Sweet, ooey gooey, monkey bread gets a Cajun twist with my lightened-up Banana's Foster Monkey Bread. This decadent treat is complete with a bourbon caramel sauce that will have you thinking you're in the French Quarter!

2 7.5 oz cans of biscuits
3 bananas (peeled and sliced)
1/2 cup swerve (granular)
1/2 Tbsp molasses
2 tsp cinnamon
Bourbon Caramel Sauce
1 cup swerve (granular)
1 Tbsp molasses
1/2 cup half and half
4 Tbsp unsalted butter
Pinch of salt
1 Tbsp vanilla extract
2 Tbsp bourbon

Steps:

  • Preheat oven to 350 degrees. Heavily grease a bundt pan with nonstick cooking spray. Set aside.
  • Combine ½ cup swerve granular and ½ tablespoon of molasses to create a "brown sugar". Mix well. Add cinnamon and mix. Cut the biscuits in half and roll each piece in the cinnamon sugar mixture.
  • To make the caramel sauce, in a medium saucepan, combine 1 cup of swerve, granular and 1 tablespoon of molasses. Stir the mixture to create "brown sugar".
  • Add half and half, butter, and pinch of salt. Bring to a boil over medium heat.
  • Stir continuously, cook until the mixture thickens and deepens in color, approximately 7-9 minutes.
  • Add vanilla extract and bourbon. Continue to cook for another 1-2 minutes.
  • Line the bottom of the bundt pan with half of the sliced bananas. Drizzle 1/3rd of the caramel sauce over the bananas.
  • Layer the sugar-coated biscuits over the bananas and caramel in the pan.
  • Add the remaining banana slices in an even layer over the rolls. Drizzle ½ of the caramel sauce over the bananas and add the remaining biscuit halves.
  • Pour the remaining caramel sauce over the final layer of rolls.
  • Place the bundt pan on a rimmed baking sheet and bake for 30 minutes.
  • Allow the pan to rest for 5-10 minutes. Turn out onto a large serving dish that is at least a couple inches wider than the bundt pan when turned out. Serve immediately.

1 tablespoon ground cinnamon
2 (7.5 ounce) packages buttermilk biscuit dough, cut into quarters
2 ripe bananas, coarsely chopped
¼ cup chopped pecans
½ cup butter
½ cup packed light brown sugar
1 teaspoon vanilla

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease a loaf pan.
  • Shake the sugar and cinnamon together in a large plastic bag; add the biscuit dough, bananas, and pecans to the bag and shake to coat evenly. Pour the mixture into the prepared loaf pan.
  • Melt the butter in a saucepan over medium heat. Stir the brown sugar into the melted butter until completely dissolved. Add the vanilla and stir well. Pour the mixture over the biscuit dough.
  • Bake in the preheated oven until golden brown, 30 to 40 minutes. Allow to cool about 10 minutes before serving.

4 medium-ripe bananas, mashed (1 2/3 cups)
2 large eggs
1 cup granulated sugar
1/2 cup coconut oil, melted
3 tablespoons plain yogurt
1 teaspoon rum extract
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
4 tablespoons (1/2 stick) unsalted butter
1/2 cup dark brown sugar
1/4 cup spiced rum
1 teaspoon finely grated orange zest
Vanilla ice cream, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-4-inch loaf pan with cooking spray.
  • Combine the bananas, eggs, sugar, coconut oil, yogurt, and rum and vanilla extracts in a medium bowl and stir.
  • Whisk together the flour, baking powder and salt in a large bowl.
  • Make a well in the center of the dry ingredients. Pour the wet ingredients into the dry ingredients and stir until the flour is incorporated and the batter is smooth. Pour the batter into the prepared loaf pan and bake until golden brown and a skewer inserted into the center of the loaf comes out clean, about 1 hour. Remove from the oven and set aside while you make the glaze.
  • Melt the butter in a saucepan over medium heat. Add the brown sugar and 1/2 cup water and stir. Cook until the sugar dissolves, and then continue cooking another 3 to 5 minutes over low heat until the mixture bubbles around the edges. Turn off the heat and carefully (to prevent flaming) stir in the rum and the orange zest.
  • Slowly pour half of the glaze over the banana bread, allowing it to seep into all the surfaces. Wait until the glaze has been absorbed, about 30 minutes, and then turn the loaf out of the pan.
  • Slice and serve with vanilla ice cream, and the remaining glaze.

¼ cup (57 grams) unsalted butter
1 cup (220 grams) firmly packed light brown sugar
½ cup heavy whipping cream, warmed
2 tablespoons bourbon
Pinch kosher salt
4 ripe bananas, sliced
¾ cup (150 grams) granulated sugar
1½ teaspoons (3 grams) ground cinnamon
Basic Pull-Apart Bread Dough

Steps:

  • Spray 9 wells of 2 (6-cup) jumbo muffin pans with cooking spray.
  • In a large skillet, melt butter over medium-high heat. Add brown sugar, stirring occasionally, until mixture is amber colored, 3 to 4 minutes. Remove from heat, and stir in cream, bourbon, and salt. Add sliced bananas, tossing to coat. Set aside until slightly thickened and cool enough to handle, 15 to 20 minutes.
  • In a medium bowl, stir together granulated sugar and cinnamon. On a lightly floured surface, turn out dough. Punch dough down, and gently shape into a ball. Cover and let rest for 10 minutes.
  • Using kitchen shears, snip dough into ½-inch pieces. Roll dough pieces in cooled caramel sauce, and dredge in sugar mixture to coat. Place about 1 tablespoon caramel and bananas in bottom of each muffin cup. Top with 3 to 4 sugar-coated dough balls. Repeat layers, drizzling with caramel and bananas, and topping with 3 to 4 more dough balls. Drizzle once more with caramel and bananas. Place muffin pans in a roasting pan to prevent dripping into bottom of oven. Let rise in a warm, draft-free place (75°F) for 25 to 30 minutes.
  • Preheat oven to 350°F.
  • Bake until golden brown, 30 to 35 minutes. Let cool in pan for 10 minutes before turning monkey breads out onto their tops to let cool completely. (This will allow the caramel to harden slightly, so they can be served right-side up without completely falling apart.) Serve warm with a drizzle of any remaining caramel.

2 large bananas, peeled and halved lengthwise
2 ounces dark or light rum
Zest of 1/2 orange
Vanilla bean ice cream, for serving

Steps:

  • Prepare a grill for medium-high heat.
  • Heat a cast-iron skillet over direct heat. Melt the butter until it begins to brown, then stir in the sugar and cinnamon until the sugar melts. Stir in the salt. Add the bananas in an even layer and cook, turning the bananas once to coat in the sauce, until lightly browned, 1 to 2 minutes per side.
  • Remove the skillet from the heat and add the rum. Light the sauce with a lighter and allow it to flame. Once the flames have extinguished, baste the bananas with the sauce. Add the orange zest. Serve warm over vanilla ice cream.
  • (Alternatively, you can cook the bananas over medium-high heat on a stovetop.)

2 containers grand buttermilk biscuit

⅔ cup brown sugar
1 teaspoon banana extract
1 tablespoon rum extract
1 teaspoon cinnamon
⅓ cup sugar
1 tablespoon cinnamon

Steps:

  • Spray a bundt pan with nonstick cooking spray and preheat oven to 375 degrees.
  • Cut each biscuit into 6 pieces and place in a large bowl.
  • In a small bowl, whisk sugar and cinnamon together. Set aside.
  • Roll each piece of biscuit dough into a ball then roll in the cinnamon/sugar mixture.
  • Layer of bananas in the bottom of the pan and then add the coated biscuit dough pieces into prepared pan.
  • In a microwave safe bowl, mix brown sugar, butter, rum extract, banana extract, and cinnamon together. Heat in microwave until butter has melted. 30-40 seconds. Stir. Can add ingredients to a saucepan and cook over medium heat, if desired.
  • Pour liquid mixture over layered biscuits and bananas.
  • Bake in preheated oven for 45-60 minutes until golden brown or until knife inserted comes out clean.
  • Remove from oven and let cool for 10 minutes before inverting onto a large plate.
  • Carefully remove from pan, drizzle with caramel sauce, if desired, and enjoy.
