GERMAN RED CABBAGE

German Red Cabbage image

Braised German Red Cabbage (Rotkohl) is as traditional as it gets and never absent at German festivals or restaurants. It gets its sweet and sour flavor from vinegar, brown sugar, apple and cloves.

Provided by Lauren Allen

Categories     Side Dish

Time 2h10m

Number Of Ingredients 9

1/2 large head Red cabbage (, about 5-6 cups)
1 apple (, cut in half)
1/3 cup apple cider vinegar
3 Tablespoons water
1/4 cup brown sugar
2 teaspoon salt
1/4 teaspoon pepper
4-5 whole cloves ( or 1/4 teaspoon ground cloves)
2 Tablespoons butter

Steps:

  • Cut the cabbage, shredding into thin, 1/8"-1/4" thick slices. Put half the shredded cabbage into a medium sized heavy pot.
  • Grate one-half of the apple on top of the cabbage in the pot. Poke the whole cloves into the other half of the apple and add to the pot.
  • Add the remaining shredded cabbage on top. In a small bowl add vinegar, water, sugar, salt and pepper. Stir to combine. Pour over cabbage.
  • Add 2 Tablespoons butter and cover the pot with a lid. Bring to boil, reduce heat to simmer, and cook 1 1/2 - 2 hours.
  • Remove apple with cloves and discard. Stir mixture and serve.

BLAUKRAUT (GERMAN BRAISED RED CABBAGE)

Blaukraut (German Braised Red Cabbage) image

Sweet and tangy, slow braised red cabbage, Blaukraut, is a must-have side with any German meal and a tasty way to get anyone to enjoy cabbage.

Provided by Sarah | Curious Cuisiniere

Categories     Side Dish

Time 2h30m

Number Of Ingredients 11

1 Tbsp salted butter
1 onion, (diced)
1 tart green apple ((like Granny Smith), cored and diced)
2 bay leaves
2 whole cloves
1/2 tsp whole peppercorns
1 lb red cabbage, (shredded)
1/2 tsp salt
1 c dry red wine ((like Merlot))
1/4 c red wine vinegar
1 Tbsp unbleached all-purpose flour

Steps:

  • Melt the butter in a large Dutch oven over medium high heat. Add the diced onions and saute for 2-3 minutes. Add the diced apples and continue to saute 2-3 minutes.
  • Tie the bay leaves, cloves, and peppercorns together in a cheesecloth. (Optional, but this makes for much easier removal later).
  • Add the cabbage, spices, salt, red wine, and red wine vinegar. Bring the mixture to a simmer.
  • Cover and simmer over low heat for 1.5 - 2 hours, checking occasionally to be sure there is enough moisture and the cabbage isn't sticking.
  • When the cabbage is tender to your liking, sprinkle 1 Tbsp of flour over the cabbage. Mix it in well and continue to cook the cabbage for 1-2 minutes, while any remaining liquid thickens.
  • This dish can be served immediately (remember to take out the bay leaves, peppercorn, and cloves) or it can be refrigerated for later. Some people swear that the flavor improves with time.

1/3 cup red wine vinegar
3 tablespoons packed brown sugar
1 tablespoon grated lemon rind
1/4 cup molasses
2 tablespoons all-purpose flour

  • Remove outer wilted and dry leaves from the red cabbage. Shred the cabbage as thin as possible. You can use a mandoline slicer if you have one.
  • Place the shredded cabbage into a large bowl. Salt the cabbage and pour the apple cider vinegar over it. Massage the cabbage with your hands for about 1 minute. The cabbage will change the color and slightly reduce in volume. Keep in mind that red cabbage juice can stain your hands and nails, so wear gloves if needed. Set the red cabbage aside for about 5 minutes.
