BANANA ORANGE HONEY MUFFINS
Steps:
- Preheat oven to 350. Prepare muffin tins with liners or coat with cooking spray.
- In a large bowl beat together bananas, oil, honey, orange zest and orange juice.
- In a second medium sized bowl sift together your flour, baking soda, baking powder and a pinch of salt. Add chocolate chips and toss lightly.
- Pour dry ingredients into wet and stir until just combined. Spoon into muffin cups about 3/4 of the way full.
- Bake for about 15-20 minutes or until toothpick comes out clean. Cool on racks and keep in container with a lid.

- Heat oven to 400°F Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
- In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.).
- Fill muffin cups almost full.
- Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.

- Heat oven to 375 degrees.
- Generously grease 6 jumbo muffin tins or line with jumbo paper liners.
- In a large bowl stir together the bran with milk; let sit for 5 minutes, then stir in mashed bananas, melted butter, vanilla honey and egg; stir to combine.
- In another bowl stir together flour with baking powder and salt; add to the wet ingredients and stir with a wooden spoon JUST until combined (any lumps are okay!).
- Add in nuts (if using).
- Divide the batter between the six muffin tins.
- Bake for 28-32 minutes or until muffins test done.

- Preheat oven to 180ºC. Grease 12 x 1/3 cup (80ml) muffin pans with melted butter or line with paper cases.
- Sift flour, baking powder, bicarbonate of soda, cinnamon and salt into a large bowl. Stir in sugar.
- Combine melted butter, milk, honey, vanilla, eggs and mashed banana in a large jug. Whisk until well combined.
- Make a well in the centre of dry ingredients. Add egg mixture, stir until just combined (do not overmix).
- Spoon mixture into muffin pans.
- Bake for 20 minutes or until cooked through when tested with a skewer.
- Cool in pans for 5 minutes, turn onto a wire rack to cool.
WHOLE WHEAT HONEY BANANA MUFFINS
These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).
