches.
- Place 2 sandwiches in the skillet and cook sandwiches two at a time, flipping when bread is golden brown on one side and cheese begins to melt. If cheese is not melting quickly enough, place a lid over the pan or use a heavy skillet to place on top and press the sandwiches down.

- Flip the sandwich over and repeat on the second side, cooking for 2-3 minutes to get the initial grill marks and then turning the sandwich 90 degrees to create hashmarks.

- Spread one side of both pieces of bread with mayonnaise – just enough to coat the surface or each with a thin layer. Lay one slice of bread in the hot skillet, mayonnaise side down. Add half the cheese, then the BQ Beef, then the remaining cheese. Top with the second slice of bread, mayonnaise side up. Turn the heat down to medium-low.
- When the cheese looks about halfway melted, use a spatula to flip the sandwich over in the pan. Use the spatula to press the sandwich down slightly. Let cook for a couple of minutes, then peak underneath. If the bread is getting too brown, flip the sandwich back over. Continue flipping back and forth every 30 seconds or so to let the cheese melt fully without burning the outside of the bread.
