1 pound ground beef
½ cup fine dry bread crumbs

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a medium bowl, whisk together egg, salt and pepper. Place ground beef and bread crumbs into the mixture. With hands or a fork, mix until well blended. Form into 4 patties approximately 3/4 inch thick.
  • Place patties on the prepared grill. Cover and cook 6 to 8 minutes per side, or to desired doneness.

1 teaspoon kosher salt
Freshly ground black pepper
Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.

1 lb good quality lean ground beef
1 tablespoon olive oil
2 garlic cloves
1/4 teaspoon salt
2 -3 tablespoons Worcestershire sauce
1 tablespoon horseradish (optional but good) (optional)

Steps:

  • Chop garlic cloves on wooden surface then put in mortar and pestle.
  • Add salt and olive oil and make a paste.
  • Add this to the meat along with the Worcestershire and horseradish.
  • Mix everything and adjust ingredients to suit your taste.
  • When you make the patties place an indention in the middle of each one with your thumb (almost all the way through). This keeps the burgers from shrinking. We like ours thick and I like them to stay that way!
  • Salt and Pepper according to taste when done.
  • An added note on 04-03-06 - Thank you all for your positive feedback. It's nice to get confirmation on something I thought was good and different.
  • Please note that I usually add more ingredients than what is called for above. I nuke a tiny hamburger (meatball size) and taste. I usually add more of everything. The horseradish does not taste like horseradish when cooked. It gives it a flavor note that otherwise wouldn't be there. Unless you are allergic to it, please try it.

500g pack lean minced beef , preferably organic
1 tsp mild chilli powder
4 slices mild cheddar , if you want to make cheeseburgers
4 burger buns
choice of lettuce , cucumber, gherkin, tomato and red onion
ketchup or mayonnaise , or both

Steps:

  • Flavour the meat: Put the meat in a mixing bowl, then sprinkle over the chilli powder and a little salt and pepper. Mix well with your hands or use a fork. The mild chilli powder gives the meat added flavour without making it too spicy.
  • Shape into burgers: Divide the mixture into 4 equal pieces, then shape with your hands into round burgers about the width of the buns, or pack the mixture into large presentation rings (if you have them) placed on a chopping board. You need to press down on the meat to compact it, then carefully lift off the rings - a bit like making sandcastles.
  • Now get cooking: Fry the burgers on a hot griddle or grill them outside on the barbecue for 5 mins on each side, turning them carefully with a metal spatula. Take care as hot fat from the meat may spit a little.
  • Top with cheese and toast the buns: If you want to make cheeseburgers, put a slice of cheese on top of the burgers when you turn them over and let it melt while the other side cooks. When they are ready, cut the burger baps in half and warm them in the toaster or on the barbecue - take care that you don't burn them.
  • Prepare the toppings: Meanwhile, prepare the toppings of your choice. Separate the lettuce into leaves. Then, using a sharp knife, thinly slice the tomato, cucumber and gherkin on a separate board to the one you prepared the burgers on. Peel and finely chop the red onion.
  • Assemble and enjoy: Spread a little mayonnaise or ketchup - or both if you like - onto the toasted buns, then top with your burgers and salads of your choice, followed by the remaining half bun.

  • Divide the beef into 2 patties, each about ¾-inch (2 cm) thick and 3 ½ inches (9 cm) in diameter. Transfer the patties to a plate or a baking sheet lined with parchment paper and refrigerate for 30 minutes.
  • Remove the patties from the fridge and season on both sides with salt and pepper.
  • Heat a large cast-iron skillet over medium-high heat. Add the oil to the pan and swirl to evenly coat. Place the patties in the skillet and cook, undisturbed, on the first side for 5 minutes, until a brown crust forms.

  • Preheat grill to medium-high heat. Mix 1 pound lean meat, add-ins and 2 tablespoons of the Kraft barbecue sauce. Shape into 4 patties.
  • Grill 7-9 minutes on each side or until cooked through, brushing with remaining 2 tablespoons Kraft barbecue sauce during last 2 minutes of grilling time.
  • Place on patties on buns.
  • Note: For a further flavor kick, try a Kraft singles slice with the pork or beef burgers and cranberry sauce with the turkey burger.
