EASY AND ELEGANT BANANA COCONUT BARS

Easy and Elegant Banana Coconut Bars image

Provided by Maria

Categories     Dessert

Yield 9 x 13 baking dish

Number Of Ingredients 12

6 tbsp. (80 gr.) unsalted butter, melted
1/3 cup + 2 tbsp. (100 gr.) sugar
1 large egg
1 ¼ cups (180 gr.) all-purpose flour
½ tsp. baking powder
¼ tsp. salt
5 medium bananas
2 ½ cups (180 gr.) unsweetened coconut flakes
1/3 cup (70 gr.) sugar
2 large eggs
1 tbsp. whole milk
1 tsp. vanilla extract

Steps:

  • Preheat oven to 360 F.
  • Grease the 9x13 baking dish. Set aside.
  • In a medium bowl combine sugar and egg. Mix on low speed with a hand-held mixer for 1 minute. Add melted butter. Mix on low for another 1 minute. Add flour, baking powder, and salt. Knead the dough only until it comes together. Do not over knead it. It should be very soft, pliable and slightly sticky. You can either roll out the dough with the rolling pin and transfer it to a baking dish. Or spread it in the baking dish using your fingers. Bake in the middle of the oven for 12 minutes.
  • In the same medium bowl combine coconut flakes, sugar, eggs, vanilla extract, and milk. Mix until everything comes together and hold the shape when you squeeze it.
  • Peel all bananas, cut in half and split.
  • Remove baking dish from oven and place it on a towel. While still warm arrange all banana slices starting from the shorter edge of the baking dish. Lightly press bananas into the dough. Spread the coconut filling evenly, gently pressing on top of the bananas. Sprinkle with the fancy large coconut flakes.
  • Bake in the middle of the oven for 23 minutes.
  • Remove from oven. Let it cool completely. Cut bars into desired shapes.
  • Enjoy!

PEANUT BUTTER-BANANA SEMIFREDDO

Peanut Butter-Banana Semifreddo image

Provided by Food Network

Categories     dessert

Time 45m

Yield 6 servings

Number Of Ingredients 11

Nonstick cooking spray
1/4 cup unsalted roasted peanuts
5 graham cracker sheets, roughly broken
4 tablespoons unsalted butter, melted
8 large egg yolks
3/4 cup sugar
1 ripe banana, pureed
2 tablespoons hazelnut liqueur
Pinch of salt
1 cup heavy cream
3/4 cup creamy peanut butter

Steps:

  • Prepare the crust: Spray a 9-by-5-inch metal loaf pan with cooking spray and line with plastic wrap, leaving a 2-inch overhang on all sides; spray the plastic wrap. Finely grind the peanuts and graham crackers in a food processor. Add the melted butter and pulse until combined. Press the mixture into the bottom of the prepared pan and refrigerate.
  • Make the ice cream: Bring 2 inches of water to a simmer in a saucepan over medium heat. Fill a bowl with ice water. Whisk the egg yolks, 1/2 cup sugar, the banana puree, hazelnut liqueur and salt in a large metal bowl. Place the bowl over the pot of simmering water (do not let the bowl touch the water) and whisk until thickened, 8 to 10 minutes. Remove the bowl from the pot and put in the ice water to cool.
  • Beat the heavy cream and the remaining 1/4 cup sugar with a mixer until the cream just holds stiff peaks (do not overbeat). Gently fold the cream into the banana custard.
  • Heat the peanut butter in the microwave until soft, about 20 seconds; let cool slightly.
  • Drop spoonfuls of the peanut butter into the banana cream and fold until swirled.
  • Spread the mixture over the crust in the pan, cover with plastic wrap and freeze until firm, at least 9 hours. Lift out of the pan using the plastic wrap and cut into 1-inch slices.

2 tsp baking powder

BANANA BREAD WITH COCONUT & PECANS

Banana Bread with Coconut & Pecans image

Bananas and coconut are a natural combination; this banana bread is a great way to enjoy them.

Provided by Jennifer Segal

Categories     Breads

Time 1h30m

Yield One {9 x 5-inch|23 x 12.5-cm} loaf

Number Of Ingredients 10

1¾ cups all-purpose flour, spooned into measuring cup and leveled-off
¼ teaspoon salt
1½ teaspoons baking powder
1 stick (½ cup) unsalted butter, melted
¾ cup plus 2 tablespoons sugar
2 large eggs
1 cup very ripe bananas, mashed with a fork until smooth (from about 3 bananas)
1 teaspoon vanilla extract
½ cup shredded unsweetened coconut
½ cup pecans, toasted and chopped (see note below)

Steps:

  • Preheat the oven to 350 F. Grease a 9 x 5-inch loaf pan.
  • In a medium bowl, whisk together the flour, salt, and baking powder.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the melted butter and sugar until just combined. Beat in the eggs, bananas and vanilla. Add the flour mixture to the bowl and mix on low speed until just combined. Do not over-mix. Gently stir in the coconut and nuts (the batter will look lumpy).
  • Pour the batter into the prepared loaf pan and bake for 50-55 minutes, until a tester inserted into the center is relatively clean (tester should not be totally dry; the bananas keep it moist) and the top is golden brown. Do not overcook. Let the loaf cool in the pan for about ten minutes, then turn out onto rack. Slice while still warm or store in an airtight container. Toast individual slices for best results.
  • Note: Toasting the pecans is optional but enhances their flavor. Simply spread the pecans on a foil-lined baking sheet and bake in a 350°F oven for about 5 minutes, or until fragrant.
  • Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

SEMIFREDDO

Semifreddo image

Semifreddo-Italian for "half-cold"-got its name because of its unique texture. Even though it's technically frozen, the Italian dessert stays soft and creamy.

Provided by Kristina Vanni

Categories     Dessert

Time 12h30m

Yield 8

Number Of Ingredients 8

3/4 cup heavy whipping cream (chilled)
1 teaspoon vanilla extract
3/4 cup sugar
1/4 cup water
4 large eggs
6 amaretti cookies (finely crushed)
2 tablespoons almonds (finely chopped)
2 tablespoons sliced almonds

Steps:

  • Gather the ingredients.
  • Line a 9 x 5 x 3-inch metal loaf pan with plastic wrap, leaving an overhang of several inches on all the ends. Chill the pan in the freezer. At least 20 minutes before you are ready to whip the cream , place the large bowl and the beaters of an electric mixer in the refrigerator.
  • Pour the chilled heavy whipping cream and vanilla extract into the chilled bowl and whip the cream at high speed until soft peaks form, about 4 minutes. Return the bowl to the refrigerator while proceeding with the next steps.
  • In a small saucepan, combine the sugar and water. Bring to a simmer over medium heat, then cook, stirring occasionally, until the sugar is completely dissolved, 3 to 4 minutes.
  • In another large mixing bowl, beat the eggs on medium speed until foamy, about 1 minute. With the mixer running, slowly add the hot sugar syrup into the eggs in a thin stream. Continue beating until the mixture is very light and fluffy and feels cool to the touch, 8 to 10 minutes.
  • Gently fold the chilled whipped cream into the cooled egg-syrup mixture.
  • Gently fold in the cookie crumbs and chopped almonds.
  • Remove the prepared loaf pan from the freezer. Spoon the mixture into the pan. Cover securely with the overhanging plastic wrap and return to the freezer. Freeze until set, at least 8 hours, preferably overnight.
  • Unwrap the top of the loaf pan. Invert onto a serving plate, lift off the pan and remove the plastic wrap. Sprinkle with the additional crushed cookies, if using, and the sliced almonds. Cut into slices and serve immediately.

  • Make frozen banana layer: Spray a 9 x 5 loaf pan with cooking spray and line with enough parchment paper to hang over sides for easy removal. Slice and freeze bananas in a ziploc bag. In blender or food processor, whizz frozen bananas until completely smooth, about 3 minutes. Pour HALF the banana puree into loaf pan. Add a layer of strawberry slices on top, and then pour in rest of mixture. Wrap tightly and freeze.
  • Make coconut whipped cream: Open cans of cold coconut milk and remove just the solid layer. Reserve liquid for another use (i.e.: smoothie or baked good). Using a standing or hand held electric mixer, slowly at first, whip coconut solids with powdered sugar until soft peaks form. Fold in 1 tsp. vanilla. Cover and refrigerate. Once banana layer is frozen solid, add half of whipped cream to banana semifreddo. Top whipped cream with another layer of strawberry slices, then add remaining whipped cream. Smooth cream, top with a layer of parchment paper, wrap with plastic wrap and freeze overnight.
  • Make chocolate sauce: Blend pitted dates and almond milk at high speed until completely liquid for 2 -3 minutes. Transfer to a small pot. Stirring constantly, bring to a boil over medium high heat, then reduce to a simmer for 5 -7 minutes until sauce begins to thicken. Reduce to very low; add ½ t vanilla and 2 oz. chocolate. Stir until chocolate melts completely and remove from heat.
  • Prep garnishes: Slice strawberries and set aside. Just before serving, melt remaining 6 oz. of chocolate in microwave in 30-second intervals. Stir until shiny and smooth. Reserve to drizzle on top of semifreddo slices. Or grate chocolate and sprinkle shavings over semifreddo.

SEMIFREDDO RECIPES THAT TASTE LIKE DESSERT HEAVEN

From greatist.com
Estimated Reading Time 4 mins
  • Chocolate Semifreddo. Homemade dessert in 15 minutes? Yup, this is something we can get behind. Similar to mousse, this semifreddo is made by melting chocolate and slowly folding in the egg yolks and cream (oh, and mascarpone).
  • Strawberry Coconut Semifreddo. It’s easy to go overboard at summer farmer’s markets. The boxes of berries are just so beautiful! Using all that fresh produce… that’s another story.
  • Espresso and Toasted Almond Semifreddo. Can we talk about the amazingness that is instant espresso? You get all of the perks of a perfectly brewed coffee shot with a simple little powder.
  • Easy Pistachio Semifreddo. Do you ever spot a recipe that looks crazy-delicious just to find out it’s made of 20-plus ingredients, most of which would require trips—yes, plural—to specialized food shops?
  • Lemon Raspberry Semifreddo. Not all semifreddos—or ice creams, for that matter—need to be overly creamy and heavy. This recipe sticks to light and bright flavors like raspberry and lemon to balance the creaminess and temper the heaviness that often comes with using heavy creams.
  • Tiramisu Semifreddo. And just when we thought tiramisu couldn’t get any better, along came tiramisu semifreddo. As with the classic recipe, this tiramisu semifreddo takes a bit more effort, but a little trip to an Italian supermarket will ease any freddo woes—as that’s where you’ll find ladyfingers, the best espresso powder (though feel free to brew your own!)
  • Vegan Semifreddo Layer Cake. Dairy lovers shouldn’t have all the fun when it comes to semifreddo.Though it’s true that heavy cream results in the best semi-frozen texture, this vegan recipe proves that alternatives are worth exploring.
  • Mascarpone White Chocolate Cappuccino Semifreddo. Though we’re often fans of making things from scratch, sometimes shortcuts are all kinds of worth it.
  • Peach Semifreddo. Peaches and cream are peak summer flavors. (Not to mention, the makings of a pretty catchy tune.) We love that this recipe gets its creaminess not from heavy cream, but instead from crème fraiche and sweetened condensed milk.
