Who needs sugar when you have ripe bananas to sweeten these moist and fluffy gluten-free waffles?

6 large eggs, beaten
3 very ripe bananas, peeled and mashed
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 tablespoons coconut flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Raspberries, raw honey and chopped toasted pecans, for serving

Steps:

  • Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.

2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
¼ teaspoon fine salt
2 large eggs
1¾ cups buttermilk, at room temperature
1 very ripe banana, mashed, plus 1 banana, for serving (optional)
4 tablespoons unsalted butter, melted and cooled, plus more for the waffle iron
1 teaspoon pure vanilla extract
½ cup heavy cream, very cold
2 tablespoons confectioners' sugar
½ cup toasted walnuts, broken into small pieces
Maple syrup, for serving

Steps:

  • Whisk the flour, granulated sugar, baking powder and salt in a large bowl. Whisk the eggs in a medium bowl until frothy; add the buttermilk, mashed banana, 4 tablespoons of the butter and vanilla and stir to combine. Stir the wet mixture into the dry until just combined, taking care not to over mix. Cover with plastic wrap and let the mixture rest for 10 minutes.
  • Preheat a waffle iron to medium-high. Preheat the oven to 200°F. Brush the inside of the iron evenly with some of the remaining butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cook until the waffles are crisp and golden, 5 to 7 minutes. Repeat with the remaining butter and batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Whisk the cream and confectioner's sugar in a medium bowl until soft peaks form. Slice the remaining banana if using. Serve the waffles topped with the whipped cream, banana slices and walnuts and drizzled with maple syrup.

¾ teaspoon baking soda
2 teaspoons white sugar

3 eggs

Steps:

  • Preheat a Belgium waffle iron. Whisk together the flour, baking soda, baking powder, white sugar, and salt in a bowl; set aside.
  • Whisk together the eggs, 1 1/2 teaspoons vanilla extract, and milk in a bowl. Stir in the melted butter and flour mixture until a slightly lumpy batter forms. Cook the waffles in the preheated iron until steam stops coming out of the seam, about 2 minutes.
  • Meanwhile, melt 1/4 cup of butter in a saucepan over medium heat. Stir in the brown sugar, rum extract, 2 teaspoons vanilla extract, and cinnamon. 1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups milk
1 tablespoon plus 1 teaspoon vanilla extract
2 large eggs, separated, plus 2 additional egg whites
1 stick (8 tablespoons) salted butter, melted, plus softened butter, for serving
Warm syrup, for serving

Steps:

  • Preheat the waffle iron to the regular setting.
  • Sift together the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk together the milk, vanilla and 2 egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
  • In a separate bowl using a whisk (or a mixer), beat the 4 egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.
  • Scoop the batter into your waffle iron in batches and cook according to its directions (lean toward the waffles being a little deep golden and crisp!). Serve immediately with softened butter and warm syrup.

1 (4 ounce) box vanilla pudding mix (not instant)
2 cups milk
2 bananas, medium, ripe and sliced
2 cups flour, all purpose
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/3 cup butter or 1/3 cup margarine, melted
1 1/2 cups milk
2 bananas, and mashed (very ripe, about 3/4 cup)
2 eggs, beaten

Steps:

  • In chilled small bowl, beat whipping cream on high speed of electric mixer until soft peaks form. Refrigerate until serving time.
  • In a 2-qt saucepan, stir pudding mix and 2 cups of milk with wire whisk. Cook over medium heat about 10 minutes, stirring constantly, until mixture boils and thickens slightly.
  • Remove from heat and stir in sliced bananas.
  • Cover to keep warm.
  • Preheat waffle maker and, if necessary, brush with vegetable oil (before each battering to prevent sticking) or spray with cooking spray before heating.
  • In a large bowl, mix flour, sugar, baking powder, and salt. Stir in remaining ingredients just until moistened.
  • Pour about 1/2 cup batter onto hot waffle maker. Close lid of waffle maker. [You may want to follow the directions of your waffle maker].
  • Bake about 5 minutes or until steaming stops.
  • Carefully remove waffle.
  • Repeat with remaining batter.

Nonstick cooking spray, for the pan and waffle iron
5 tablespoons unsalted butter
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/8 teaspoon ground cinnamon
3 overripe bananas
1/4 cup granulated sugar
1/4 cup light brown sugar
1 large egg, beaten
Bananas Foster Sauce:
1 stick (8 tablespoons) unsalted butter, cut into pieces
3/4 cup light brown muscovado sugar
1/4 cup dark rum
1/4 cup heavy cream
2 large ripe bananas, peeled and sliced into 1/2-inch pieces on the bias

Steps:

  • For the banana bread: Put a rack in the lower third of the oven and preheat to 350 degrees F. Spray a 9-inch loaf pan with nonstick cooking spray.
  • Put the butter in a small saucepan over medium heat and cook until the butter turns a deep golden brown. Remove and let cool slightly.
  • Sift the flour, baking soda, salt and cinnamon into a small bowl. Mash the bananas in a medium bowl, and then whisk in the granulated and brown sugars, egg and cooled brown butter. Add the flour mixture and whisk until just combined; don't over-mix.
  • Scrape the batter into the prepared pan and bake on the lower rack of the oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Let cool on a baking rack in the pan for 15 minutes. Remove from the pan and let cool completely on the rack. Once completely cool, wrap and keep overnight.
  • For the bananas Foster sauce: Melt the butter in a skillet over high heat. Stir in the muscovado sugar and cook, stirring, until melted. Stir in the rum and cook, stirring, until the rum is almost completely evaporated. Whisk in the cream and cook until just heated through. Add the bananas and cook for 1 minute longer. Keep warm while you make the waffles.
  • For the waffles: Heat a waffle iron according to the manufacturer's instructions. Spray with nonstick spray. Slice the banana bread about 1 inch thick, lay the slices on the waffles grates (you may be able to fit just 3 in comfortably), close the cover and cook, pressing if necessary to squeeze the bread, until golden brown and slightly crisped, 40 seconds to 1 minute. Repeat with the remaining banana bread slices. Serve with some of the bananas Foster sauce spooned over the top.

140g light muscovado sugar
2 tbsp golden syrup
50g butter
300ml double cream
4 large eggs , separated
300g plain flour
½ tsp bicarbonate of soda
2 tbsp golden caster sugar
50g butter , melted
600ml milk
2 bananas , peeled and cut into large pieces
1 tbsp butter
vanilla ice cream (optional)

Steps:

  • Put the sugar, golden syrup and butter in a saucepan and heat gently, stirring occasionally, until everything has melted together. When the mixture starts to bubble, stir in the double cream and cook for 2 mins. Stir in 1/2 tsp salt, then take off the heat and allow to cool slightly in the pan.
  • Heat the waffle maker (if you don't have one, you can use a griddle pan instead - see tip). Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, caster sugar and a pinch of salt. Make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up - keep cooked waffles warm in a low oven until serving.
  • Just before serving, heat the remaining butter in a non-stick frying pan over a medium heat and fry the banana pieces until golden. Divide the waffles between 4 plates, top with the fried bananas, drizzle with salted caramel and top with a scoop of vanilla ice cream, if you like.
