This is a pretty good recipe. This is not for the sweet lovers. It is a nice little something with coffee or tea and if you like bananas it is perfect! The girls in my office loved them!

- Preheat over to 425 degrees Fahrenheit.
- Spray baking sheet with cooking spray.
- In large mixing bowl or in food processor, beat bananas, egg whites, oil and sugars.
- Add flours, baking powder, baking soda, vanilla and cinnamon.
- Mix well and let stand for 5 minutes.
- Scoop out a tablespoon of dough onto baking sheet and use a thin spatula to shape and make center hole.
- Repeat until all dough is used.
- Bake 6-10 minutes until top is golden.

I am not much of a baker or dessert maker, but I gave this the old college try for a recent Sunday brunch. I've been wanting to make these because I love bananas so much. Friends liked them, but I had mixed feelings. Please let me know what level of success (or lack of) you have with this - thanks.

- Sift flour, measure and resift 3 times with baking powder, soda, salt, and nutmeg.
- Cream butter then blend in sugar, add vanilla, and eggs, and beat until light and fluffy.
- Add combined bananas and buttermilk, and stir until well mixed.
- Add flour mixture in 3 or 4 portions, stirring thoroughly after each addition.
- Chill for at least 2 hours before rolling.
- Remove 1/4 of dough from refrigerator at a time, knead it lightly 4 or 5 times, roll to 3/8 inch thickness, and cut with floured 2-1/2 inch doughnut cutter.
- Liberally sprinkle rolling surface with flour so dough won't get claggy and stick.
- Fry in deep oil heated to 375 ° F. until golden brown, then lift out and drain on absorbent paper.
- If desired, the dough may be covered tightly and kept in the refrigerator for 1 to 2 days, to be fried as needed.
- Sprinkle with brown sugar or powdered sugar, or if you have the tools, put whipped cream inside.

- In a mixing bowl, combine together flour, sugar, baking powder, salt.
- Separately, combine the eggs, milk, olive oil and vanilla. Beat lightly.
- Pour the liquid ingredients over the dry ones and mix together.
- Mash the bananas with a fork and add them to the batter.
- Heat up oil to a temperature between 360-375F.
- Using a tablespoon, pour the batter in the oil and let the doughnut cook for about 2 minutes on each side until brown, on medium heat.
- Remove them from the pan and drain them on paper towels.
- Tip: Do not crowd the doughnuts in the pan. 3-4 doughnuts should be enough for one batch.
- Serve them hot or cold dusted in powder sugar.

BANANA-CHOCOLATE CHIP MINI DOUGHNUTS

- Preheat the oven to 425 degrees F. Generously coat a mini doughnut pan with cooking spray. Whisk the flour, baking powder, baking soda, 1/2 teaspoon cinnamon and the salt in a large bowl. Whisk the mashed bananas, yogurt, vegetable oil, brown sugar, eggs and vanilla in a separate bowl. Stir the banana mixture into the flour mixture until just combined; stir in the chocolate chips.
- Transfer the batter to a large resealable plastic bag and snip off one corner. Pipe the batter into the prepared pan, filling each cup almost all the way. Bake until golden brown, 7 to 8 minutes. Let cool in the pan2 to 3 minutes; remove the doughnuts to a rack to cool completely. Letthe pan cool, then coat with more cooking spray and repeat with the remaining batter.
- Put the melted butter in a shallow bowl. Mix the granulated sugar and the remaining 1/4 teaspoon cinnamon in another shallow bowl. Dip one side of each doughnut in the butter, letting the excess drip off, then immediately dip it in the cinnamon sugar. Store in an airtight container up to 2 days.
- You can also make these in a mini muffin pan; bake 8 to 10 minutes.

BANANAS FOSTER DOUGHNUTS
Steps:
- For the banana cake doughnuts: Add the cake flour, bread flour, baking powder, baking soda and cinnamon to a fine-mesh sieve and sift over a large bowl. Whisk the bananas and buttermilk together in a small bowl. To the bowl of a stand mixer add the shortening, sugar, salt and vanilla and using the paddle attachment, cream the mixture on medium speed until smooth and creamy, 1 to 2 minutes. Beat in the whole egg, then add and the egg yolk and beat until smooth. Alternate adding the flour mixture and banana mixture in 3 additions, beginning and ending with the dry ingredients and mixing just until combined. Cover the bowl with plastic wrap and set aside for 10 minutes.
- Generously coat the work surface with flour and turn the dough out onto the floured surface. Dust the top of the dough with more flour, then roll the dough into a 1/2-inch thick sheet. Use a 3-inch donut cutter to stamp out circles from the dough. Place the circles on a parchment paper-lined baking sheet. Bring the scraps together, re-roll them into a 1/2-inch thick sheet, and stamp as many circles from the dough as possible (discard the remaining scraps); you should get about 12 donuts.
- Line a rimmed baking sheet with paper towels and set a wire cooling rack on top. Pour the oil into a large heavy-bottomed frying pan set over medium-high heat; the oil should fill the pot by about 2 inches-if it doesn't, add more. Heat the oil until it reads 375 degrees F on an instant-read thermometer. Add 2 to 3 doughnuts to the hot oil and cook until the doughnuts are golden brown, about 1 1/2 minutes on each side. - For the bananas foster: Melt the butter in a large skillet set over medium heat. Add in the brown sugar, cinnamon and the salt stirring until the mixture starts to bubble. Add the bananas and gently stir to coat in the sugar mixture. Continue to cook the bananas until they are warmed through, 1 to 2 minutes. Use a slotted spoon to transfer the bananas to a medium plate. Stir the rum and banana liqueur to the skillet and cook until combined, then pour the sauce into a heat-safe mixing bowl. Whisk in 1 cup of confectioners' sugar, and once well combined, begin adding more confectioners' sugar 1 tablespoon at a time, until the sauce is a medium-thick consistency good for drizzling.
- For serving: Slice the doughnuts three-quarters of the way through horizontally. Stuff the doughnut with a few banana slices. Drizzle the sauce over the top and serve generously dusted with confectioners' sugar.

- Preheat oven to 350 degrees, and spray 2 non-stick six unit doughnut pans.
- In one bowl whisk together all of the dry donut ingredients, in another bowl whisk together all of the wet ingredients. Pour the wet ingredients into the dry ingredients, and stir together until combined.

- Adjust oven racks to center position and preheat oven to 425°F. Spray two 6-cavity donut pans with nonstick cooking spray and set aside.
- In a large bowl, whisk together flour, baking soda, and salt. In another bowl, use an electric mixer to beat the butter until smooth, and then beat in the sugar until light and fluffy. Blend in the egg, vanilla, mashed bananas, and sour cream until fully incorporated (batter may look curdled at this point...it will smooth out with addition of flour). Gently mix in the dry ingredients until just blended. Evenly divide the batter between the prepared donut pans.
- Bake for 7 to 9 minutes until the tops of the donuts spring back when lightly touched. Allow donuts to cool for 5 minutes in pans before turning them out onto a cooling rack.
- FOR THE CINNAMON SUGAR COATING: In a medium bowl, combine the sugar and cinnamon. Place the melted butter in a shallow bowl. Dip one side of each donut in the butter, and then press into the cinnamon sugar. Serve warm or at room temperature.
- FOR THE CHOCOLATE GLAZE: Place a small saucepan over medium-low heat and melt together the butter and corn syrup. Remove the pot from the heat and add the chocolate chips, stirring until they are smooth and completely melted. Stir in the vanilla. If necessary, transfer to a bowl for dipping (or you can dip the donuts directly into the pot). While the glaze is still warm and thin, dip one face of each donut into the glaze. Place glaze-side-up on a plate or cooling rack. For optimal flavor and texture, serve sooner than later.

- In a large pot, preheat the oil over medium heat. It should be enough oil so that the donuts can float as they cook, about 3-4 inches from the pot. To keep an eye on the temperature, I suggest using a food thermometer.
- In a large bowl, combine bananas, flour, sugar, vanilla extract, cinnamon, baking powder, and salt. Stir until the mixture becomes a batter. You are looking for a thick batter.
- Heat the oil on medium heat. Before you start frying, make sure the oil is at the right temperature. If you are using a food thermometer, make sure it is at a steady 350° Fahrenheit, if the temperature is too high, lower the heat. (See notes for another method to check the oil temperature)
- When the oil is ready, use a small cookie scoop or a metal spoon, to drop the batter into the oil. If you are using a metal spoon, carefully drop the batter in increments of approximately 2 tablespoons. Fry a couple of donuts at a time, do not overcrowd the pot. (See notes)
