Creamy Bowtie Pesto Pasta Salad with Pesto Dressing is a quick and easy pasta salad side dish that is bursting with flavor and perfect as a summer side dish...and how can it not be? Just use store bought pesto as the base to this nearly homemade dressing, bowtie pasta shells and bits of fresh vegetables for a budget friendly summer salad.

12 oz. Bowtie Pasta
1/2 cup prepared pesto
1/2 cup mayonnaise
3/4 cup grated Parmesan cheese
1/4 cup olive oil
2 tablespoons water
1 cup chopped fresh spinach
1 cup grape tomatoes (quartered)
1/4 cup pine nuts

Steps:

  • Cook farfalle pasta according to package directions. Farfalle pasta is the same thing as bowtie or butterfly pasta and works great to hold heavy pesto dressing.
  • Drain pasta completely of boiled water and rinse with cold water to cool before moving on. Make sure pasta has no excess water.
  • In a separate bowl, add store bought jarred pesto, mayonnaise, grated Parmesan cheese, water, olive oil and mix dressing well.
  • Pour pesto dressing over pasta and mix well to evenly coat all of the pasta sides.
  • Add chopped spinach and grape tomatoes and toss again to combine all ingredients.
  • Optionally add a little salt and cracked pepper prior to serving.
  • Put in fridge for a few hours to get cold.
  • Serve pasta salad topped with pine nuts or one of the other suggestions in the recipe.

1 (16 ounce) package bow-tie pasta (farfalle)
1 (12 ounce) bag broccoli florets
1 (10 ounce) basket cherry or grape tomatoes
1 bunch green onions, sliced
½ cup chopped celery
½ red bell pepper, chopped
½ green bell pepper, chopped
2 cups creamy salad dressing (such as Miracle Whip®)
⅓ cup grated Parmesan cheese
¼ cup white sugar
½ teaspoon dried basil
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
  • Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
  • Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
  • Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.
  • Pour the salad dressing mixture over the pasta mixture; gently toss to coat evenly.
  • Refrigerate 3 hours to overnight before serving.

2 1/2 cups Progresso™ beef-flavored broth (from 32-oz carton)
1/2 cup barbecue sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup frozen corn (from 12-oz bag), thawed
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Add bell pepper; cook and stir 1 minute. Stir in pasta, broth, barbecue sauce, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover; cook 15 minutes, stirring occasionally, until pasta is tender.
  • Stir in corn and 1 cup of the cheese. Top with remaining 1/2 cup cheese. Cover; cook 3 to 4 minutes longer, until corn is hot and cheese is melted.

Bow Tie Pasta Salad with Chicken and Roasted Peppers image

6 ounces bowtie pasta
2 large ripe tomatoes, seeded and diced
2 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
Freshly ground pepper
2 bell peppers (red and yellow), halved lengthwise and seeded
1 small rotisserie chicken, shredded into large pieces
2 tablespoons chopped fresh parsley leaves

Steps:

  • 1. Position a rack about 6-inches from broiler and heat to high. Bring a medium-large pot of salted water to a boil. Add the pasta and cook, stirring often, until al dente, about 10 minutes. Drain well and rinse under cold running water. Spread out on paper towel to absorb excess moisture.
  • 2. Meanwhile, put the tomatoes in a small bowl and stir in 1 tablespoon vinegar, 1 tablespoon olive oil, and 1/4 teaspoon salt. Set aside to macerate for 15 to 20 minutes.
  • 3. Arrange the peppers on a broiling pan, cut side down and broil, until blistered and black in spots, 5 to 7 minutes. Transfer peppers to a bowl, cover with a lid or plate and set aside to steam for 10 to 15 minutes. Rinse or scrape off the skin; cut peppers into a dice.
  • 4. Mix the remaining 1 tablespoon vinegar, mustard in a large bowl, season with 1/2 teaspoon salt and some pepper. Whisk in the remaining 2 tablespoons olive oil until smooth. Add the tomatoes with accumulated juices, the roasted peppers, and parsley and toss lightly. Just before serving, add the chicken and pasta and toss gently until combined. Season with salt and pepper. Serve.

6 cups torn romaine
1-1/2 cups cubed cooked chicken breast
1 medium tomato, diced
4 bacon strips, cooked and crumbled
1/3 cup reduced-fat mayonnaise
1/4 cup water
1 tablespoon barbecue sauce
1-1/2 teaspoons white vinegar
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water. In a large bowl, combine romaine, chicken, tomato, bacon and pasta. , In a small bowl, whisk mayonnaise, water, barbecue sauce, vinegar and pepper. Pour over salad; toss to coat. Serve immediately.

6 cups torn romaine lettuce
20 bite size cherry tomatoes
6 bacon, strips cooked and crumbled

1 tablespoon barbecue sauce (any flavour is good)
1 1/2 teaspoons white vinegar
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water.
  • In a big serving bowl, combine the pasta, romaine, cherry tomatos and bacon bits.
  • In a small bowl, whisk together the mayonnaise, barbecue sauce, vinegar and pepper. Pour over pasta mixture and toss to coat evenly.
