EASY RED PASTA SAUCE

Easy Red Pasta Sauce image

Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

Categories     Main Dish Recipes     Pasta

Time 1h

Yield 6

Number Of Ingredients 9

4 tablespoons olive oil
2 cloves garlic
¼ cup chopped onion
2 tablespoons dried parsley
1 tablespoon dried basil
ground black pepper to taste
1 (29 ounce) can Italian-style stewed tomatoes, drained
1 pinch crushed red pepper flakes
12 ounces angel hair pasta

Steps:

  • In a medium saucepan over low heat, warm oil and saute garlic; heat through until the garlic turns translucent, not brown. Add onion and cook over low heat until translucent; 5 to 10 minutes.
  • Add parsley, basil and ground black pepper; stir. Add tomatoes and cover; raise heat to medium and bring to a strong simmer. Lower heat and add red pepper flakes. Cover saucepan and cook for 25 to 35 minutes.
  • The sauce can be run in the food processor for 2 to 3 seconds to achieve a more uniform sauce or let the sauce cook over medium-low heat uncovered for 10 minutes or until it thickens.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain and serve with sauce.

BASIC RED SAUCE (SALSA DE CHILE ROJO)

Basic Red Sauce (Salsa De Chile Rojo) image

When you go out for Mexican food at your favorite little place, and your food's covered with that delicious red sauce, and you wish you could make it at home? Now you can! This is so simple to make! I found this recipe in one of my gazillion cookbooks. I decided to give it a try. I'd been using the same red sauce for years, and loved it, so I'm not sure why I even tried this one. But am I glad I did!!! lol This recipe is mild, so should you want yours more spicy, then you'll want to use the hotter dried chiles. Either way, I'm sure you will love it. Don't be afraid of the dried chiles if this is your first attempt. It really is simple to do, and the end result will be so worth it. Where I buy my dried chiles, actually it's Albertson's, there's a rack in the specialty aisle, and there are cellophane bags hanging up. Usually, the bags have the type of chile and how spicy hot it is. So, that should help you out some. If you can't find any, zmail me and I'll help you. This freezes well.

Cook and stir onion and garlic in oil in a 2-qt. saucepan until onion is tender. Add chiles and 2 cups of the reserved liquid , the tomato sauce, oregano, cumin and salt. Simmer uncovered 20 minutes. Cool.
  • Transfer to blender container; cover and blend on low speed until smooth. Strain. Refrigerate sauce no longer than 10 days.

CLASSIC RED SAUCE

Classic Red Sauce image

Provided by Food Network

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 8

1 28-ounce can whole peeled tomatoes
2 tablespoons extra-virgin olive oil
1/3 red onion, medium-diced
3 cloves garlic, cut into chunks
Pinch of red pepper flakes (optional)
Kosher salt and freshly ground pepper
2 tablespoons torn fresh basil
1 pound penne or spaghetti, cooked until al dente

Steps:

  • Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
  • Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
  • Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

  • Cocktail Sauce (United States) There are some who say that British chef Fanny Cradock created the original shrimp cocktail in 1967, but according to food historians, the concept of fresh seafood cooked, chilled and served with a spicy sauce originated in the United States sometime in the late 19th century.
  • Enchilada Sauce (Mexico) Enchiladas are a dish made of corn tortillas rolled around a filling and covered with a spicy red sauce. They originated in Mexico, near the Yucatan in pre-Columbian days.
  • Harissa (North Africa) Harissa—the word comes from the Arabic harasa, meaning “to pound” and that is exactly how the sauce/condiment is formed. Most food historians believe that chiles arrived in Africa when the Spanish occupied Tunisia in the early 16th century.
  • Ketchup (Great Britain or China) In the barest of kitchens, even in the cupboard of Old Mother Hubbard, you are almost certain to find a bottle of ketchup.
  • Marinara (Southern Italy) Questions, questions, so many questions. Marinara (the name itself refers to its origin) was born in southern Italy, near the sea (mar).
  • Red Curry Paste (Thailand) Kristen and I have so much in common. She's a food blogger. She loves creating fresh-in-the-kitchen as opposed to from-a-jar-at-the-supermarket.
  • Romesco (Spain) Catalonia, an autonomous community on the northeast tip of Spain, covers an area of nearly 12,400 square miles. The rugged Pyrenees rise to the north and beautiful Mediterranean beaches form the south and east borders.
  • Salsa (Mexico) This combination of chilies, tomatoes, and other spices) can be traced to the Aztecs, Mayans, and Incas. It was “discovered” by Spanish explorers upon the conquest of Mexico in 1519-1521 but was made centuries before that with the Aztec domestication of the tomato.
  • Sriracha (Vietnam) Sriracha might just be the world's coolest hot sauce. It's EVERYWHERE and seems almost as ubiquitous as ketchup. Less than two years ago the producer of the original Sriracha, Huy Fong Foods, sold 20 million bottles.
  • Sweet Chili (Thailand) Sweet chili sauce (also known as Thai sweet chili sauce) is a popular condiment of red chile peppers, rice wine vinegar, fish sauce, garlic, and sugar.

HOW TO MAKE A BASIC TOMATO SAUCE - FOOD NETWORK

From foodnetwork.com
Estimated Reading Time 2 mins
  • Add Olive Oil and Onions. Use a wide skillet or a wide-bottomed pot. Start with plenty of olive oil and add diced onion. Sauté until translucent and very soft.
  • Season. Season the onions with salt so they release their liquids. This will help to bring out the natural sweetness of the onions. Take your time with this — it’s the first step in layering good flavor.
  • Crush Tomatoes. Open a can of whole, peeled tomatoes and crush them with clean hands. The pros like to use San Marzano tomatoes for the best flavor.
  • Add the Tomatoes and Simmer. Add the tomatoes to the garlic and onions. Taste and season. Simmer for about 20 minutes until the flavors come together.
  • Add Flavor and Spice. We're making a basic tomato sauce here. If you want to mix it up, try adding chili flakes, capers or olives while it simmers.
  • Enjoy! And those are the basics for homemade tomato sauce. If you like a smoother sauce, just purée in a blender when you're done cooking. Use it with pasta or as an ingredient in stews like cacciatore.

  • I have boiled the spaghetti pasta for 10 minutes till al dente. We keep the pasta slightly undercooked because we will cook it again with the sauce. Once pasta is boiled, put it on a colander and pour some water on it to stop the cooking process. Sprinkle some oil over it and keep it aside. We will use some pasta water in the preparation later so keep aside the pasta water that we got after boiling the pasta.

  • Fill a large pot ¾ full with water and bring to a boil, mixing in one bouillon cube. Mom is convinced that the bouillon takes away any bitterness from the chiles, so it’s an important ingredient in her particular sauce. Add the chile pods, cover, and simmer for 45 minutes, until the pods are fully hydrated. Do not discard the water. Let cool enough to work with.
  • Next, remove the heads from the chiles. This can be done before you boil them (and many recipes recommend this), but mom prefers to do it after boiling them because the stems/heads come off easier this way.
  • Puree the chiles in a blender in batches. Add about 8-10 chiles at a time along with 1 cup of the boiling liquid. Blend until smooth. This may require several batches.
