Banana bread gets a healthy boost as this delicious Whole Wheat Banana Oat Bread made with whole wheat flour, hearty oats, and of course, bananas!

1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas, mashed
1/2 cup light sour cream
1 teaspoon vanilla
3/4 cup oats

Steps:

  • Preheat oven to 350°F. Grease and lightly flour a 9 x 5 x 3 inch loaf pan; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  • Add flour, baking soda, and salt. Mix until just combined. Add bananas, sour cream, and vanilla until well incorporated. Stir in the oats and pour into prepared pan.
  • Bake until a knife or toothpick inserted into the center of the bread comes out clean, about 1 hour 10 minutes. You might want to cover the top of the bread with foil during the last 20 minutes of baking to prevent the top from burning while letting the center of the bread continues to bake. Let rest in pan for 10 minutes, then turn out onto a rack to cool or go ahead and serve warm.

A super simple, easy to make banana bread with dates. Add some whole wheat & oats to make it a tad more nutritious & delicious!

125 grams all purpose flour/maida * see notes
75 grams whole wheat flour
25 grams quick cooking oats * see notes
1 teaspoon baking powder
125 grams seedless dates, chopped * notes
2 tablespoons hot milk
1 teaspoon soda bi carb/baking soda
2 big slightly overripe bananas * see notes
125 grams butter
175 grams caster sugar
2 eggs at room temperature

Steps:

  • Preheat oven to 180 C. Grease and line a 9x5 inch loaf pan with parchment. Sift the all purpose flour, whole wheat flour and oats with the baking powder and keep aside.
  • Take aside a little flour and roll the chopped dates in it so that they don't sink to the bottom of the cake.
  • In a mixing bowl mash the bananas to a smooth consistency. Keep aside.
  • Dissolve the baking soda in the hot milk and when it turns slightly foamy pour into the mashed banana mixture.
  • Add the butter, caster sugar, eggs and mix well. Add the flour (in parts) and mix well. Stir in the dates and mix.
  • Pour the batter into the prepared tin and bake for 45-55 minutes. My loaf was done in exactly 55 minutes. To check doneness of the cake, insert a skewer or knife into the cake and if it comes clean the cake is done.
  • Remove the tin and place on a wire rack to cool for about 10 minutes. Invert the loaf onto the wire rack and let it cool completely before serving. If you cut it before it cools there is a chance that the cake will crumble. Garnish with chopped banana slices if desired.

DATE-SWEETENED BANANA BREAD RECIPE

Number Of Ingredients 11

1 cup dried dates (about 7 ounces), pitted
½ cup hot water
4 Tablespoons (1/2 stick) unsalted butter or unrefined coconut oil, at room temperature
2 large eggs, at room temperature
1 Tablespoon pure vanilla extract
2 cups white whole wheat flour, spelt flour or sprouted spelt flour
½ teaspoon fine grain sea salt
1 teaspoon baking soda
½ teaspoon aluminum-free baking powder
3 large, ripe bananas, mashed
½ cup raw walnuts or pecans, coarsely chopped (or fresh blueberries or cranberries)

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 5 x 3 loaf pan. (Can be lined with parchment if it is aluminum.)
  • Place the dates in the bowl of an electric mixer fitted with the paddle attachment. Add the hot water and allow the dates to soften for at least 10 minutes. (I usually get the rest of my ingredients ready while the dates are softening.)
  • Turn the mixer on low speed and blend until the water has incorporated with the dates. Turn the mixer to medium low speed and beat the dates until a smooth puree forms.
  • Add the butter or coconut oil and beat until well blended. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and mix.
  • In a medium bowl, combine the flour, baking soda, baking powder and salt. Add to the butter-date mixture and mix until just combined.
  • Fold in the mashed bananas and walnuts.
  • Pour the mixture into the prepared pan and bake for 50-60 minutes (I made it in many different ovens with this range of time), or until a toothpick inserted in the center comes out barely clean. Cool in the pan for 10 minutes. Remove from the pan and cool on a rack.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 minutes to 1 hour. Cool in the pan for 5 minutes. Invert onto a wire rack and let cool, about 25 minutes.

Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

1 1/2 cups rolled oats (plus 1 tablespoon for sprinkling on top (do not use instant oatmeal; quick oats will work in a pinch))
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
½ teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
2/3 cup honey or pure maple syrup
4 tablespoons unsalted butter (melted)
1/4 cup milk
3 tablespoons nonfat plain Greek yogurt
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.
  • In a medium mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the toasted oats. Set aside.
  • Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in the honey, melted butter, milk, and Greek yogurt. If the butter resolidifies, warm the bowl in the microwave in 10-second bursts, just until it melts. One at a time, whisk in the eggs. Whisk in the vanilla extract.
  • Add the dry ingredients to the banana-honey mixture. By hand with a rubber spatula, stir very slowly and gently, stopping as soon as the flour disappears. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining 1 tablespoon oats for decoration.
  • Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) or until a small, thin knife inserted in the center of the loaf comes out without any wet batter clinging to it. Repeat the test once or twice. An even easier way to tell is to use an instant-read thermometer. When the bread reaches between 200 to 210 degrees F at the center, it's done.
  • Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!
