●3/4 cup granulated sugar
● 1 can (14 ounces) NESTLÉ LA LECHERA Sweetened Condensed Milk
●3 small ripe bananas
●5 large eggs, beaten
●1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
●Banana slices for garnish

Steps:

  • Preheat oven to 350° F.
  • Heat sugar in small, heavy-duty saucepan over medium-low heat, stirring constantly, for 6 to 8 minutes or until dissolved and caramel-colored. Pour onto bottom of 9-inch-round cake pan; quickly swirl around bottom to coat.
  • Place LA LECHERA and bananas in blender; cover. Blend until smooth.
  • Combine banana mixture and eggs in large bowl; whisk until well combined. Add evaporated milk; mix well. Pour into prepared pan; cover lightly with foil. Place pan in large roasting pan; fill roasting pan with warm water to about 1-inch depth.
  • Bake for 1 hour and 15 minutes or until knife inserted near center comes out clean. Remove flan from water. Cool on wire rack. Refrigerate for 4 hours or overnight.
  • To serve, run small spatula around edge of pan. Invert serving plate over pan. Turn over; shake gently to release. Garnish with banana slices.

1 (15 ouce) can evaporated milk
1 (14 ounce) condensed milk
6 egg yolks
1 teaspoon of vanilla extract
3 aluminum molds (llanera) for leche flan
A pinch of salt
A dash of cinnamon
1 ripe banana, mashed
CARAMEL
1/2 cup sugar
1/2 cup water

Steps:

  • In a small bowl, mix thoroughly sugar & water and pour into the molds equally. Heat molds with sugar and water mixture on low fire until the sugar is caramelized. Set aside and let cool. Note: The caramelized mixture should solidify once totally cooled. In a bowl, mix well the evaporated milk, condensed milk, egg yolks, vanilla, mashed banana, a dash of cinnamon and pinch of salt manually or by blender. Pour gently the mixture on top of the caramel on the aluminum molds to about 1 1/4 inch thick. Cover molds individually with aluminum foil. Steam for about 30 minutes OR bake for about 45 minutes at 350 degrees Fahrenheit. To tell whether the leche flan is already cooked, insert a knife on the mixture and if it comes out clean then the flan is already cooked. Let cool and keep refrigerated. How to serve: Run a thin knife around the edges of the mold to loosen the leche Flan. Place a platter on top of the mold and turn upside down.

1 (12 ounce) jar caramel topping, divided
1 (18.25 ounce) package spice cake mix
3 eggs
⅓ cup vegetable oil
⅓ cup water
1 cup mashed banana
½ teaspoon almond extract
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
5 eggs
½ cup milk
1 (8 ounce) package cream cheese, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 12-cup fluted tube pan (such as Bundt®) with cooking spray. Pour 11 ounces caramel topping into prepared pan. Spray a sheet of aluminum foil with cooking spray.
  • Beat cake mix, 3 eggs, oil, and water together in a bowl with an electric mixer on low speed for 30 seconds; increase speed to medium and beat for 2 minutes more, occasionally scraping down the sides of the bowl. Mix banana and 1/2 teaspoon almond extract into batter; pour batter into the prepared pan.
  • Beat sweetened condensed milk, evaporated milk, 5 eggs, milk, cream cheese, and 1 teaspoon almond extract together in a bowl using an electric mixer until smooth; pour over cake batter. Cover fluted tube pan tightly with prepared aluminum foil, sprayed-side down. Set fluted tube pan into a large baking dish and fill baking dish with about 2 inches of water, creating a water bath.
  • Bake in the preheated oven for 2 hours. Remove fluted tube pan from water and allow to cool for 15 minutes. Remove aluminum foil and invert cake onto a serving dish. The caramel topping should flow down the sides of cake.
  • Cool cake to room temperature and refrigerate, 8 hours to overnight. Drizzle remaining caramel sauce over cake before serving.

Caramel:
1 cup sugar
¾ cup water
1 (13 ounce) can evaporated milk
1 (13 ounce) can sweetened condensed milk
12 egg yolks
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine sugar and water in a saucepan over medium heat. Heat until sugar is dissolved and mixture is thickened and light brown, 7 to 10 minutes. Spread caramel evenly over the inside of a flan mold, tilting the mold to make sure the whole surface is covered.
  • Combine evaporated milk, condensed milk, egg yolks, and vanilla extract in a large bowl. Stir lightly to prevent bubbles or foam from forming. Strain batter slowly into the caramel-lined flan mold. Cover with aluminum foil. Place mold onto a baking pan filled with water.

This indulgent Filipino caramel and custard dessert-a staple for holidays, family gatherings and parties-has a luscious, creamy texture. The lemon zest adds a nice bright note, but feel free to leave it out.

3/4 cup sugar
12 large egg yolks, at room temperature
One 12-ounce can evaporated milk
One 12-ounce can sweetened condensed milk
1 teaspoon vanilla extract
1 teaspoon grated lemon zest, optional

Steps:

  • Add about 2 tablespoons of the sugar to a small saucepan over low heat. Allow the sugar to melt, about 15 minutes. Gradually add a tablespoon of sugar at a time, slowly swirling it and allowing it to melt in before adding the next tablespoon. This is a long process, which needs constant attention to avoid burning. When all the sugar is completely melted, it will become a rich, dark caramel color, about 40 to 45 minutes.
  • Carefully pour the caramel into a 9-inch cake pan, coating the bottom of the pan. Allow to cool completely, about 20 minutes.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Prepare a water bath: Place a large roasting pan on the middle rack of the oven. Bring about 2 quarts of water to a boil, then carefully pour it into the roasting pan in the oven.
  • When the caramel is cool, slowly whisk together the egg yolks in a medium bowl, then add the evaporated milk, condensed milk, vanilla extract and lemon zest (if using). Whisk gently to avoid adding air into the custard. Air will cause bubbles, taking away from the smooth and dense texture.
  • Pour the custard through a fine-mesh sieve into the cake pan. Lightly tap the pan on the counter to release any air bubbles.
  • Once the oven is at 350 degrees F, carefully place the cake pan in the water bath.
  • Bake until the center of the custard is set and a toothpick inserted in the center comes out clean, about 1 hour. Remove the cake pan from the water and allow the custard to cool to room temperature. Cover and refrigerate for at least 5 hours and up to 5 days.
  • To serve, unmold the flan: Allow the flan to come to room temperature (see Cook's Note). Take a sharp paring knife and run it between the edge of the flan and the cake pan. Hold a large plate firmly over the pan and, in one smooth motion, invert the plate and pan. Carefully remove the pan.
