LIGHT CHICKEN POTPIE

1 cup all-purpose flour, plus more for dusting
1/4 teaspoon baking powder
1/4 teaspoon fine salt
4 tablespoons cold unsalted butter, cut into small pieces
1 large egg
2 tablespoons 2% milk
2 small russet potatoes
4 1/2 cups low-sodium chicken broth
5 medium carrots, cut into large chunks
1 to 2 teaspoons chopped fresh thyme
2 tablespoons extra-virgin olive oil
1 large onion, finely diced
3 tablespoons all-purpose flour
1/3 cup 2% milk
3 stalks celery, sliced
3 cups shredded rotisserie chicken, skin removed
1/2 cup fat-free plain Greek yogurt
1 cup frozen peas
1/2 cup minced fresh parsley
Kosher salt and freshly ground pepper

Steps:

  • Prepare the crust: Pulse the flour, baking powder and salt in a food processor until combined. Add the butter, one piece at a time, pulsing until the mixture looks like coarse meal. Separate the egg; refrigerate the egg white. Beat the egg yolk and milk in a bowl, then add to the food processor, pulsing until the dough comes together. Turn out onto a lightly floured surface and gather into a ball. Flatten into a disk, wrap in plastic wrap and chill at least 1 hour.
  • Meanwhile, make the filling: Preheat the oven to 425 degrees F. Prick the potatoes with a fork and bake directly on the oven rack until tender, about 45 minutes. Cool slightly, then peel and break into small pieces.
  • Bring the chicken broth, carrots and thyme to a simmer in a small saucepan over medium heat and cook 2 minutes; cover and keep warm. Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and cook until soft, about 8 minutes. Sprinkle in the flour and stir until lightly toasted, about 3 minutes. Add the milk, celery, potato pieces and the warm broth mixture and simmer until thickened, about 15 minutes. Remove from the heat and stir in the chicken, yogurt, peas and parsley. Season with salt and pepper.
  • Transfer the filling to a 2-quart casserole dish. Roll out the dough on a lightly floured surface until about 1/2 inch thick and slightly larger than the dish. Beat the reserved egg white in a bowl; brush over the dough and season with salt and pepper. Press the dough against the sides of the dish. Place on a baking sheet and bake until the crust is golden brown, 20 to 25 minutes.

Sort of a homemade BBQ Chicken Hot Pocket. You can also do this with beef. I cook these in large muffin pans.

18 ounces barbecue sauce, bottled
1 lb boneless chicken breast, fillets
16 ounces bread dough, I also use pre-made empanada discs
1 onion, chopped
1 small green pepper, chopped
1/4 cup dill pickle
1 egg, beaten for egg wash

Steps:

  • Place chicken in baking dish, fill with enough water to cover chicken.
  • Bake at 425F for 35 minutes.
  • Drain water.
  • Let chicken cool 5 minutes.
  • Using two forks, shred chicken.
  • Add onions, peppers and bbq sauce and return to oven for another 10-15 minutes. Stirring if it starts to char.
  • Remove chicken from oven.
  • Stir in pickles.
  • Roll dough out thin into 8 inch discs.
  • Place the dough discs into one of the sections of the muffin pan. The dough will overlap, you will need it.
  • Fill the dough cup with the chicken gravy mixture.
  • Fold the flaps over the top of the chicken mixture, brushing the egg wash onto the dough flaps to "glue" the dumpling closed.
  • Repeat until out of chicken mixture.
  • Lower oven to 350°F
  • Bake for 10-12 minutes.
  • Let sit for 10 minutes.

1 teaspoon butter
2 cups chopped onions
1/2 cup chopped green bell pepper
1/3 cup diced seeded poblano chiles or 1 (4 1/2 ounce) can chopped green chilies, drained
1 small garlic clove, minced
1 1/2 teaspoons cumin seeds
1 teaspoon ground coriander
1/4 cup cider vinegar
4 cups shredded cooked chicken breasts (about 1 1/2 pounds)
2 tablespoons brown sugar
1 ounce unsweetened chocolate, grated
1 (12 ounce) bottle chili sauce
1 (10 1/2 ounce) can low sodium chicken broth
1 (11 1/2 ounce) can refrigerated cornbread twists dough

Steps:

  • Melt butter in a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add onion, peppers and garlic and saute 5 minutes. Stir in cumin and coriander and cook 2 minutes.
  • Stir in vinegar, scraping skillet to loosen browned bits. Add the chicken and the next 4 ingredients and cook 15 minutes or until thick, stirring occasionally.
  • Spoon chicken mixture into 11x7 inch baking dish coated with cooking spray.
  • Unroll corn bread dough, separating into strips. Place strips in a lattice fashion over chicken mixture.
  • Bake at 375 degrees for 25 minutes or until golden brown; let stand 15 minutes before serving.

1 tablespoon olive oil
1 tablespoon unsalted butter
2 cups chopped onion
Two 4.5-ounce cans of chopped green chilies
1 teaspoon minced garlic
2 teaspoons cumin seeds
1 teaspoon ground coriander
1/4 cup vinegar (preferably cider vinegar)
5 previously cooked chicken legs, shredded
2 tablespoons brown sugar
1-ounce unsweetened chocolate, finely chopped
One 12-ounce bottle chili sauce
1 cup chicken broth
2 boxes cornbread mix (I use Jiffy)
2 large eggs
2/3 cup milk (water or chicken broth also work well)
Salt and pepper to taste

Steps:

  • Preheat oven to 375.
  • In a large skillet melt butter w/ olive oil over med. heat. Cook onion 'til soft.
  • Add green chilies, garlic, cumin and coriander. Cook 3 to 4 min. Add vinegar, scraping pan to loosen any caramelization. Add chicken, brown sugar, chocolate, chili sauce, and chicken broth.
  • Stir to combine & check for seasoning. Bring to simmer and stir, cooking gently till thickened. Allow to cool. Then mix cornbread with eggs and milk (or water with a pinch of sugar or even chicken broth) in a medium bowl.
  • Spray a 9x13 pan with cooking spray then add chicken mixture. Top w/ cornbread mix, smooth. Bake 'til cornbread is lightly golden brown on top (about 23 min).
  • Serve hot.

2 lbs boneless chicken breasts
2 cups low-fat chicken broth
12 ounces mixed vegetables, frozen
1 (15 ounce) can diced potatoes, drained
1/2 large onion, pureed
2 stalks celery, diced
1 teaspoon minced garlic (about 2 cloves)
1 1/2 tablespoons cornstarch
1 1/2 tablespoons poultry seasoning
1 teaspoon salt
1 (6 ounce) can pop biscuits (Pillsbury Golden Layer Flaky Biscuits only 100 calories each!)

Steps:

  • Dice celery and puree onion.
  • MAKE IT NOW.
  • INSTANT POT: Place chicken, celery, onion, broth, frozen vegetables, potatoes, garlic, corn starch, poultry seasoning and salt into instant pot or pressure cooker. Stir gently until combined. Seal pressure cooker. Cook on manual (High) for 25 minutes. Meanwhile, bake pop biscuits according to directions. When instant pot finished do a quick release. Take two forks, shred chicken then stir to combine. Serve in bowls with a biscuit on top.
  • SLOWCOOKER: To make in slow cooker cook on LOW for 5-6 hours or on High for 3-4 hours, until chicken is tender. Add biscuits to the top, cover with lid and continue cooking 1 hour.
  • MAKE IT A FREEZER MEAL.
  • Place chicken, celery, onion, broth, frozen vegetables, potatoes, garlic, poultry seasoning and salt into a labeled gallon-size (4 L) freezer bag; swish to mix. Seal, removing as much air as possible, and freeze.
  • THAW AND COOK.
  • Place bag in the refrigerator for at least 12 hours or up to 24 hours to thaw or "Quick thaw" by running under water until meal can be broken apart.
  • INSTANT POT: Transfer contents into instant pot or pressure cooker. Seal pressure cooker. Cook on manual (High) for 25 minutes. Meanwhile, bake pop biscuits according to directions. When instant pot finished do a quick release. Take two forks, shred chicken then stir to combine. Serve in bowls with a biscuit on top.
  • SLOW COOKER: To make in slow cooker cook on LOW for 5-6 hours or on High for 3-4 hours, until chicken is tender. Take two forks, shred chicken then stir to combine. Mix together cornstarch and 1/4 cup (60 mL) water with fork, stir into slow cooker. Add biscuits to the top, cover with lid and continue cooking 1 hour.

1 cup cubed peeled baking potato

1 cup cubed peeled celeriac (celery root)
1 cup thick slices parsnip
1 (10 ounce) package frozen pearl onions
1 lb boneless skinless chicken breast, cut into bite sized pieces
2/3 cup all-purpose flour, divided
1 1/2 cups nonfat milk
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh thyme
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
cooking spray
1 sheet frozen puff pastry, thawed

Steps:

  • Preheat oven to 400 degrees.
  • Bring broth to a boil in a large Dutch oven.
  • add peas and next 5 ingredients (through onions) to pan; cover, reduce heat, and simmer for 6 minutes.
  • add chicken, cook for 5 minutesor until chicken is done.
  • remove chicken and vegetables from broth with a slotted spoon, place in large bowl.
  • increase heat to medium.
  • lightly spoon flour into dry measuring cups, level with a knife, place all but 1 tablespoon flour in a medium bowl.
  • gardually add milk to bowl, stirring with a whisk until well blended.
  • add milk mixture to broth, cook for 5 minutes or until thickened, sitrring frequently.
  • stir in chicken mixture, parsley, thyme, salt, and pepper.
  • spoon mixture into an 11x7 inch baking dish coated with cooking spray.
  • sprinkle remaining 1 tablespoon flour on work surface, roll dough into a 13x9 inch rectangle. place dough over chicken mixture, pressing to seal at edges of dish. cut small slits into dough to allow steam to escape.
  • coat dough lightly with cooking spray.
  • place dish on a foil lined baking sheet.
  • bake at 400 degrees for 16 minutes or until pastry is browned and filling is bubbly.
