BIG BATCH FUDGY BROWNIES
Steps:
- Heat oven to 350°F.
- Melt butter and chocolate in 3-quart saucepan over low heat, stirring occasionally, 5-8 minutes or until smooth. Remove from heat; stir in sugar. Add sour cream, eggs and 2 teaspoons vanilla; mix well. Stir in flour and salt just until moistened.
- Spread batter into greased 15x10x1-inch baking pan. Bake 20-25 minutes or until brownie begins to pull away from sides of pan. (Do not overbake.) Cool completely.
- Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring occasionally, 3-5 minutes or until smooth. Stir in powdered sugar, 1/2 teaspoon vanilla and enough milk for desired spreading consistency. Spread over cooled brownies. Cut into bars.

FUDGE BROWNIES
Steps:
- Preheat oven to 180 degrees. Line a 9x13 inch pan with foil or parchment paper. Butter it generously. Set aside.
- Melt the butter and chocolate till smooth. Whisk in the coffee powder if using. Set aside to cool slightly.
- Beat the eggs, sugar and vanilla extract till thick and doubled in volume.
- Add the melted butter-chocolate and beat till combined.
- Sift in the flour, cocoa powder and salt and fold in. Fold in the chocolate chips.
- Pour into the prepared pan and bake for 30 minutes.
- Pull out of the oven and cool in pan completely. Best is to cool it overnight.
- Slice and enjoy!
CHOCOLATE-FUDGE BROWNIES
Can one ever have too many brownies? If using semisweet chocolate instead of bittersweet, do cut back on the amount of sugar called for by 2 tblsps. :-)

- Butter and flour a 13 x 9 inch baking pan.
- Melt chocolate with butter, stirring, until mixture is smooth.
- Let cool until lukewarm.
- Stir in sugar, vanilla and eggs, one at a time, stirring well after each addition.
- Stir in salt and flour, stirring just until combined.
- Stir in chocolate chips and walnuts.
- Pour into prepared baking pan and bake for 25-30 minutes, or until a tester comes out with a few crumbs attached.
- Let cool completely and cut into 24 bars.
BANGOR BIG FAT FUDGE BROWNIES

- Preheat oven to 350*F.
- Cream butter, sugar, and vanilla in mixing bowl, and beat in eggs.
- In another bowl, stir together flour, cocoa, baking powder and salt with a fork, then blend dry ingredients into egg mixture, but do not over-beat.
- Spread batter into an ungreased 8-inch square pan, and bake 40-45 minutes, until brownie begins to pull away from the edges of the pan.
- Cool completely. Dust with powdered sugar, and cut into squares.

SERIOUSLY SINFUL CHOCOLATE FUDGE BROWNIES
I have never known a more popular chocolate brownie! I originally made these while working at a prestigious local hotel...We used to serve them just warmed enough to melt the fudge icing with a dollop of good vanilla ice cream or whipped cream...delicious. I also used to make these every year for a local charity bake sale. Every year we put the price up and every year people used to queue up for them and buy them by the handful. Over the years I have had more requests to make these than for any other kind of cake. Everybody seems to love them...I hope that you do too.

Steps:
- Melt the butter and chocolate in a large saucepan.
- Add the sugar and remove from the heat. Allow to cool slightly.
- Add the flour, eggs, vanilla essence and nuts if using them.
- Beat until smooth. Pour into a lined tin. Cook in a moderate oven until an inserted skewer comes out clean.
- For the icing:.
- Melt the butter with the milk. Add the icing sugar and sifted cocoa powder.

These brownies are extra-thick and fudgy and have become my all time favorite.

- Preheat oven to 350. Grease and flour one 9 inch square baking pan, tapping out excess flour.
- Melt the butter and unsweetened chocolate in the top of a double boiler and then let cool for about 15 minutes.

These are AWESOME! Raspberry and Chocolate just seem to go together somehow, and these are just decadent! I once had Raspberry Chocolate Brownies made by a gourmet chef, and these are just as good as or better than they were! The extra work is worth it...TRUST ME :)

Steps:
- Preheat oven to 350 degrees.
- Butter and flour an 8 inch square pan.
- Melt butter and bittersweet chocolate in a small heavy saucepan on low heat or in microwave until melted.
- Allow to cool.
- Beat eggs, sugar and vanilla in a large bowl until light and fluffy.

- Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.

- Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
- Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
- In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
