This is a great casserole - low cost, easy and quick preparation, and great taste! You'll be surprised at how good it is - especially suited for fall days.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, fry bacon until browned. Reserve bacon fat for sauteeing chicken later. Add onions and carrots to skillet and saute 2 minutes. Add mushrooms, stock, barley, thyme, marjoram, parsley, bay leaf and pepper to taste. Mix all together and spread mixture in a 9x13 inch baking dish. Add green bell pepper on top and stir to settle.
- Heat reserved bacon fat in skillet and brown chicken. Place browned chicken on top of barley mixture, cover baking dish and bake in the preheated oven for 1 hour and 10 minutes.

BAKED BARLEY CASSEROLE
This is a very simple barley dish. Easy to put together. This is a great recipe to make during Lent, although any time is a good time!

- 1. Brown the barley in a little butter and the oil. Place in a casserole.
- 2. Brown the onions in butter, and add them to the barley. Add salt, pepper and poultry seasoning.
- 3. Add 3 cups chicken broth, cover and place in oven at 350 degrees for about 1 hour, or until moisture is almost absorbed.
- 4. Add another 2 cups broth, and cook, covered, until absorbed (approximately 45 more minutes).
CHICKEN MUSHROOM BARLEY CASSEROLE
This barley recipe combines mushrooms and chicken to create a hearty and nutritious stew like casserole.

- Preheat oven to 425º F.
- Cut the chicken into bite size pieces, slice the mushrooms, rinse the barley, dice the bacon and onion, measure out chicken broth.
- In a skillet or dutch oven heat the bacon over medium heat. Cook for about 4 minutues.
- If there is too much fat, you can soak some up with a paper towel. Add the onion and cook for about 3 minutes to soften.
- Add the diced chicken, and cook for about 4 minutes so meat is no longer pink.
- Toss in the sliced mushrooms and cook for about 4 minutes so they start to cook down and release liquid.
- Remove the pan from the heat.
- If you have used a dutch oven, you can continue with the recipe in the same pot. If you have used a skillet, prepare a casserole dish with cooking spray.
- Add the rinsed barley, chicken broth and seasonings to the cooked ingredients. Combine and place in the casserole dish, or leave in the dutch oven.
- Cover and place in the oven. Bake for about 1 hour.
- Remove from oven, dish into bowls and garnish.

- Heat 2 teaspoons of olive oil in a large saucepan set over medium-high heat. Add the chicken, ½ teaspoon salt and ½ teaspoon ground pepper, and cook until the chicken is cooked through, about 5 minutes. Transfer the chicken to a plate and keep warm.Heat the remaining 2 teaspoons of olive oil in the saucepan. Add the onion, carrots and celery. Cook, stirring occasionally, until the vegetables soften, about 5 minutes.Add the garlic, thyme and remaining ½ teaspoon salt and ½ teaspoons ground pepper. SCALLOPED BARLEY CASSEROLE

- Preheat the oven to 375 degrees F. Butter a 1 1/2-quart baking dish.
- Put the bacon in a cold skillet and cook over medium heat, stirring occasionally, until crisp, about 7 minutes. Transfer the bacon with a slotted spoon to a paper-towel-lined plate to drain. Add the butter to the same skillet with the bacon fat and cook, stirring, until melted. Add the garlic and onion and cook until translucent, about 3 minutes. Add the barley and cook, stirring, until it begins to brown, about 3 minutes. Season with 1/2 teaspoon salt and a couple turns of pepper. Stir in the chicken broth and heavy cream. Bring to a boil and cook until the liquid begins to thicken slightly, about 2 minutes. Stir in the bacon and 3/4 cup of the Cheddar. Pour into the prepared baking dish. Cover tightly with foil.
- Bake until the casserole is bubbling, about 25 minutes. Remove the foil and stir. Sprinkle with the remaining 1/4 cup Cheddar and bake, uncovered, until the cheese is melted and most of the liquid is absorbed, 10 to 15 minutes. Let sit for a few minutes before serving. Sprinkle with chopped parsley.

- Slice the mushroom caps and chop the stems. Heat the butter in a skillet and add the chopped onion. Cook for 3 or 4 minutes and add the mushrooms. Cook another 4 minutes, stirring occasionally. Add the barley and brown it lightly, mixing it well with the onions and mushrooms. Season to taste with salt and pepper and pour into a buttered casserole. Add enough boiling broth to cover the mixture and come 1/2" above it. Cover the casserole tightly and bake in a 350°F. oven for 25 minutes. Taste the barley for doneness. Add more broth, if necessary, and continue cooking until the liquid is absorbed and the barley tender. Serve as an accompaniment to duck, game, goose, squab and other kinds of poultry - wherever you would use wild rice.
- Variations
- Add finely slivered buttered almonds to the barley just before serving.
- Cook chicken gizzards in a well-seasoned broth and use the broth to cook the barley. Add the thinly sliced gizzards at the last minute.
- Add sautéd chicken livers and some chopped fresh parsley to the barley casserole just before serving.
- Substitute 1/2 cup finely chopped green onions for the onion and add 1/4 cup finely chopped celery and 3/4 cup thinly sliced water chestnuts. Season the broth with a few dashes of soy sauce. Serve this oriental version of barley casserole topped with a sprinkling of chopped parsley.
CHICKEN BARLEY
This thick, creamy pottage, somewhere cosily between a stew and a slightly soupy, sticky risotto, offers instant comfort. This is the sort of food that gets left behind in the Instagram age: not pretty to look at, but gratifyingly reassuring to eat. It's not hard to remove the skin from a clutch of chicken thighs, and you can fry it to make chicken crackling to be crunched as it is. Nothing would go wrong if you were to keep the skin on but, for once, I prefer to keep the fat out of it. Do not even think about using boneless thigh fillets. For US cup measures, use the toggle at the top of the ingredients list.

- Tip the prepared vegetables into a heavy-based casserole that comes with a lid, then add the barley and chicken thighs. Pour the stock into a jug, stir in the mustard, then pour this over the contents of the pan. Bring to the boil - and this is when better-behaved cooks would tell you to skim off the frothy bits that rise to the top but, frankly, I'm too lazy to - then turn down the heat, partially cover and let simmer for 1 hour, though check every now and again to make sure it's not bubbling away too much or dolefully not enough, giving a stir as you do so. If it looks as if it's boiling dry, then pour in a little boiling water. Once the hour's up, the barley, vegetables and chicken should be tender and the juices all but absorbed. Not that a little soupiness would be the end of the world. Remove from the heat and let stand with the lid off for 10 minutes. If you haven't used a skinless thighs, remove and discard the chicken skin. Using a couple of forks, pull the meat off the bones, and discard the bones (my particular treat is to chew the cartilage off them before chucking them away, but it's not to everyone's taste). Then throw in some of the chopped parsley and stir it through the stew, and put the rest on the table for people to sprinkle over their own bowls as they eat. It probably goes without saying that if you're feeding small children, predisposed to be pernickety about Green Bits, then you would be ill-advised to stir any parsley into the stew.

- In a small microwave-safe dish, combine the olive oil with the onion and garlic. Microwave on high for 2 minutes or until the onion is tender.
- Then combine the onions, garlic, barley, tomato juice, thyme, oregano, salt, pepper, red bell pepper, mushrooms, and vegetable broth in a 3-quart slow cooker (don't use a larger crock pot). Cover and cook on low for 6 to 8 hours or until the barley and vegetables are tender. Sprinkle with the toasted pine nuts just before serving.
- If you have a newer crock pot, check the barley at 4 1/2 hours to see if it's done. The vegetables should be done at that point too since your slow cooker cooks hotter .

CHICKEN & BARLEY CASSEROLE
This is one of my family's favorite recipes. I've typed it here for posterity, as I keep losing my copy at home. You can make this in an electric skillet or in a large skillet on top of the stove. You can also use a cut up chicken, or a package of 6 thighs, or whatever your favorite chicken parts are, in this dish. Instead of frozen artichoke hearts, I've also used marinated ones. Enjoy!

- Sprinkle chicken with salt, pepper and paprika.
- In a wide frying pan over medium heat, melt 2 tablespoons of the butter. Add the chicken and cook until well browned on both sides. Add a little more butter if needed. Remove the chicken from the pan and set aside.
- In the same pan, melt the remaining butter. Add the mushrooms and cook until soft. Remove mushrooms from pan and set aside.
- Add barley and onion to pan. Cook, stirring, until onion is soft. Add basil and one 14 oz. can chicken broth. Bring to a boil, then cover the pan, reduce heat to low and simmer, stirring occasionally, for 30 minutes.
- Stir in the mushrooms and arrange the chicken pieces over the barley mixture. Pour the other can of chicken broth and sherry over all. Cover and simmer for 20 minutes. Gently mix in artichoke hearts and continue to simmer until barley is tender (about 10 more minutes).
- To serve, skim off any excess fat and sprinkle with parsley.

- Put the chicken into a deep, snug-fitting pan. Add the celery, onion, half the carrots, the bay leaves, peppercorns, and salt. Cover with 2 litres cold water and bring to the boil. Reduce the heat, cover, then simmer for 1 hour until the chicken is cooked, turning it halfway through. Lift the chicken onto a plate, cover and set aside to cool slightly. (You can do this a day ahead and leave the chicken to cool in the liquid.)

- Pat chicken thighs dry with a paper towel. Season both sides of each thigh liberally with salt, pepper, and Italian seasoning.
