3 tablespoons barbecue sauce
4 small boneless skinless chicken breast halves (1 pound)
2 small unpeeled red potatoes, thinly sliced
1 red bell peppers or 1 green bell pepper, seeded and sliced
1 green onion, finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
1 1/2 cups shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 375°F
  • Place a foil sheet, approximately 12x12 inches, on a work surface. Spoon about 1 teaspoon of the barbecue sauce in the center of the foil sheet. Place one chicken breast half over barbecue sauce and spread another teaspoon of sauce over chicken. Top with a quarter of the potato, bell pepper and onion. Sprinkle with a little of the salt and pepper.
  • Fold foil in half to cover contents; make narrow folds along edges to seal. Repeat with remaining ingredients to assemble three more packets. Place packets on a baking sheet and bake for 35 minutes.
  • Open foil packets with scissors and carefully pull back edges (contents may be very hot). Sprinkle a quarter of the cheese over the top of each chicken breast half and return to oven, unsealed, for 2 minutes or until cheese is melted. With a spatula, transfer the contents of each packet onto individual serving plates, if desired.

1/2 cup barbecue sauce (your favorite)
1/2 cup mayonnaise
2 scallions, sliced thin
2 tablespoons butter, room temperature
1/2 cup shredded cheddar cheese
salt and pepper
paprika

Steps:

  • Preheat oven to 350 degrees. Line a baking pan or dish with aluminum foil. Coat chicken in bbq sauce. Place in baking dish. Salt and pepper the chicken. In a small bowl, mix together the mayonnaise, butter, scallions and cheese. Divide mixture in four and top each breast with one portion. Sprinkle on paprika. Bake uncovered for 20 -30 minutes, depending on the size of the chicken pieces.

1-1/2 cups water
6 small boneless skinless chicken breasts (1-1/2 lb.), 1/2 inch thick
4 cups broccoli florets
1-1/2 cups KRAFT Shredded Cheddar Cheese
1/4 cup OSCAR MAYER Real Bacon Bits
1/2 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat oven to 400°F.
  • Combine stuffing mix and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with remaining ingredients; fold to make 6 packets.
  • Place in single layer on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening packets.
